Pumpkin Curry

Preparation

For cooking pumpkin, add pumpkin pieces to a pressure cooker, add turmeric,chilly powder,splitted chilly , water and salt, after closing the lid cook it for 2 whistle.Grind coconut with turmeric,cumin and salt, make a smooth paste, then add it to the cooked pumpkin, add tomato and curry leaves too, then mix it well, boil it again until it become thick. For seasoning, heat oil in a pan, add mustard, let it crack, then add dry chilly and curry leaves, mix all well then pour it to the curry.

Egg Fry

Ingredients

kashmiri chilly powder-1 tsp

pepper powder-1/4 tsp

coriander powder-1/4 tsp

Preparation

Cut eggs into two pieces.Heat oil in a pan, add fennel seeds, then add garlic, mix well, once it roast well add masala powders and salt, mix it well, keep the flame low.Now add eggs, coat masala well, then fry both sides.

Preparation

Crush cooked chicken in a mixie jar.Heat oil in a pan, add chicken, roast it well, add chilly powder and turmeric, mix well, roast it for 2 minutes, then keep aside.Heat oil again in the pan, add onion, green chilly, ginger and curry leaves, saute it well, add turmeric and salt, after mixing well add chicken, mix with masala, then turn off flame, add the masala to mashed potato, mix all and make cutlets.Prepare a maida mix,dip cutlet into it, then coat bread crumbs, finally time to fry, add to hot oil and fry well.

Chicken Stew

Ingredients

Chicken. : 1/2 kg

Coconut milk. : Thick 1st milk – 1cup
: 2nd milk- 2cup

Cardamom. : 5,6

Cloves. : 5

Cinnamon. : 1medium size

Black pepper : 1/2 tsp

Curry leaves. : 2 strings

Garam masala: 1/2 tsp

Pepper powder: 3/4 tsp

Onion. : 1 small

Ginger. : small size

Garlic. : 1 tsp

Cornflour. : 2tsp

Salt

Coconut oil

Preparation

Heat coconut oil in a pan, add whole spices, roast it well, then add garlic and ginger chopped, saute it well, next add green chilly and onion, add salt, mix all, then saute until it become transparent, next add chicken pieces, cook it well for 5 minute, then add curry leaves and second coconut milk, then add carrot and potato, add salt, mix well, cook it for 15 minutes in medium flame.Next add masala powders, boil it again, now pour thick coconut milk, let it heat , then turn off flame.Roast cashew and kismis and add to curry, then roast onion , cinnamon, cardamom and curry leaves, add to the curry, mix well.

Irachichor(Beef rice)

Preparation

Preparation

Take a pressure cooker, add ingredients for cooking beef except beef, mix all with your hand , then add beef, mix together, then pour 1 cup of water and cook it for 3-5 whistles.Once it open. remove excess water and keep aside.Heat ghee in a large pot, add onion, fry it until it become golden brown, then add beef, fry a little, then pour the stock and water required for cook rice, add salt, then let it boil,next add rice, and cook it well, finally add curry leaves and coriander.

Cow bean payasam ( navarathri special)

Ingredients

raw rice-1/2 cup

cow beans-3/4 cup

jaggerry-4 piece

coconut-1 cup

ghee-1 tbsp

Preparation

Wash rice and cow beans together in a bowl, soak it for 3 hrs, then cook in a pressure cooker, once it open, pour melted jaggerry into it, mix well, then boil it, next add coconut, mix it again, continue stirring, now add ghee, boil 2-3 minutes, once it become slightly thick turn off flame.

Crispy dosa

Ingredients

urad dal-1/4 cup

gram dal-1/4 cup

raw rice-2 cup

poha-1 cup

ghee

Preparation

Add urad dal and gram dal in a bowl, rinse with water, then pour clean water and soak it for 3 hrs. Wash rice in another bowl and soak it 3 for hours.Soak poha about 15 minutes,then grind all separately and keep the batter in same vessel, mix all well and keep overnight for fermentation.Next morning add salt to the batter and combine well. Heat a iron tawa,spread water to adjust heat, pour the batter, spread it over , make a very thin layer, add a little ghee above it, once it become crispy transfer it to a plate.

Ingredients

lukewarm water

Preparation

Add,maida,rava,sugar,salt and baking powder to a bowl,pour water, then mix all well, once it become a thick batter keep this aside for 20 minutes, then take it and mix again.Heat oil in a pan, pour the batter with a small laddle, fry both sides well.

Crispy Potato Fries

Preparation

Take 4 medium sized potato, peel off it, then cut it into long finger shape, then soak it in water for 10 minutes.Boil water in a pan, add potatoes, cook it for 2 minutes, then take it from water and put it in kitchen towel, wipe out water, then spread corn flour and rice flour above it, mix well. Heat oil in a pan, fry potatoes in batches.
