Ingredients

-Fish – 3/4 kg (750gm) gms

For marination:

Turmeric powder- 1/4 tsp

Red Chilli Powder- 1.1/2 tsp

Salt For Masala Paste: –

Cumin seeds- 1.1/2 tsp

Dried Red Chillies- 4

Garlic- 10 cloves -Ginger

1 – Green Chillies- 4

Red Chilli Powder- 2 Tbsp

Coriander Powder- 3/4 Tbsp

Turmeric Powder- 1/4 tsp

Onion, grated- 3 medium

Kasuri Methi (dried Fenugreek leaves)- 1 tsp

Curry leaves -Fenugreek powder – 2 Pinch

Tamarind, soaked in water-8 Tbsp

Thick coconut milk- 6 tbsp

Salt to taste

Coriander leaves – 2 tbsp

Oil

Easy Fish Curry Recipe

Yummy fish curry to eat a lot of rice. Any kind of fish can be prepared like this.

Ingredients

• Washed and cleaned fish pieces – ½ kg
• Small onion – 1 cup
• Green chillies cut in half – 2 nos
• Tamarind – about the size of a rice paddy
• Finely chopped small onion – 1 tbsp
• Grated coconut – 3/4 cup
• Fenugreek – 1/4 tsp
• Chilli powder – 1 & 1/2 tablespoon
• Coriander – 1 tablespoon
• Turmeric powder – 3/4 tsp
• pepper powder – 1/2 tsp
• Sufficient salt water

How to prepare

• After washing the fish thoroughly, apply half a teaspoon of turmeric powder and a teaspoon of chili powder.

• Place another pan in the stove, pour some coconut oil into it and add a cup of small onion and fry it lightly. Then add a quarter teaspoon of fenugreek seeds and three quarters of a cup of coconut milk and saute again, do not burn.

• When the coconut is almost brown in color, add one tablespoon of coriander powder, quarter teaspoon of turmeric powder, half teaspoon of black pepper powder, one tablespoon of Kashmiri chili powder and saute well and switch off the flame. When cool add some water and grind it well.

• Add grated coconut, a tablespoon of chopped small onion, tamarind water, few curry leaves, two green chillies, enough salt and water to an earthen pot and put it in the stove to burn.

• When it boils, add the previously coated fish pieces and boil again for 10 minutes. After the fish is fried, turn off the flame and cover with some curry leaves. A cool combination for hot rice and kappa.

Uluva Kanji, also known as Fenugreek Porridge, is a traditional South Indian dish made from fenugreek seeds and rice. It is a nutritious and wholesome dish often consumed for its health benefits. Fenugreek seeds are rich in fiber, protein, and various nutrients, and they are believed to have several health-promoting properties.

To prepare Uluva Kanji, fenugreek seeds are soaked along with rice for a few hours, and then they are ground into a coarse paste. This paste is then mixed with water and cooked until it forms a porridge-like consistency. It’s usually served with some accompaniments like coconut chutney, pickles, or yogurt to enhance the flavor.

Curried Tender Jackfruit / Chakka Masala Recipe

Ingredients

• Tender jackfruit cubes- 1/2 kg

• Onion thinly sliced- 2 medium

• Green Chilies- 2

• Ginger  – 2 inch thick

• Garlic-  4-5

• Tomato  2

• Curry leaves- a few

• Mustard seeds

• Dry red chillies – 3

• Oil- 3 tbs

• Salt to taste

Spice Mix

• Chilly powder- 2 tsp

• Coriander powder- 2 tsp

• Pepper powder – 1/2 tsp

• Turmeric powder- 1/2 tsp

• Garam Masala- 1/2 tsp

• Meat Masala- 1/2 tsp

• Thick coconut milk – 1 cup (optional)

• Cashew nut paste- 1 tbs

Preparation

• Chop tender jackfruit into small cubes.

• Cut onions into thin slices and crush ginger and garlic into a coarse paste.

