Tasty Kinnathappam

Ingredients

Rice flour. – 1 cup

Thick coconut milk -1 cup

Coconut milk 3 cup

Jaggery 2 cup

Cardamom powder.- 1/4 TSP

Salt one pinch

Ghee 4 tbsp

Chana dal 1/4 cup

Preparation

Melt jaggerry with 1/2 cup of water, then strain it. Add rice flour to a bowl, add jaggerry juice, mix well, next add coconut milk, cardamom and salt, mix again. Take a bowl, grease it well. Take a pan, pour the mix, boil it and stir well, cook until it become thick, add ghee, next add chana dal, cook well, next add thick coconut oil, cook until it become thick and non sticky, then transfer it to a greased mould, then allow it to cool.

Thenga Varutharacha chicken Curry

Ingredients –

Coconut oil-As required

Fennel seeds–1 tsp

Ginger-1 1/2 tbsp

Garlic-1 tbsp

Green chilli-3-4 Onion–2

Turmeric Powder-1/2 tsp

Tomato-1

Curry leaves-few

Chicken–1 kg

for grinding

Shallots-10

Garlic-6

Coconut-3/4C

Curry leaves-few

Coriander powder-2tsp

Chilli powder1 1/2 tsp

Garam masala-1/2 tsp

Pepper powder-1/2 tsp

Salt-1 3/4 tsp

Tempering

Oil-1 tbsp

Mustard seeds-1/2 tsp

Shallots-3

Curry Leaves-Few

Preparation

Heat oil in a pan, add fennel seeds, ginger,garlic, green chilly, onion and curry leaves, saute it well, add salt, now add tomato, and chicken, mix well. Add potato, after mixing well add hot water, then cook it in low flame for 15 minutes.Heat another pan, add coconut oil, shallots,garlic, after sauting well add coconut, fry until it become light brown, next add masalas and curry leaves, after mixing well turn off flame, then grind it into fine paste, and add to chicken curry, add some pepper powder, cook for 5 more minutes, finally add some coriander leaves and turn off flame. For, seasoning, pop mustards, add shallots sliced, fry well then add to curry.

Idli batter bonda

Ingredients

Idly maavu (Idly Batter)– 200 grm

Rice flour – 2 tbl spoon

Rava – 2 tbl spoon

Baking soda – ¼ teaspoon

Finely chopped onion – 1

Coriander leaves

Curry leaves

Green chilli – 1

Salt – ¼ teaspoon

Oil

Preparation

Take idli batter in a bowl, add ingredients one bye one into it, mix well. Heat oil in a pan, pour batter by using a spoon to hot oil, fry well.

Beef Burger

Ingredients

beef-1/2 kg

garlic-20 cloves

salt

pepper powder-2 tsp

vinegar-1 tsp

egg-1

butter

sliced cheese

burger bun

tomato sauce

mayonaise

onion

capsicum

Preparation

Gind beef with garlic, then tarnsfer to a bowl, add salt,pepper powder and vinegar, mix well, add 1 egg knead it well and make cutlet shape, then shallow fry in butter. Put the cheese slices above the cutlet. Take burger bun, spread ketchup and mayonaise, put the cutlet, add onion and caosicum, cover the burger with top part.

Milk Ice Bar

Ingredients

Milk-2 cup

milk powder-1/2 cup

condensed milk

sugar-1/2 cup

corn flour-2 tbsp

vanilla essance-1 tsp

Preparation

Boil milk with condensed milk and milk powder, after boiling well add corn flour and water mix, add sugar, stir well, cook until it become thick, finally add vanilla essance, mix all well and allow it to cool, then pour the mix to ice mould, close the lid and put stick into it,keep in refrigerator for 8-12 hrs, then demould it and use it.

Soft Idli tips

Ingredients

raw rice-2 cup

urad dal-1 cup

fenugreek-1 tbsp

rice-1 cup

for chutney

oil

kashmiri chilly

shallots-1 cup

salt

curry leaves

garlic

tomato-2

mustards

urad dal

dry red chilly

Preparation

soak rice , urad dal and fenugreek separately, keep in fridge. Grind it with urad dal soaked water, add cooked rice too.After mixing  well keep aside for fermentation about 8 hrs. After fermentation steam idli in a idli pot.

For chutney

Heat oil in a pan, saute all vegetables and kashmiri chilly, add salt, then grind it well, heat a pan, add oil, pop mustards and urad dal, add dry red chilly and curry leaves, saute well then add to the chutney.

Preparation

Heat a pan, add urad dal and mustards, allow it to pop, next add onion, green chilly,curry leaves and ginger, after sauting well, add tomato, cook until it become mushy, then add masalas, mix well, next add water, once it boils well add gram flour mixture, stir well, add some curry leaves too.

moong dal-1 cup

green chilly-2

cumin-1 tsp

salt

turmeric-2 pinch

ghee

Preparation

Soak moong dal for 4 hrs, then grind with chilly, add cumin,salt,turmeric and ghee, mix well. Heat oil for deep frying, then pour spoon full of batter, fry well.
