Ingredients

milk – 1/2 cup warm

sugar – 2 tbsp

yeast – 1 tsp

Maida – 2 cups

butter – 2 tbsp

salt – 1/8 tsp

egg – 1

chocolate sauce

Milk – 1 cup

Sugar – 1/2 cup

Cocoa powder – 1/4 cup

corn flour- 1tsp

Vanilla essence – 1/2 tsp

Coffee powder – 1tsp

Butter – 1 tsp

Preparation

In a bowl add warm milk, sugar and yeast. mix well and keep aside for 10 minutes to ferment.add butter , egg , salt and Maida to the wet mix one by one and knead to a dough for at least 10 minutes. cover the bowl and allows it to rest for 2 hours…after 2 hours knead the dough again for 3 to 4 minutes.roll it and cut it in the shape of doughnuts using a cookie cutter or any lid…keep aside for 30 minutes. Then fry it in oil in low flame…
Dust the fried doughnuts with sugar or dip in chocolate sauce and sprinkle some sugar sprinkles…Mix cocoa powder milk, sugar coffee powder butter and cornflour with out any lumps…. Cook till you get required consistency….
Sauce will gets thick as it cools down…..

Preparation

The jackfruit is then pressure cooked for 4 whistles.In the meantime, a separate grind is prepared using coconut, shallots, garlic, curry leaves, green chilies, jeera, and turmeric powder.The cooked jackfruit is then mashed and mixed with the prepared grind. Water is added as needed and the mixture is brought to a boil.Finally, for tempering, the video instructs to add tadka (not shown how to make tadka in the video) and the dish is complete.

tuna fish

mashed boiled potato

Preparation

First, you need to make the dough. You will need two cups of flour, one teaspoon of sugar, one teaspoon of salt, one teaspoon of oil, and one teaspoon of yeast. Mix all the ingredients together and knead the dough until it becomes smooth. Then, put the dough in a bowl, cover it, and let it rest for 10 minutes.

Next, you need to make the filling. Heat oil in a pan and add two chopped onions, 10 cloves of garlic, a small piece of chopped ginger, three chopped green chilies, and a few curry leaves. Fry them until fragrant. Then, add one-half teaspoon of coriander powder, one teaspoon of chili powder, one-half teaspoon of turmeric powder, and one teaspoon of black pepper powder. Cook for a while. After that, add canned tuna fish and salt to taste. Mash two boiled potatoes and add them to the mixture.

Finally, assemble the fish buns. Take a portion of the dough and flatten it into a small circle. Put some filling in the center of the dough and fold it into a cone shape. Seal the edges. Heat oil in a pan and fry the fish buns until golden brown.

Paalappam

Palappam, ,without using yeast

Ingredients

Idli rice-1 1/2 cup

Coconut-1/2 cup

Cooked rice-1 cup

Baking soda-1/2 tsp

Sugar-1 1/2 tbsp

Water

Preparation

Soak one and a half cups of idli rice with one cup of cooked rice and half a cup of grated coconut for at least 6 hours (overnight). You can add more grated coconut for better taste (optional).Grind the soaked batter with enough water until it reaches a fine consistency. You can let the batter rest for 5 minutes, but it is not required.
Add baking soda (half teaspoon) and salt to taste to the batter and mix it well.Heat a griddle or pan and pour about one and a half ladlefuls of batter onto the pan.Cook the Palappam until the sides are cooked and the center is cooked through.You can enjoy the Palappam hot.

Avial

Avial also called as aviyal is a popular and traditional mix vegetable dish from the Kerala cuisine, though you can also find this dish prepared in parts of Tamil Nadu and Karnataka. It is an essential dish of Sadya (a festive vegetarian feast served on plantain leaf).