• Heat oil in a heavy bottom pan, and add mustard seeds,dry red chillies and curry leaves.

Add onions and fry till golden brown. After a minute of sauteing,add 1 tbs ginger and garlic paste . Add tomatoes, spices, and salt, and allow it to cook and mashed up.  Now add the chopped jackfruit and cashew nut paste and mix well.  Add one cup of hot water, cover, and cook on a medium flame.  Close the lid and cook for 8-10 minutes, and stir occasionally.  Allow the curry to reach your desired consistency, finally add thick coconut milk and  Switch off the flame after a minute.

Easy Mango Pickle recipe

The soul of every Indian pickle is the masala or the spice mix. For this mango pickle, I use a quick and easy homemade spice blend (achaar masala) which takes this achaar up a notch.

It is a spice blend of – fennel seeds, yellow mustard seeds, black mustard seeds, and fenugreek seeds. Dry roast the spice for a few seconds to release the aroma, and then make a coarse powder using a blender.

If you are not too keen on making this spice blend at home, use a readymade, store-bought pickle masala powder (achar masala) in the same quantity.

How To Make
Step 1) Wash the green mango with water. Clean each piece nicely with a kitchen towel.

Step 2) Peel the skin of the mangoes using a knife or vegetable peeler. Now dice the pulp into equal size pieces. Discard the stone.

Step 3) Mix diced mangoes, salt, and turmeric in a large tray or bowl. Cover and keep aside for 2 – 3 hours for mangoes to release water/juices.

Step 4) Once the fruit’s water is released, transfer the mangoes to a colander to drain all the water

Step 5) Combine turmeric-coated mangoes, green chilli, homemade pickle masala, red chilli powder, asafoetida, salt, mustard oil, and white vinegar. Mix them nicely to coat each piece of green mango with spices and oil.

Step 6) Taste and add more salt/red chilli if required. Transfer the mango pickle to a clean, sterilized, dry jar. Cover the opening of the pot with a piece of cloth. Seal it with a lid.

•Wash ragi well to make appam. Then add all the other ingredients and water to it and let it simmer for 5-6 hours.

• Grind the tallow in the morning and leave it to rise for 30 minutes.

Now put a pan in the oven and pour some of the flour that has risen and make appam.

ഈ സ്‌റ്റൂ നല്ല രുചിയാണ്. അപ്പവും ഇടിയപ്പവും ചപ്പാത്തിയും നല്ല കോമ്പിനേഷനാണ്. ഇത് തയ്യാറാക്കാനും വളരെ എളുപ്പമാണ്. എരിവ് കുറവായതിനാൽ കുട്ടികൾക്കും മുതിർന്നവർക്കും ഇത് വളരെയധികം ഇഷ്ടപ്പെടുമെന്ന് എനിക്ക് ഉറപ്പുണ്ട്. എങ്കിൽ ഈ മുട്ട സ്‌റ്റൂ എത്ര എളുപ്പത്തിൽ പാചകം ചെയ്യാമെന്ന് നോക്കാം.

ആദ്യം, അടുപ്പത്തുവെച്ചു ഒരു ചട്ടിയിൽ ചൂടാക്കുക. രണ്ട് ടേബിൾസ്പൂൺ വെളിച്ചെണ്ണ ചേർക്കുക. ഇനി ഒരു നുള്ളു ഇഞ്ചിയും വെളുത്തുള്ളിയും അരിഞ്ഞത് ചേർത്ത് നന്നായി വഴറ്റുക. രണ്ട് ഉള്ളി, നീളത്തിൽ അരിഞ്ഞത്, നന്നായി വഴറ്റുക. നിറം മാറ്റേണ്ടതില്ല. ഇനി മൂന്ന് പച്ചമുളകും രണ്ട് കറിവേപ്പിലയും ചേർത്ത് നന്നായി വഴറ്റുക.

