Mackarel Fish fry in banana leaf

Ingredients

for marination

Mackerel fish-6

salt

chilly powder-1 tsp

turmeric-1/4 tsp

garam masala powder-1/4 tsp

ginger garlic paste-1 tsp

coconut oil

Other ingredients

tomato-1

onion-1

green chilly

curry leaves

Preparation

Marinate fish with the given ingredients, after some times fry it with curry leaves, then set aside. Add onion and green chilly to the same pan which is used to fry fish, then saute it well, add tomato, combine well, once it become soft and mushy, turn off flame, take banana leaf, add masala and curry leaves, put 1 fish above, then fold leaf carefully, once all fish covered like this, put it in a pan, and cook it in low flame for 10 minutes.

Eggless Achappam

Ingredients

Non roasted raw rice flour 1 Cup

Maida ¼ Cup

Sugar ¼ Cup

Thick coconut milk ½ Cup

Ghee 1 Table Spoon

Coconut Oil For deep fry

Preparation

Soak one cup of raw rice for 4 hours and then grind and sieve it to a fine powder. Take one cup of ground rice and add ¼ cup of maida and mix well. Add sugar, pinch of salt, coconut milk and ghee and mix well. Add some water if needed and mix well again. The batter must be thick in consistency. Dip hot Achappam mold in the batter and fry in medium flame.

Prawn Roast

prawns-1/2 kg

Preparation

Marinate prawns with given masala, then fry it after 1/2 hrs. Heat oil in a pan, add garlic and ginger, saute it well, add onion and curry leaves, mix it well and cook until it soft, next add masala powders, mix everything, add tomato, pour hot water, boil it until the gravy become thick, now add fried prawns, mix it with masala, and wait until the gravy become slightly dry, then turn off flame.

Jackfruit seeds and drumstick thoran

Preparation

Cut jackfruit into small long pieces, then add to a pan, add salt and water, then cook it well, then add drum stick, cook it again for 3-4 minutes. Crush coconut , cumin and garlic together. Heat oil in apan, add mustard, let it pop well, then add green chilly and dry chilly, mix it all, then add onion and curry leaves, saute it well, add turmeric and chilly powder, after a mix add coconut mix, combine well, add cooked drum stick, mix well, after 1-2 minute of mixing turn off flame.

Rice Ball Snack

Ingredients

rice-1 1/2 cup

jaggerry-250 gm

water -1/4 cup

cashew nut

coconut-1 cup

Preparation

Wash rice throughly, then strain water completely. Dry roast rice until it become crispy and brown. Roast coconut and cashews separately. Melt jaggerry , then keep aside. Grind rice, coconut, cashews together and make a coarse powder, then transfer it to a bowl, pour jaggerry accordingly, mix well, then make balls.

Preparation

Dry roast coconut and shallots together until it turns golden brown, then grind it into fine paste. Heat a clay pot, add oil, then pop mustard and cumin, then add garlic, saute it well, next add shallots and curry leaves, mix well, add dry chilly, once it sauted enough add tomato, mix well and add turmeric, once the raw smell gone add masala powders, mix it well, add a little water, boil it well, then add tamarind juice, let it boil, then add coconut paste, boil it again, then add curry leaves and turn off flame.
