Wheat idli

Ingredients

wheat -1 1/2 cup

urad dal-1/2 cup+2 tbsp

poha-1/2 cup+1 tbsp

fenugreek -1/2 tsp

Preparation

Soak all the ingredients separately, then grind it into fine batter, mix it with your hand, rest the batter for 6-8 hrs.Then add salt, mix well, then steam idli as usually we did.

Banana sweet

Ingredients

Banana-3

ghee

cashews and kismis

egg-2

cardamom powder

coconut grated-1 cup

sugar-1/4 cup

milk-1/2 ltr

vanilla essance

rice flour-2 tbsp

oil for frying

Preparation

Steam banana and remove black seeds then mash it well by adding oil. Heat a pan, add ghee, next add cashews and kismis, after roasting well add coconut, egg and sugar, scramble it well. Boil milk with vanilla essance and rice flour, cook until it become thick. Take banana mix and flattern it in your hand, add filling and fold it, after doing this for all fry it in hot oil. In a tray, pour the rice flour porridge, then put the banana balls, then serve it.

Sweet Potato fry

Ingredients

Sweet potato. 1/4 kg.

Shallots. 8 – 10

Ginger. 1 piece.

Garlic. 8

Green chilli. 3.

Red chilli. 3

Cumin seeds. 1 pinch.

Mustard. 1/2 tsp

Turmeric powder. 1/4 tsp

Red chilli powder. 1 tsp

Garam masala powder. 1/4 tsp

Pepper powder. 1/4 tsp

Salt, Coconut oil, Curry leaves, water as needed

Preparation

Cook sweet potato with salt and turmeric. Heat oil in a pan, add cumin and mustards, once it pop well add dry red chilly and curry leaves, fry it well, next add shallots and green chilly, saute it well, next add cooked sweet potato, after mixing well add masalas, mix all and cook for 5 more minutes.

Sadya Ginger Curry

Ingredients

ginger-250 gm

coconut oil

tamaring-lemon size

jaggerry-small one

salt

hing-1/4 tsp

turmeric-1/4 tsp

chilly powder-3 tsp

coriander powder-2 tsp

coconut oil

mustard seeds-1 tsp

green chilly-2

red chilly-3

curry leaves

Preparation

Cut ginger into slices. Heat coconut oil in a pan, fry ginger until it become brown, then grind it into coarse powder. In a pan, add tamarind juice,jaggerry,salt and other masalas, boil it well,next add ginger powder, cook until it become thick. For seasoning, heat coconut oil, pop mustards,red chilly, green chilly and curry leaves, then add to curry.

Cheese Porotta

Ingredients

maida-1 3/4

salt

water

sunflower oil-2 tbsp

cheese

oregano

oil

Preparation

Add maida in a bowl, add salt,oil and required water, knead it well and make a soft dough, rest this for 15 minutes, then divide this to small balls, again rest it for 5 minutes, then flattern it into thin chapathi, fold it from both sides, add some cheese and oregano, again fold it, then cook in a tawa, spread oil.

Preparation

Soak soya in hot water, keep for 15 minutes, then squeeze out water and grind it. In a bowl, add other ingredients one bye one, add soya too, mix with your hand, make a soft dough, then make cutlet shape, all cutlet dip in maida mix and coat bread crumbs, then fry in hot oil.

Nadan Ilayada

Ingredients

small banana

rice flour

cardamom powder

coconut

jaggerry

Preparation

Peel off bananas and add to a bowl, then mash it with a fork, then add jaggerry powder, cardamom powder, coconut and salt, mix it with a spatula, next rice flour 2-3 times, mix and make a slightly loose dough. Take a banana leaf, put the dough and spread over, fold it and steam cook this ada in a steamer.

Easy Fish Curry( ayalakkari)

kashmiri chilly powder-2 1/2 tbsp

turmeric-1/2 tsp

tamarind

Preparation

Mix masalas, add some water and make a paste, then keep this aside. Heat a claypot, add oil, once it heat well, add onion, garlic,ginger and chilly, saute it well, add masala paste, heat well, then add tamarind juice with water, boil it well, next add fish, cook it well, finally add some oil and curry leaves.

Spicy beef fry

Ingredients for marination:

1/2 kg beef cut into cubes

1 tbsp ginger garlic paste

2 tsp chilly powder

1/2 tsp turmeric powder

1 tsp pepper powder

1/2 tsp Garam masala

1 tbsp vinegar

1 tbsp oil

1 tsp salt

Ingredients for beef fry:

4 tbsp oil

1 tsp cumin seeds

2 dried chillies

3-4 green chillies

few curry leaves

1 large onion

1 small cup coconut pieces

1 tbsp lemon juice

cilantro to garnish

Preparation

For marination, take a bowl, add masalas and the ingredients, make a thick paste, marinate beef with this masala, then keep in refrigirator for 1 hour, then fry it in hot oil. Heat another pan, add some oil, pop cumin seeds, add dry red chilly, green chilly , onion and coconut pieces, roast it well, then add fried beef , mix well, finally add some coriander leaves.
