Raw banana curry

Ingredients
nenthrakaya – 1
shallots – 12
garlic – 6
ginger – 1piece
greenchilli – 3
turmeric powder – 1/2tsp
redchilli powder – 1 tsp
coriander powder – 1 tsp
grated coconut – 1/2 cup
fenugreek powder – 1/4 tsp
coconut oil
mustard seeds
fenugreek seeds
dry chilli
shallots
curryleavs
salt
Preparation
The plantains are sautéed in coconut oil with the crushed ingredients . Spices such as turmeric powder, chili powder, and coriander powder are added . Water is added to cook the plantains until tender . A paste of grated coconut is mixed in. Tamarind extract and chopped tomato are added for flavor . The curry is seasoned with salt and garnished with curry leaves. Fenugreek powder is added for extra flavor . Finally, a tempering of mustard seeds, fenugreek seeds, shallots, dried chilies, and curry leaves is poured over the curry . It’s recommended to let the curry sit for at least an hour to allow the flavors to meld.