ഉള്ളി വാടി വരൂമ്പോൾ 1/2 ടീസ്പൂൺ കുരുമുളകും 1/4 ടീസ്പൂൺ ഗരം മസാലയും ചേർത്ത് വഴറ്റുക. വേവിച്ചതും പൊടിച്ചതുമായ രണ്ട് മധുരക്കിഴങ്ങുകൾ ചേർത്ത് നന്നായി ഇളക്കുക. ഇനി രണ്ട് കപ്പ് രണ്ടാം പാൽ ചേർത്ത് എല്ലാം തിളപ്പിക്കുക. ഈ ഘട്ടത്തിൽ ആവശ്യത്തിന് ഉപ്പ് ചേർക്കുന്നത് ഉറപ്പാക്കുക.

ഉരുളക്കിഴങ്ങ് നന്നായി യോജിപ്പിച്ച് കറി ഒരു തിളപ്പിക്കുക. ഇനി നാല് മുട്ടകൾ തിളപ്പിച്ച് തോട് മാറ്റി ചേർക്കുക. (മുട്ട ചെറുതായി ചുരണ്ടിയെടുക്കണം. അപ്പോൾ മാത്രമേ മസാല നന്നായി ആഗിരണം ചെയ്യപ്പെടുകയുള്ളൂ.) ഇനി കറി രണ്ടു മിനിറ്റ് വേവിക്കുക. ഇനി ഒരു കപ്പ് കട്ടിയുള്ള തേങ്ങാപ്പാൽ ചേർക്കുക. കുറച്ച് കറിവേപ്പിലയും അര ടീസ്പൂൺ കുരുമുളകും ചേർത്ത് നന്നായി ഇളക്കി മൂടുക. പത്തു മിനിറ്റിനു ശേഷം ഉപയോഗിക്കാം. ഇപ്പോൾ ഞങ്ങളുടെ അടിപൊളി “എഗ്ഗ് സ്‌റ്റൂ” റെഡി…!!

Fenugreek is one of the most important medicines that can be used to nourish the body. It can play an important role in health care. Fenugreek is rich in nutrients like protein, fiber, niacin, potassium, iron and alkaloids.

Fenugreek is very beneficial for women. Fenugreek is one of the things that can increase estrogen production. Fenugreek medicine is prepared and given to women after delivery to improve the body and breast milk.
Rich in iron, it is perfect for preventing anemia. We can prepare fenugreek oil at home.

Ingredients

• Fenugreek – 100 grams
• Panamchakkara – 500 gms
• Turmeric powder – 1 tsp
• Cumin seeds – 1 tsp
• Pepper – 1 tsp
• Salt – 1/4 tsp
• Coconut milk (first milk): 3/4 cup
• Coconut milk (secondary milk): 2 and 1/2 cups
• Ghee – 2 tbsp
• Cardamom powder – 1 tsp
• Chuckupodi – 1/2 tsp

How to prepare

• Soak fenugreek seeds in water for five to six hours. Drain fenugreek seeds and add cumin seeds, turmeric powder and black pepper. Stir it well and add half a glass of water to it and cook it in a cooker. Cook it till four whistles. After heating it, grind it well in a mixer. Add water and add coconut milk without grinding.

• Melt Panamchakara and pour half a cup of water and strain it.

•Then heat a pan. Add 3 tablespoons of ghee to it. Once it is hot, add the ground fenugreek mixture and stir. The fire should be kept low for this. Add melted panamchakara to it. Mix it well. Then add coconut milk to it. Keep stirring it well. Then add quarter teaspoon of salt. If the first milk dries up, add the second milk and stir. Add salt to balance the sweetness. Then add cardamom powder and chukkupodi.

•Stir this mixture well and keep it when it becomes lehyaparu. Don’t be too dehydrated. If water is present, this mixture will spoil. If heated, it can be stored in a bottle.

• It can be eaten for body fat. It can be taken twice a day, i.e. in the morning and at bedtime. You can also drink a glass of milk with this. It is very good for giving health and nutrition to the body. It is a good medicine for anemia
