Butter cookies

Ingredients

ghee-2 tbsp

veg. oil-1/4 cup

powdered sugar-1/2 cup

pineapple essence-1 tsp

maida-1 cup

baking powder-1 tsp

yellow food color-1-2 drops

sesame seeds

Preparation

Take a bowl, add ghee, oil, and powdered sugar, mix all well, then add essence and maida, combine well, add baking powder and food color, knead it with your hand, then make small balls, place it in a baking tray, add a little sesame seed above all balls, then bake it for 20 minutes.

Bitter gourd, tamarind curry

Ingredients

bitter gourd-1

coconut oil-6 tbsp

mustard-1 tsp

fenugreek-1 tsp

shallots-15

green chilly-2

dry chilly-8-10

curry leaves

jaggerry-150

tamarind-lemon size

turmeric-1/2 tsp

hing-1/4 tsp

chilly powder-1 tsp

Preparation

Marinate chopped bitter gourd with salt and turmeric. After 1/2 hrs of marination, wash it 2 times, then fry it well and keep aside. Heat a clay pot, add coconut oil, then add mustard and fenugreek, let it pop well, next add shallots, green chilly, dry chilly and curry leaves, saute until it become brown. Boil tamarind juice in another pot, then pour it to the clay pot, add masala powders, boil it well, then add fried bitter gourd, add jaggerry and salt, boil it again until it become thick, then turn off flame.

Egg free mayonnaise

Ingredients

butter-1 tbsp

corn flour-2 tbsp

milk-1/3 cup

garlic-2

salt

pepper powder-1/4 tsp

vinegar-1-2 tsp

sugar-1/2 tsp

Preparation

Heat butter in a pan, add courn flour, combine both well, next pour milk, mix all together until the corn flour cooked enough, then transfer it to a mixie jar, add pepper powder, salt, sugar, garlic, vinegar and a table spoon of milk, then blend it well, store the mayonnaise in fridge.

Fish Nirvaana

Ingredients

seer fish

lemon juice

oil

garlic

coconut oil

coconut milk

Preparation

Marinate fish with chilly powder, turmeric,pepper powder, salt and lemon juice. Then fry it in oil and keep aside. Heat a clay pot, add a little oil, then put banana leaf above it, then pour oil and add curry leaves, add fish fry above it, then add ginger, garlic and green chilly, pour coconut milk, then cover the pot and cook it in low flame for 3-5 minutes. Tasty dish is ready to serve.

Preparation

Boil potato well, then mash it well, add chilly flakes, cumin, lemon juice, salt, masala powders, green chilly and coriander leaves, mix it well, then keep aside. Take maida in a bowl, add salt and oil, mix it well, pour water, knead it well and make a soft dough, divide the dough into small balls. Take holed flat spoon, put the dough, flatten it, then add the filling in cylinder shape, cover it carefully, after that fry it in hot oil.

Pork Fry

Ingredients

pork-1 kg

ginger – 2 piece

garlic-15

green chilly-6

tomato

coriander powder-1 tbsp+ 2 tbsp

turmeric-1 tsp

garam masala-1 tsp+1 tsp

crushed shallots-10

coconut piece-1/2 coconut

Preparation

Marinate pork with 1/2 portion of chopped vegetables, salt, small quantity of masala powders, salt and water, then keep this aside for 1/2 hrs. After marination, cook the meat in pressure cooker. Heat oil in a pan, add another half portion of vegetables and coconut pieces, add curry leaves too, saute it well, then add masala powders, combine well, now add cooked meat, mix well and cook it until it become dry, finally add curry leaves, then mix it well and turn off flame.

Crispy chilly beef

Ingredients

for marination

Tenderloin Beef – 350gms

Dark soya sauce – 1tbsp

Red chilli flakes – 1/2tsp

Ginger- garlic paste – 11/2 tsp

Refined oil – 1tsp

Pepper powder – 1tsp

Egg – 1

Cornflour to coat the beef – 1/2 cup

To prepare the sauce

Sweet chilli sauce- 3tbsp

Tomato Ketchup – 2tbsp

Dark soya sauce – 1tbsp

Salt

Red chilli flakes – 1/2 tsp

Sugar – a pinch

Combine the above in a bowl

Preparation

Marinate beef with the ingredients listed above. Heat oil, add the cornflour coated beef fry only for a mint or two. Drain & set aside. Mix ingredients to prepare sauce in a bowl and keep aside.Hear oil ,add , 1tbsp of minced garlic, 1/2 sliced onions, 1/2 red capsicum, fried beef strips,pour the sauce mix, spring onions, 2 fresh green chillies .mix for two mints and switch off.

Preparation

Cut tapioca into small pieces, then grind it with cumin and make fine batter. Add masala powders and salt, mix well, then mix it with water, boil it and make thick, add sesame, combine well. Take a plastic sheet, pour 1 spoon of batter, round it into thin layer, dry the papad in sun light for 2-3 days, then take it from sheet and fry in oil.
