Preparation

Wash egg well, then strain from water. Heat a pan, add sesame seeds, dry roast it in medium flame, dry roast cashew nuts, once the heat is gone, grind both,then add it to a bowl, crush coconut and jaggerry, then add it to the sesame mix, knead it with your hand , then make small laddu.

Green gram Ilayada

Ingredients

green gram boiled

jaggerry powder

wheat flour

coconut

cardamom

Preparation

Mix coconut, boiled green gram,and jaggerry powder together, add cardamom too, mix with your hand well. Take wheat flour in a bowl, add salt, mix well, then add water and knead it well and make soft batter. Take a banana leaf, put small portion of the dough, spread it over the leaf in a thin layer, add green gram filling, then fold it and press a little, after that steam it for 10 minutes in idli maker.

Wheat Unniyappam

Ingredients:

wheat flour -2 cups

jaggery- 1 1/2 cups

ripe banana -1

cardamom-5

dried coconut pieces

water -1 cup

salt -1/2 tsp

baking soda-1/8tsp

Melt jaggerry with water. Take a bowl, add wheat flour, salt, dry coconut pieces, cardamom crushed, small banana, and baking soda, mix all well with your hand, next add jaggerry juice, mix well and make a slightly loose batter, rest the batter for 1 hour. Heat a unniyappam pot, add oil, once the oil starts boiling, pour the batter to each holes, keep the flame low, fry both sides well, then take it from oil.

Egg curry in cooker

Ingredients

coriander powder-1/2 tbsp

chilly powder-2 tbsp

curry leaves

water-1/2 glass

Preparation

Heat a pressure cooker, add oil, once it heat well add mustards, let it pop, then add onion, ginger, chilly, and garlic chopped, add salt, and saute it well, once it become soft and transparent add masalas, mix it for 2 minutes, then add water, cover the cooker and cook it for 2 whistle. Open the cooker after the pressure gone, add boiled egg, then cook it for 2-3 minutes more, finally add some curry leaves and turn off flame.

Rice payasam Temple style

Ingredients

raw rice-1/2 glass

water-4 glass

jaggerry-2

cardamom-1 pinch

salt-1 pinch

ghee-1/2 tsp

Preparation

Wash rice, then add it to a pressure cooker, add water, then cook it for 2 whistle, next add jaggerry juice, mix well, boil it again, add coconut, salt, and cardamom, boil 2 more minutes, finally add ghee, after mixing well turn off flame.

Crispy murukk from batter

Ingredients

1 fried Rice flour – 1 cup

2 Melted butter – 2 tablespoon

3 normal water – 1 1/4 cup

4 salt to taste

5 chilli powder – 1 teaspoon

6 black sesame seeds – 1 teaspoon

7 Asafoetida – 1teaspoon

Preparation

Add rice flour and butter to a pan, mix both together with your hand, then add chilly powder,salt , hing, sesame seeds, and water, mix it for lumps free and make a smooth batter, turn on flame, stir the mix without break, continue this until the batter become soft and non sticky dough, then turn off flame and let it cool, after that, fill the dough to a idiyappam maker with star mould, then press it to hot oil, make crispy murukk.

Mayannaise without oil and egg

ingredients :-

white flour (all purpose flour )-1/3 cup

butter or ghee -1 tbsp

milk-1 cup

garlic cloves-6

pepper powder -1 spn

sugar -2 &1/2 spn

salt -1 spn

Vinegar-1 spn

mint paste:-

coriander leaf-1/2 cup

mint leaf -1 tbsp

green chilli-1

ginger -1 small pcs

kadhmiri chilli powder-1 spn

Preparation

Heat a pan, add ghee, once it melts, add maida 2-3 2-3 batches, mix it with a spatula, once the maida completely absorb ghee, add milk, and stir it well , make thick paste. then let it cool, after that , blend it with garlic, salt,pepper,vinegar and sugar, then pour it to 3 bowls equally. For mint paste, grind mint leaves,coriander leaves, ginger, and green chilly together, and add it to one bowl of mayonaise, add kashmiri chilly powder to another bowl, 3 flavoured mayonaise is ready.

Ingredients

Rice flour(puttu podi)-2 cups

boiled water-3 cups

grated coocnut -1/4 cup

shallots

cumin seeds

salt

oil

Preparation

Add rice flour in a bowl, pour hot water into it, mix well and keep aside. Crush coconut, fennel and shallot, then add to rice mix, add salt, then knead it well, add water if required, then make a soft dough, take small ball from it, flatten it by using your hand in a plastic wrap, and make a thick poori, then deep fry it.
