Ingredients

water- 1 1/2 cup

coconut oil-1 tbsp

rice flour-1 cup

cumin-1/2 tsp

coconut-3/4 cup

Preparation

Boil water with salt and oil, then add rice flour into it, mix well, then turn off flame. Add coconut and cumin, knead it well and make soft dough, take small quantity from it, flatten it by adding flour, then cut it into round shape. Heat a tawa, add pathiri, cook it well.

Preparation

Chicken Manthi

ingredients

sella basmati rice -3 cups

salt

oil -2 tbsp

lemon juice -1 no

chicken with skin- 900 g

chicken stock -2 cubes

arabic masala- 1 tsp

vinegar -1 tbsp

red food colour

yellow food colour

oil- 4 tbsp

black pepper corns -1 tbsp

cumin seed -1/2 tsp

dry lemon -1 no

bay leaf -2 nos

cloves

cardamom

cinnamon

coriander seeds

Preparation

Wash rice throughly, then soak it for 15 minutes in hot water. Take chicken pieces, put deep holes with fork. For marinating chicken, add arabic masala, chicken stock, red food color, and vinegar to a bowl, apply this paste above the chicken, keep this aside. Heat oil in a cooker, add whole spices and dry lemon, next add chicken pieces, cover the cooker and cook it for 1 whistle. Boil water in a big pot, add salt , lemon juice and oil, then wait until it boil well, now add rice, cook the rice about 90 %, then strain the rice from water. Open the cooker, take entire water and add rice above the chicken, pour the masala water taken from cooker above the rice, then add green chilly, and red and yellow food color, then close the cooker and cook it for 20-30 minutes. Wait until the pressure gone, then serve rice.

Preparation

Marinate chicken with above said masala, then keep aside for 1 hr. Fry the chicken with some curry leaves after marination, then keep aside. Add dry chilly, green chilly and ginger garlic paste to the pan, saute it well, next add shallots, saute until it become soft, now add masala powders, combine all well, add chilly flakes, mix it to turn aromatic, then add sauce, mix it well, then add fried chicken, mix all together, wait until it become slightly dry, then turn off flame, add more curry leaves to flavour the dish.

For semolina dosa, add 2 tomatoes in a mixie jar, grind it into fine paste, then transfer it to a bowl, add finely chopped onion, coriander leaves, kashmiri chilly powder and salt, mix all well, now add all flours, mix again, add water, combine all, next add cumin and water , make a loose batter. Heat a pan, apply ghee, pour the batter, spread over the pan, then cook it well, cook both sides, then serve it.

For oats dosa, add oats to a mixie jar, then add banana, egg and salt, grind it into fine batter, then transfer it to a bowl, now make soft dosa with this batter.
