Vattayappam

Ingredients

raw rice-2 cup( soaked)

water

coconut-1 1/4 cup

sugar-3/4 cup

yeast-1/2 tsp

cardamom powder-3/4 tsp

Preparation

Add rice to a mixie jar, add water, and grind it into fine paste, add 2 tbsp batter from it, and add it to a pan, add more water, then stir it well to make thick , then add it to the mixie jar, add coconut , sugar and water, then grind it again, next add yeast, cardamom and salt, blend it again, then transfer it to a bowl, keep aside for raise the batter. After that, take a plate, grease it with ghee, pour the batter to the plate, then steam it well.

Ingredients

green gram-1 cup( soaked)

green chilly-2

shallots-4

cumin-1/2 tsp

grated coconut-3/4 cup

turmeric-1/4 tsp

chilly powder-1/2 tsp

mustards

dry red chilly

curry leaves

Preparation

Cook soaked green gram in a pan with water and salt. Crush chilly, garlic, shallots and cumin, then add it to the grated coconut, add masalas and salt, mix it with your hand, then add it to cooked green gram, combine all well, finally, add seasoned mustard seeds with dry red chilly and curry leaves.

Indian kulfi icecream

Ingredients

milk-1/2 ltr

sugar-1/2 cup

cardamom powder-1/4 tsp

vermicelli and cherry

Preparation

In a sauce pan pour half litter milk, 1/2 cup sugar, 1/4 teaspoon cardamom powder, then boil. reduce until half,blend until smooth, then add some vermicelli and cherries.mix well., pour the mix into the kulfi mould. freeze over night. serve cold and enjoy!

Curd making without curd

Ingredients

milk-( luke warm)

green chilly-2

Preparation

Take lukewarm milk in a bowl, add 2 green chillies into it, keep aside for 1 day. The next day the milkwill be glutten, then remove the chilly from it and add more milk, keep it again for 1 day, perfect curd is ready.

Easy Chapathi Making

This method will help chapathi making easy

Ingredients

wheat flour-2 cup

salt

water

ghee

Preparation

For making the dough, add flour in a bowl, add salt ghee and water , knead it to make a soft dough, keep aside for 10 minutes. After that , divide the dough into equal small balls, flatten each into a little round shaped chapathi, take one spread oil, and dust with flour, add another chapathi above it, repeat the same, set 4 chapathi like this, finally flatten it into thin layers, cook it in tawa, and separate each chapathi after cooking.

Thin appam for breakfast

Ingredients

Rice flour 3/4 cup

one Egg

coconut milk- 1 cup thick

sugar optional

salt

Water or thin coconut milk -1/4 cup

Preparation

Add all these ingredients in a mixie jar, grind it into fine batter, then pour it to a bowl through a strainer, then add more water if required, then keep aside for 15 minutes. Heat a pan or tawa, pour the batter, then round it, make thin dosas.

Beef Biriyani

Ingredients

For beef masala

Beef——-1 kg

Oil—-as required

Ghee——–2 tbsp

Onion—-5 big (500 gm)

Ginger——-2 tbsp

Garlic—-3 tbsp

Green chilli—-10 crushed

Tomato—-4 sliced

Coriander leaves—1 handful

Mint leaves—-1/2 cup

Curry leaves—few

Curd—–1/2 cup

Lime juice—-1

Garam masala—-1 tsp

Coriander powder——-2 tsp

Pepper powder—– 1/2 tsp

Salt——to taste

Fennel powder—-1/2 tsp

Turmeric powder –1/2 tsp

For rice

Kaima rice / jeerakasala——4 cup

Water—-5 cup

milk-1 cup

Nuts—–3-4 tbsp

Raisins—–3 tbsp

Ghee——2 tbsp

Cinnamon—2 nos

Cardamom—-8-10

Cloves——–10 nos

Lime juice—–1/2

Garlic crushed—-1 tsp

Green chillies—-1/2 tsp

Salt——-to taste

Preparation
Add onion, tomato, ginger ,garlic, chilly crushed, coriander powder, pepper powder, turmeric, fennel powder, lemon juice, garam masala, curd, salt, mint leaves, curry leaves, coriander leaves to a cooker, mix all well , then add beef into it, combine all together, then cook it for 3 or more whistles. Allow the pressure gone completely, after that boil it again for the gravy become thick.

Boil 5 cup w cup water with milk 1 cup, add spices, salt, ginger crushed, chilly crushed, and garlic crushed, add enough salt, once the water start boiling, add soaked rice, cook it until it become perfect texture.

For dum ,set rice and beef masala in layers, add herbs, fried onion, nuts and milk, in between the layers, finally dum it for 20-25 minutes in low flame, then serve the biriyani.

Bun Dosa and Tomato Chutney

Ingredients for dosa batter

White rice – 2 cup

Fenugreek seeds – 1/4 tsp

Flattened rice /poha – 1 cup

Grated coconut- 1 cup

Salt

For seasoning

Oil – 1 tbsp

Mustard seeds – 1 tsp

Urad dal – 1 tsp

Green chilli – 2

Curry leaves – 1 string

For tomato chutney

Oil – 1 tbsp

Urad dal – 1 tbsp

Bengal gram – 1 tbsp

Ginger small piece

Garlic – 2 small

Onion – 1/2 of one

Tomato – 1 large

Salt

For seasoning

Oil – 2 tsp

Mustard seeds – 1 tsp

Dry red chili -1

Curry leaves

Preparation

Soak rice and fenugreek for 4 hrs, then grind it with poha and coconut, then transfer it to a vessel, keep aside for 8 hrs for fermentation.After Fermentated enough, add seasoned mustard seeds, urad dal, curry leaves and green chilly into the batter and combine it well.Heat a appam chatti, heat it well, then pour the batter, keep the flame low and cook the both sides of the dosa.

For chutney, heat a pan, add coconut oil, heat it well, then add urad dal, bengal gram, roast it well, then add ginger, garlic, onion , red chilly and tomato, saute it well, then grind it to thick paste, finall season it with, mustard seeds, dry red chilly and curry leaves in coconut oil.

Serve the dosa with the chutney.

Preparation

Add rice flour to a steel bowl, steam the flour for 15 minutes, then transfer it to a mixie jar, add coconut, salt and cooked rice, blend it to become perfect putt dust, then take a putt maker, add coconut, then add the dust, again second layer of coconut, and dust, after that stem it well.
