How to make Bittergourd curry without bitterness?

mustard-1/2 tsp

fenugreek-1/4 tsp

ginger-1/4 tsp

garlic-1/2 tsp

green chilly-3

shallots-10

chilly powder-2 tsp

Preparation

Boil bittergourd with water and salt to remove bitterness. Heat oil in a pan, add mustard and fenugreek, pop it well, then add ginger, garlic, green chilly and curry leaves, saute it well, next add shallots, saute it for another 1 minute, now add masala powders, mix until the raw smell gone, now add tomato paste, combine all well, add tamarind water and salt, let it boil well, add cooked bittergourd, combine all well, once it boil for a minute turn off flame and add curry leaves.
