Preparation

Break eggs to a bowl, add sugar, cardamom powder and rava , combine all well. Heat a unniyappam pot, brush it with ghee, pour the batter in each hole, cook in low flame, and flip another side for cooking well.

Spicy chicken fry

Ingredients

Chicken-1 kg

pepper powder-1/2 tsp

chilly powder-2 tbsp

garam masala-1/2 tsp

salt

ginger garlic paste-1 tbsp

egg white-1

bread crumbs

Preparation

Marinate chicken with masalas, salt and ginger garlic, keep aside for 30 min, then cook it in a pan, after cooking well allow it to cool down, then add egg white into it, mix well, then coat bread crumbs in each pieces, finally deep fry it in hot oil.

Kottayam style kappa puzhukk

Ingredients

Kappa-1 1/2kg (tapioca)

Water-as required

Turmeric powder -1/2tspn

Salt-as required

Coconut (നാളികേരം )-1/2

Garlic-3

Small onion -6

Chilly-3

Curry leaves-as required

Preparation

Cook tapioca with salt,turmeric and water, then strain out from water.Crush coconut with shallots, garlic, green chilly, curry leaves and turmeric, and add it to kappa, again cook it, mix all together, then serve it with hot.

Poha appam

Ingredients

poha-1/2 cup

rice flour-2 cup

water-2 1/4 cup

dry yiest-1/2 tsp

salt-1/2 tsp

sugar-2 tbsp

Preparation

Wash poha for 2-3 times, then soak it for 15 minutes. In a bowl, add sugar, lukewarm water and yiest, keep aside for activate. Take mixie jar, grind poha into fine paste. Take another mixie jar, add rice flour, yiest mix, poha paste, salt and water, grind it into fine paste, then rest the batter for 1/2 hrs for fermentation, after that, cook small dosas in tawa.

Semolina poori

Ingredients

semolina-1 cup

water

salt

Preparation

Add semolina to a mixie jar, grind it into fine powder, then transfer it to a bowl, add salt and water, knead it well and make a soft dough, divide this dough into equal small balls, flattern it into thin chapathi, then fry it in hot oil.

Raw banana stir fry

Ingredients:

Raw Banana – 2 Nos

Onions – 2 medium

Green Chilli – 1

Curry Leaves – 3 to 4 springs

salt to taste

Turmeric Powder – 1/4 tsp

Coriander Powder – 1 tsp (optional)

Kashmiri Chilli Powder – 1 /2 tsp

Cardamom Powder – 2 pinches

Coconut Oil – 2 1/2 tbsp

Mustard Seeds – 1/2 tsp

Preparation

Heat a pan, add coconut oil, add mustards, wait for splutter, then add onion and salt, saute it well, next add green chilly and curry leaves,mix all well, next add masalas, mix it for turn aromatic, now add banana pieces, mix it well, then cook it in low flame, cover the lid for cook without water.

Special lime juice

Ingredients

sabja seeds-2 tsp

sugar

ginger-small piece

cardamom-2

water

mango leaves-4-5

lemon juice-1 lemon

Preparation

Soak sabja seeds in water and keep aside. In a blender add sugar, ginger, cardamom, mango leaf, and water, blend it well, then transfer to a bowl into a strainer, add more water and lemon juice, serve it with ice cubes and soaked sabja seeds.

spinach -a small bunge

rice -1+1/4tbsp

onion-1/2

green chilli -2 or3

grated coconut flakes -3/4cup

turmeric powder 1/4tsp

salt to taste

mustard seeds -1/2tsp

coconut oil

curry leaves

Preparation

Heat coconut oil in a pan, add mustards, once it crack well, add rice, roast it well, then add onion and chilly chopped, saute it well, add salt and turmeric, mix well, next add spinach, combine all, cook it for 2 minutes, crush coconut with curry leaves and add to the pan, mix all together.

Payar kanji

Ingredients

 Rice – Any rice ( i am using palakkadan matta ) – 1 cup/ glass )(1 cup = 250 ml )

Green gram ( cherupayar ) – 4 tablespoon

Dried red chilli – 2

Shallots ( small onion ) – 7

Garlic 1 big clove ( If small you can take 2 to 3 cloves of garlic )

Cumin seeds ( jeera ) – less than 1/2 tsp

Fenugreek seeds – less than 1/2 tsp

Grated Coconut – as per taste – 3 to 4 table spoon ”

Salt

Water – 6 to 8 glass

Preparation

Wash rice and green gram together, then add to a pressure cooker, then add shallots, fenugreek, cumin, garlic, dry red chilly, salt and required water to cook, cover the lid and cook it for 1 whistle in medium flame. Once the pressure is come out open the lid and add coconut, mix well.

Ingredients

cauli flower-1( 10 min soaked in salt and turmeric added hot water)

fennel-1 tsp

turmeric-1/4 tsp

Preparation

Heat a pan, add oil, next add ginger garlic paste, after sauting it add onion, add salt and saute it until it become soft, next add tomato , cook it well, next add cauliflower, capsicum and potato, mix all well, and cover the lid. Roast coconut with shallots, cumin, fennel and masalas, then grind it into fine paste and add to curry, after that, cook it for 5 minutes, next add hot water, mix it well, finally add coriander leaves and green chilly.
