Grind coconut with turmeric, green chilly, garlic and curry leaves, then make a coarse paste, add this paste to cooked jackfruit. Cook it again for 5 minutes, then turn off flame. Finally add curry leaves and coconut oil.

Ghee Rice is a classic and super aromatic South Indian meal made with rice, Ghee, whole spices, onions, cashews and raisins. Small rice.  -5 cup

Coconut oil. -50 ml

Ghee.

Preparation

Heat a large pan, pour coconut oil, then add spices, after roasting it well add onion, saute all well, then add washed and draine d rice, mix all until the rice slightly crispy, then pour water, add salt, then cook it well, cover it with banana leaves , once the rice is cooked enough, add coconut milk, fried onion, cashews and raisings, and ghee, combine well before serving.

Ingredients

•Roasted rice powder. (Pathiripodi) – 2 cups

•urad dal powder. – 1 cup

•Avil – 2 cups.

•Salt – half teaspoon

•Water – four and a half cups

How to prepare

Mix rice flour, urad dal flour, avil, salt and water in a large bowl. Then grind it in a big jar of mixer.Allow the batter to rise for 8 hours. Add butter to the idli and steam it for 10 minutes. Idli is ready like flower. Dosa can also be baked with the same flour.

Take a bowl, add maida flour to a bowl, add salt and water, mix all well and make a thick batter. Boil potatoes, then mash it well. Heat oil in a pan, pop mustard, then add chopped onion, green chilly and ginger, saute it well, next add mashed potato, mix all well, add masala powders salt and curry leaves, after a mix, turn off flame. Once it cooled enough, make small balls, dip the balls in the batter, then fry it in oil.

Everyone likes chicken curry, then try a variety chicken curry. Here is a great recipe for chicken curry prepared with capsicum, bread fruit(kadachakka) and french fries.

Ingredients

Chicken-2.5 kg

Green peas

Kadachakka-2 piece

Cauliflower

Capsicum all colors

Coriander powder-3 tbsp

Preparation

First cut the breadfruit and potato into long pieces and fry them well in oil.Now heat a little oil in a pan and add finely chopped onion to it and fry it. Next, add tomatoes and crushed ginger and saute well.Next you can add cooked green peas and masala powders. After frying till the raw smell of the powders goes away, pour water and boil it. Add green chillies and cauliflower. After a while add chicken. Add enough salt and cook well. When the water and chicken are cooked well, add fried items, then add capsicum and coriander leaves and mix again and then switch off the flame.

Take a mixie jar, add boiled potato, butter, and water, blend it well. Take rice flour in a bowl, add salt, cumin, chilly powder and potato paste, add water, mix well, then knead it with your hand and make soft dough. Take idiyappam maker, and use star mould, fill the dough, then press it to a banana leaf, make medium sized murukk, finally, fry it in hot oil.

Malabar Pathiri and Egg Curry

Pathiri is much loved Kerala Muslim traditional specialty prepared and served on special occasions, including parties for newly married couples and during Iftar in the Muslim fasting month of Ramadan. Pathiri is also known as aripathiri, ari pathil or pathil in some parts of the Malabar region. There are many types of Pathiris, like Erachi pathiri, Poricha pathiri, Neipathiri, Meen pathiri, etc. It is usually prepared for dinner and served with egg curry and meat curry.

Ingredients

Ari Pathiri

Rice Flour. 3 cups ( 250 ml)

water -3 cups + 1 cup

Coconut oil -2 tsp

salt according to taste

Rice flour for dusting-1/2 cup

Egg Curry

Shallots -5

Curry Leaves-12

Water

Salt

Egg-.4

Coconut-1 cup

Green chilli -2

Chilli Powder -1/2 tsp

Turmeric Powder -1/4 tsp

Fennel Seed -1 tsp

Preparation

Pathiri

Boil water and salt together in a large pan, add coconut oil, once it starts boiling, add rice flour, mix it well. Now turn off flame then cover the pan for 5 minutes, then knead it with the heat and make a soft dough, use water if required, then divide it into equal balls, dust the ball with rice flour. Now flatten it into thin layers, cut it into perfect round shape, then cook it in a pan.

Egg curry

Grind coconut, green chilly, fennel, turmeric and chilly powder together, then make a paste. Heat oil in a pan, add finely chopped shallots, saute it well, then add curry leaves, pour water into it, once it boil well break egg into it, boil it well, then add coconut paste and salt, boil it again , then turn off flame.

Preparation

Soak horsegram overnight, then cook it with salt, water , chilly powder and turmeric. Once it cooked enough, add chopped onion, banana flower, little more masala powders and salt, then close the cooker and cook it for 1 whistle.
Heat oil in a pan add mustard to pop, then add rice, next add dry chilly and curry leaves, combine all well, then add cooked items, mix it all, then add coconut, cook it 2 more minutes, then turn off flame.

Ragi Kinnathappam

 

A hearty dessert in minutes with ragi. Ragi kinnathappam can be prepared like cotton without yeast and soda powder. Ragi is a powerhouse of nutrients like calcium, magnesium, iron, sodium and potassium. It has more nutritional value than wheat flour and plain white rice. Ragi is rich in calcium which helps in strengthening bones. Ragi is good for diabetics and those who want to lose weight.

Ingredients required

•Ragi – one cup

• Coconut milk – one cup

• Jaggery – 250 grams

•Ghee – two teaspoons

•Put a cup of ragi in water. After an hour, pour one more cup of water in the big jar of the mixer and grind it. After grinding the ragi once in the mixer, add a cup of coconut milk along with it and grind it again. Then we have to squeeze its milk. Do the same once more and squeeze the second second milk.

•Take a deep vessel and pour the squeezed milk into it and turn on the fire in the oven. Strain the melted jaggery into it. Keep stirring continuously. Add a teaspoon of ghee to it. Then when it becomes short again, you can pour one more teaspoon of ghee. After that, when it is well condensed, it can be poured into a bowl that has been rubbed with ghee. After cooling, cut into desired shapes. Delicious ragi kinnathappam is ready
