Perfect Unniyappam

Ingredients

Raw rice – 1 cup –

Cumin seed – 1 tsp –

Cardamom – 4 –

Palayankodan banana – 2

Jaggery – 120 g.

coconut – 25 g

Sesame seeds – 1/2 tbsp

Coconut OIL

Salt

Water

Preparation

Soak rice for 6 hrs, then dry it by wiping rice with a cloth, then transfer it to a mixie jar, add cardamom, cumin, and salt, grind it into fine powder. Melt jaggerry, grind banana into fine paste, add to powdered rice, then add jaggerry melted, mix well, add sesame seeds and roasted coconut, combine well. Heat oil in unniyappam pot, pour batter in each holes, fry both sides well.

Special Ghee Rice

Ingredients

ghee-2 tbsp

shallots-5-6

onion-1/2

whole spices

grated carrot

green chilly-1

water-4 3/4 glass

rice-2 1/2 glass

salt

fried onion, cashew and kismis

Preparation

Heat ghee in a pressure cooker, add shallots and onion, saute it well, then add whole spices, add chilly and carrot, saute all together, add water and salt, let it boil, then add washed rice, mix it, then cover the cooker and cook it for 1 whistle.

Tomato Theeyal

Ingredients

coconut-1 cup

shallots-3

curry leaves

chilly powder-1 tbsp

turmeric- 1 1/2 tbsp

coriander powder-1/4 tsp

fenugreek powder-1/4 tsp

hing-2 pinch

oil

onion-1

tomato-2

curry leaves

salt

oil

mustard

shallots

dry chilly

curry leaves

Preparation

Heat a pan, add coconut, shallots and curry leaves, roast it well, next add masala powders, mix well, then turn off flame. Once the heat is gone, grind it into fine paste. Heat oil in a pan, add onion, saute it well, next add tomatoes, saute until it become soft and mushy, now add salt and coconut paste, add more water, boil it well, then turn off flame.

Vegetable Momos

Ingredients

for dough

maida-1/2 cup

salt

oil-1 tsp

water

for filling

oil

carrot

beans

cabbage

garlic

onion

coriander leaves

soy sauce-1 tsp

salt

Preparation

For dough, add maida, salt, oil and some water to a bowl, knead it well and make a soft dough.

For filling, heat oil in a pan, add garlic, roast it for a minute, then add vegetables, combine all, then add salt, mix it well, add soy sauce, mix again, then turn off flame.

Divide the dough into very small balls, flatten it into thin chapathis, add filling, fold it like momos, then steam it well.

Easy Bread Breakfast

Ingredients

green peas

salt

water

garam masala-1 tsp

Bread slices

Preparation

Heat oil in a pan, pop mustard, then add curry leaves and onion, saute it well by adding salt, next add masala powders, mix until the raw smell gone , now add mashed potato, after mixing it well add cooked green peas, mix all together, then turn off flame. Prepare a maida paste by mixing maida and water. Take bread slices, roll it with a chapathi roller, then add filling one side, roll the bread, seal it with maida paste, prepare whole bread slices like this, then shallow fry the rolls.

Kollam Style Idli

Ingredients

urad dal-3/4 cup

fenugreek-1/4 tsp

raw rice-2 cup

ginger, green chilly and curry leaves

Preparation

Soak rice and urad dal separately. Wash urad dal and fenugreek before soaking. Grind all in urad dal soaked water, then add leftover, dosa or idli batter, mix well and keep overnight. Next mor ning, add salt, chopped ginger, chilly and curry leaves to the batter, mix well. Take banana leaf fols sides, then put in in the idli plate hole, then pour the batter, steam it well.

coconut water

Instant yeast-1 tsp

water

Preparation

Boil water in a pan, then add putt powder, turn off flame and soak it for 10-15 minutes. Grind rice with coconut and water, then add soaked putt mix and yeast, mix all with your hand, then keep the batter aside for overnight. Next morning, add salt to the batter, mix well, add more water to adjust consistency, then make soft appam.

Preparation

Heat oil in a pan, add onion, capsicum and tomato, saute it for a while, then add masala powder, kashmiri chilly powder and salt, mix well, pour water, let it boil well, now add noodles, cook it well, add sauces, combine well. Finally add some coriander leaves, then turn off flame.

Marinate chicken with curd, garam masala, ginger garlic paste, chicken masala, fennel powder, corn flour and salt, then add red food color and curry leaves, mix well and rest it for 2 hrs, then fry the chicken with splited chilly.

Ingredients:

maida – 3/4 cup

cocoa powder – 1/4 cup

baking powder – 1/2 tsp

vegetable oil – 1/3 cup

unsalted butter – 3 tbsp

dark Chocolate- 1/2 cup

powder sugar- 1 cup

egg – 2

vanila essence – 1 tsp

8 inch mould

Preparation

Heat a pan, add oil and butter, mix it until it become melt, then turn off flame, add chocolate compound into it, combine all, then keep aside. Sieve dry ingredients to a bowl. Pour the chocolate mix to a bowl, add powdered sugar, mix both well, then add eggs, combine all, then add vanilla essence, next add dry ingredients, mix all well and make a thick batter, add chocolete chips, after mixing well transfer the mix to a cake tin, then bake it well.
