Instant vattayappam

Ingredients

Rice flour 2 cups

coconut 3/4 cup

cooked rice 1/2 cup

salt

sugar 1/2cup + 1/4 cup

cardamom powder

cashew raisins

yeast 1 1/4 tsp to 1 1/2 tsp depending on type used

if normal yeast prove before using ( using lukewarm sugar water)

Preparation

Add rice flour to a bowl, add rice cooked, coconut,sugar, yiest, salt and lukewarm water, mix all well, then grind it by batches and make a fine batter, rest the batter for 1/2 hrs.After that add cardamom powder, mix well, then pour the batter to a steel plate, steam it well, add cashews and kismis.

Broasted chicken

Ingredients

for soaking

chicken-200 gm

milk-1/2 cup

salt

garlic powder-1/2 tsp

kashmiri chilly powder-1/2 tsp

For marinate

ginger paste-1/2 tsp

vinegar-1/2 tsp

egg-1

for coating

Maida-1/2 cup

corn flour-4 tbsp

garlic powder-1/2 tsp

salt-1/4 tsp

Oil for frying

Preparation

For soaking, mix all ingredients in a bowl, add chicken and keep in fridge for 2 hrs. After 2 hrs, drain chicken from this mix, then marinate it with, ginger paste,egg and vinegar and keep aside.Mix dry ingredients for coating in a bowl, take chicken pieces, coat it with the mix, after first coating dip all in the soaked mix, and apply second coat of maida mix, finally fry chicken in hot oil, keep the flame low to medium while frying.

Shrimp curry

Ingredients

shrimp-300 gm

coconut oil

mustards-1 tsp

fenugreek-1 tsp

garlic-7

ginger

curry leaves-2-3 string

kashmiri chilly powder-2 1/4 tbsp

turmeric-1/2 tsp

water

salt

pot tamarind-2 pieces

fenugreek powder-1/4 tsp

Preparation

Heat a claypot , add coconut oil, then add mustard and fenugreek , allow it to splutter, then add ginger garlic and curry leaves, saute it until the raw smell go away, now add masalas, after a mix add water, then add salt and tamarind, boil it well, then add shrimp, cook it for 15-20 minutes, finally add fenugreek powder.

Semolina idiyappam

Ingredients

semolina – 1 1/4 cup

water-2 1/2 cup

salt

coconut oil-1 tbsp

Preparation

Add semolina to a mixie jar, grind it into fine powder, then transfer it to a bowl, boil water with salt and coconut oil, then add semolina into it, mix it well, once it become thick turn off flame, allow it to cool, then knead it well, and fill the idiyappam press, and make idiyappam as usual.

Wheat flour appam

Ingredients

• Wheat flour – 1 cup

• Grated coconut – ½ cup

• Rice flakes – ½ cup

• Yeast – ½ teaspoon

• Salt

• Sugar

• Luke warm water

Preparation

Wash poha, then keep aside for 10 minutes, then add to a mixie jar, add another ingredients, grind it into fine paste, transfer the batter to a bowl, rest it for 20 minutes, after tha heat a tawa, pour the batter, once the holes come out, cover it for 10-15 seconds, then take it.

Pearl spot fish fried curry

Ingredients

for marinate

Fish – 1/2 kg

Kashmiri chilli Powder – 1 tsp

Pepper Powder – 1 tsp

Turmeric Powder – 1 tsp

Salt as needed

Water

For curry

Curry leaves

Onion sliced – 1 medium

Green chilli – 5 -6 nos

Ginger chopped – 1 tbsp

Garlic crushed – 6 cloves

Coriander Powder – 4 tbsp

Kashmiri chilli powder – 1 tsp

Pepper Powder – 1 tsp

Turmeric Powder – 1/2 tsp

Thin coconut milk – 1 1/2 cup

Thick Coconut Milk – 3 /4 cup

Vinegar – 3- 4 tbsp

Salt as needed

Preparation

Marinate fish with above mentioned masala, after 15 minutes fry it in coconut oil. Heat a claypot, add coconut oil, then add curry leaves, ginger and garlic, saute it well, next add onion, add salt and saute it until it become soft, next add masala mix, saute until the raw smell gone, now add second coconut milk, combine all well, add salt and vinegar, boil it well, then add fish , cook it for 2 minutes, finally add thick coconut milk, and curry leaves.

Black forest cake in pressure cooker

Ingredients

egg 2 nos

milk 1/2 cup

oil 1/2 cup

sugar 1 cup

vanilla essence 1/2 tsp

all purpose flour 1 cup

cocoa powder 1/3 cup

baking powder 1/2 tsp

baking soda 1/2 tsp

salt 1/4 tsp

whipping cream 1 1/2 cup

dark chocolate 100g

cherries

sugar syrup

Preparation

Break egg to a bowl, beat it well, add sugar gradually while beating, add sunflower oil, after mixing well add milk and vanilla essance,mix all well, next add dry ingredients into a strainer, sieve it to the egg mix, fold it with a spatula. Take a pressure cooker, spread oil, then pour the batter, after tapping it well, cover the lid, remove weight, then bake it for 45 minutes. Once it cooled, demould it then cut it into 3 pieces.

For icing, Add first layer to the cake top, pour cherry and sugar syrup mix, apply whipping cream, repeat it for another layers, finally apply wipping cream above the cake cover it evenly, then decorate cake as you like, keep in fridge for 1 hour before cutting.

Preparation

Wash the fish very well, then add all the ingredients except papad red chilly and garlic, then marinate it with the masalas. Fry papad and dry red chilly in a pan separately, then fry the fish, finally mix altogether.

urad dal-2 tbsp

cooked rice-1/2 cup

Preparation

Wash rice and urad dal for 2-3 times, then soak it for 4 hrs, now grind it with cooked rice, salt and yiest and make a loose batter, keep overnighr for fermentation, next morning steam it in small bowls.
