Ifthar special Snack

Ingredients

for filling

onion-2

ginger

green chilly

curry leaves

salt

turmeric-1/2 tsp

pepper powder-1/2 tsp

garam masala-3/4 tsp

cooked chicken grated-100 gm

boiled and mashed potato-2

coriander leaves

other ingredients

maida-1/2 cup

salt

water

bread crumbs

samosa sheet

oil for frying

Preparation

For filling, heat a pan, add oil, then add onion, chilly, ginger , curry leaves and salt, saute until it become brown, next add masalas, mix well, then add grated chicken and mashed potato, mix all well, finally add coriander leaves and turn off flame. Allow it to cool enough.After that take small quantity from it, and make a cylinder shape, put it in a piece of samosa sheet, then roll it, seal it with maida paste, set all mix like this, finally dip each rills in maida water mix, then coat bread crumbs in both ends, and fry it in hot oil.

Tharikkanji( Nombu Kanji)

Ingredients

Milk-2 cup

water-1 cup

semolina-4 tbsp

cardamom-1/2 tsp

sugar-4 tbsp

salt-1 pinch

ghee-2 tbsp

shallots chopped-4

cashews and kismis

Preparation

Add milk and water in a pan, let it boil, then add semolina, stir it well, once it become cooked and thick add cardamom and sugar, continue stirring for 2-3 minutes, finally add roasted shallots, cashews and kismis.

Ifthar special paal vaazhaykka

Ingredients

sago rice-1 cup

banana-3

water

sugar-1/2 cup

milk-1/2 ltr

cardamom powder-1/2 tsp

ghee

cashew and kismis

Preparation

Soak sago rice for 1/2 hrs, then cook it with 1 cup of water in a pan, once it cooked well and chopped banana, cook it again for 10 minutes, next add sugar, once it melts well add milk, then heat it, add cardamom powder and turn off flame. Finally add roasted cashew and kismis in ghee, mix it well and serve it.

Steamed evening snack

Ingredients

semolina-1 1/2 cup

water-11/2 cup

ghee-1 tbsp

coconut piece-1/4 cup

coconut grated- 1 1/2 cup

jaggerry powder-1 cup

cooked green gram-1 cup

cardamom powder-1/2 tsp

Preparation

Take a mixing bowl, add semolina and water, mix it well and keep aside. Heat a pan, add ghee into it, once it heat well add coconut pieces, roast it until it become brown, then add grated coconut, mix well, next add jaggerry powder, mix it until it become melt, then add cooked green gram, combine all well, once it become dry add cardamom powder then take 2-3 tbsp from it and keep aside for filling.Next add  soaked semolina, mix all together, then turn off flame, once it cooled, take small portion from it, flatten it in your palm, add filling , then fold it like cylinder shape, then cover it with a banana leaf, finally steam it in a idli steamer.

Chana Masala Curry

Ingredients

1 glass kadala / channa / white chickpea

onion 2 big sized

green chilli

ginger

garlic

curry leaves

oil

cloves

cinnamon

pepper

fennel seeds

cardamom

potato

turmeric powder 1/2 tsp

coriander powder 1 1/4 tsp

fennel powder 3/4 tsp

salt

coconut

cashews

coriander leaves optional

curry leaves

mustard

dry red chillies

shallots

Preparation

Heat a pressure cooker, add oil, then add spices, roast it well, then add crushed ginger and garlic, saute it well, next add onion and curry leaves, saute until it become soft, next add potato and soaked chana, add turmeric, mix all well, then add water and salt , cover the cooker and cook it well. In a mixie jar, add coconut, green chilly, cashew nuts, green chilly and water, grind it into fine paste and keep aside. Once the steam come out , open the cooker and mash potato with a laddle, again boil it, then add coriander powder and fennel powder, boil it well, next add coconut paste and curry leaves, once it boils well add coriander leaves and turn off flame. Season it with mustard seeds, dry red chilly and chopped shallots.

Easy Semolina breakfast

Ingredients

semolina-1 cup

curd-1/4 cup

water

salt

onion chopped-2 tbsp

carrot-1 tbsp

cabbage-1 tbsp

ginger chopped

green chilly chopped

salt

curry leaves

chilly powder-1 tsp

turmeric-1/2 tsp

ghee

for coconut chutney

coconut-1 cup

dal

curd-2 tbsp

salt

water

green chilly-2

water-1/4 cup

for seasoning

mustard-1 tsp

urad dal-1 tsp

curry leaves and dry red chilly.

Preparation

In a mixing bowl, add semolina and curd, mix it with a spoon, then add salt and water, mix again and keep aside for 1/2 hrs. Then add more water, chopped vegetables, and masalas, mix all well and make a thick batter. Heat a unniyappam pot, brush ghee, pour batter in each hole, cook it both sides well.

For coconut chutney, grind coconut with dal, chilly, curd and salt, then pour it to a bowl, then season it with mustard, curry leaves, dry chilly and urad dal.

Ingredients

Cooked rice-1 cup

egg-1

Preparation

Take rice in a bowl, mash it with your hand, then add salt, onion, chilly, masalas and maida, mix it well with your hand, then make finger shaped bites , finally fry it in hot oil.
