Sadya special Koottukari

Ingredients

• Black chickpeas – ½ cup (soaked)

• Elephant yam – 1 cup

• Raw banana / plantain – 1

• Grated coconut – 1 ½ cup

• Turmeric powder – ½ teaspoon

• Chilli powder – 1 ½ teaspoon

• Cumin seeds – ¼ teaspoon

• Mustard seeds – 1 teaspoon

• Dry chilli – 3 no’s

• Water – 1 ½ cup

• Jaggery

• Curry leaves

• Salt

• Oil

Preparation

Cook chickpea with salt and water. Cook banana and yam with water, salt , turmeric and chilly powder. Grind coconut with cumin and required water. Take a pan, add coconut,cooked vegetables and chickpea, add jaggerry and salt, cook until it become thick. Heat a pan, add oil, once it heat well, pop mustards, then add coconut,dry red chilly and curry leaves, fry well then add to curry.

Sardine fish fry with special masala

Ingredients

Sardine – 1/2 kg

green chilli 7 with seeds and 7 without seeds

Ginger – 1 small ps

Garlic – 5 big cloves

shallots /small onion – 4 to 5

fennel seeds – 1 tsp

turmeric powder – 1/2 tsp

Lime juice – half of one ”

pepper – 1 tsp or more

curry leaves

salt

water 2 tbsp

Coconut oil 3 to 4 tbsp accordingly for shallow frying

Preparation

Take a mixie jar, add green chilly, ginger,shallots,garlic,fennel seeds,pepper corn,turmeric,salt, curry leaves,lemon juice and water, grind into fine paste. Marinate the fish with the masala, rest for 30 minutes, then shallow fry it.

Beetroot pachadi

Ingredients

beetroot-1

coconut-4-5 tbsp

mustards-1 tsp

cumin-1 tsp

salt

sugar-1 tbsp

ghee-2 spoon

coconut oil-2 tsp

Preparation

Grind coconut with, mustards,coconut,cumin, green chilly and 3 tsp of curd, then keep aside. Grind beetroot, then saute it with, ghee and coconut oil, next add coconut mix, mix well, add salt and sugar, cook it well.Heat ghee in a pan, crack mustards,red chilly and curry leaves, then add to curry.

soft Rava putt

Ingredients

Semolina-1 cup

water

coconut-1 cop

salt

Prepararion

Add rava in a bowl, add salt and water, mix well, make putt consisitency. In a putt maker, fill the flour with coconut, then steam it for 15 minutes.

Kuzhalappam

Ingredients

rice flour-4 cup

shallots-10

garlic-10

grated coconut-1 handful

cumin-1 tsp

black sesame-1 1/2 tsp

water-3 cup

Preparation

Grind coconut with shallots and garlic. In a bowl add rice flour, cumin, salt and sesame seeds, add coconut mix, knead it by using boiling water. Take a pvc pipe and a plastic sheet, take small quantity of dough and put on the platic sheet, roll it by using pvc pipes, then roll it from one side by using a aluminium pipe, then fry it in oil, finally remove the pipes.

Vaazhakoomb(banana flower) thoran

Ingredients:

Banana flower – 1(small)

coconut – 1/2 cup

crushed garlic – 4 (medium size)

Turmeric powder- 1/2 tsp

Cumin powder – 1/4 tsp

chilli powder – 1/4 tsp

oil

urud dal – 1/2 tsp

mustard – 1/2 tsp

redchilli – 2

curry leaves

salt

water

curd – 1 tbsp

Preparation

Chop banana flower, and soak in rice water and wash well, mix coconut with turmeric,cumin powder, chilly powder and garlic crushed. Heat a kadai, add oil, crack mustards, next add urad dal and dry red chilly, roast it well, then add curry leaves, coconut, chopped banana flower and salt, cook it without water.
