Rice flour snack

Ingredients

water-1 cup

salt

rice flour-1/2 cup

oil

chilly powder

curry leaves

Preparation

Boil water in a pan , add salt, then add rice flour, stir well, now turn off flame, and transfer the dough to a bowl, knead it well then separate into small balls. Flattern the balls using a roller, then cut it into small pooris by using a bottle cap, then fry it in hot oil, finally add some chilly powder, salt and curry leaves.

Ragi halwa

Ingredients

jaggerry-4

water

ragi-1 cup

ghee

cashews

Preparation

Melt jaggerry with water. Add ragi to a bowl, strain it one time, then add jaggerry juice , mix with a fork. Heat a pan, add ghee, then add cashews and roast it well and keep aside. Pour ragi mix to the pan, stir well, add cashews too, add ghee frequently, cook until it become thick and non sticky, then transfer it to a greased mould, allow it to cool, then cut it.

Traditional Chicken Biriyani

Ingredients

ghee-3 tbsp

oil-2 tbsp

onion-5

salt

ginger,garlic and chilly crushed

turmeric-1 tsp

tomato-3

garam masala-1 tbsp

coriander leaves-1/2 cup

mint leaves-1/4 cup

curd-2 tbsp

chicken-1 1/4 kg

oil-1 1/2 tbsp

spices

water-5 3/4 cup

rice-3 cup

salt

cashews and kismis

Preparation

Heat a biriyani pot, add ghee and oil together, after heating it well add onion, saute it well, next add ginger,garlic and chilly crushed, add salt too, then saute it until the onion become soft, next add tomato and turmeric, cook it well, next add garam masala and curd, after mixing well add chicken, mix with masalas, add herbs and cook it well. Finally add some herbs and garam masala.

For rice, heat oil in a pressure cooker, add herbs, roast it, then add water, boil it well, add salt , then add rice, cover the lid and cook for 1 whistle.

For dum biriyani, take half of chicken masala from it, then add rice above , add chicken masala above it, next cover it with rice, put fried onion, cashew and kismis, and herbs in between the layers, cover the pot keep low flame for 15 minutes.

Pomegranate paayasam

Ingredients

ghee-2 tbsp

pomegranate-1 cup

sugar-1/2 cup

milk-1/2 cup

corn flour-1/4 cup

milkmaid-1/4 cup

cumin,cardamom crushed

Preparation

Heat a kadai, add ghee, heat it well,next add pomegranate, mix well, once it cooked well add sugar, cook it for 5 minutes. Mix milk and corn flour, then add milk maid, mix all well then add to pomegranate, mix all well and cook it for 3 minutes more, finally add cumin and cardamom powder and turn off flame.

Ration rice Breakfast

hot water

instant yiest-1 tsp

salt

maida-2 tsp

Preparation

Wash rice then soak  in hot water, keep over night. Next morning grind it with the soaked water, then add salt,yiest, maida and mix it well, rest the batter for 1/2 hrs, then heat a tawa, pour 1 laddle of batter, just round it, cook both sides. Soft appam is ready.

Dry chilly Chammanthi

Ingredients

dry red chilly-20

tamarind-gooseberry size

Preparation

Heat coconut oil in a pan, add dry red chilly and curry leaves, roast it well, then keep aside, in the same pan add shallots, saute until it become golden color, finally, blend fried ingredients with salt and tamarind, tasty chammanthy is ready.

coconut milk thick-1 cup

coriander leaves-1/2 cup

Preparation

Heat a pressure cooker, add coconut oil, heat it well, then add onion, chilly, ginger and garlic, saute it well, next add potato, mutton, garam masala, lime juice and salt, after mixing well close the lid and cook for 1 whistle. Finally add thick coconut milk and coriander leaves, then just heat it.

Soak dal for 4 hrs, then grind it into coarse paste without water, then add chopped vegetables and masalas, mix well with your hand, and make small vadas then fry it in hot oil.

Ingredients

For making Puffs sheets

All purpose flour / maida – 1 .5 cups

Salt – as needed

Butter / ghee – 2 tablespoons

Egg – 1

Water – as needed

To prepare the masala:

Oil – 1 tablespoon

Onion – 3 (large)

Garlic – 3 pieces (large)

Ginger – small piece

Curry leaves – 5 – 10 leaves

Chilli powder – 1/2 tbsp

Turmeric powder -1 / 4 tsp

Pepper powder – 1/2 tsp

Boiled egg – 3 nos

Preparation

For making sheets, take maida in a bowl, add butter , salt and egg, mix well, knead it with required water, and make a soft dough, rest this for 10 min.

For masala, heat a pan, add oil, heat it well, then add onion, next add ginger, garlic, chilly and curry leaves, then saute it well, next add masalas, cook it well.

Take the dough, knead it again and divide into small balls, roll it into small poories, place one after another, finally roll it into thin sheets, then split the sheets and cut it into 4 parts, add masala with egg half, fold it and bake it.
