Soft Idli and Special Tiffin Sambar

ingrediants for idli batter

1.raw rice – 4 cup

2.urad dal – 1 cup

3.white poha(aval) -1cup

Tiffin Sambar

for frying

coriander – 1 and half tbspn

red chilly – 8

fenugreek seeds -3/4 tspn

curry leaves – handfull

cooking

vegetables of your choice

dal ,thoor dal – 6tbspn

tamarind – gooseberry size

greenchilly – 3

turmeric powder- 1 tspn

salt

jaggery – half cube

hing /asafoetida – 1 and half tspn

for grinding

cocunut – 3 tbspn

pottukadala – 1 tbspn

fried items

water

for seasoning

oil – 2tspn

mustard – 2 and half tspn

curry leaves

red chilly -2

Preparation

For idli, soak raw rice, urad dal separately for 4 hrs after washing.Then grind it well with soaked poha and make a thick batter, add salt, then mix it for 5 minutes, then keep aside for fermentation(8-9 hrs). Boil water in idli maker, take the plate, brush the holes, then pour the batter to each holes, then steam it well.

For sambar, heat oil in a pan, add coriander, fenugreek and dry red chilly, heat it well, then add curry leaves, mix well and turn off flame.Take a mixi jar, add coconut, roasted gram dal and roasted red chilly and coriander, add some water and grind it into fine paste. Heat a pan, add coconut oil,then add vegetables, saute it for 2-3 minutes, then pour tamarind juice, salt, and turmeric, boil it well, then add cooked dal, and boil it well, then add grinded coconut, hing and jaggerry, boil it for 1-2 minutes. Finally season it with mustard, dry red chilly and curry leaves.

Vellappaniyaaram and chutney

Ingredients

Raw rice – 2 cups

Fermented coconut water – 2 cups

Grated coconut – 1/4 cup

White poha / Aval – 1 cup

Salt to taste

Preparation

Soak rice for 4 hours, then grind it with coconut,poha,fermented coconut water and salt, make a smooth paste, then keep overnight for fermentation. Heat unniyappam pot, brush oil, then pour the batter to each holes, cook it in low flame, then have it with coconut chutney.

Small Banana Recipe

Ingredients

small banana-10

ghee-1-2 tbsp

coconut-1 cup

sugar

cardamom-3-4

poha-1 cup

Preparation

Heat ghee in a pan, add chopped banana , saute it well, next add coconut, sugar, and cardamom, mix well until the sugar melts, then turn off flame and transfer it to a bowl. Dry roast poha in a pan, then grind it into fine powder and add to the banana mix, then mix it with your hand, and make small unnakkaya shape, after that steam cook it in a steamer.

Special Chicken Curry

Ingredients

coconut oil-3 tbsp

fennel

cinnamon

cardamom-4

onion-5

salt

curry leaves

ginger garlic crushed -1/4 cup

tomato-5

turmeric-1/2 tbsp

chilly powder-1/2 tbsp

coriander powder-1 tbsp

kashmiri chilly powder-1 1/2 tbsp

water-2 cup

chicken- 1 1/2 cup

coriander leaves

Preparation

Heat oil in a pan, add whole spices, just roast it, then add nion and salt, saute it until it become soft, next add ginger garlic, mix until the raw smell gone, next add tomato and curry leaves, mix well, once it become soft add masala powders, combine all well until it become aromatic, now add water and chicken, mix with masala, boil it well, once it cooked enough add some coriander  leaves and turn off flame.

Chinese Vegetable Noodles

Ingredients

• Noodles – 100 grams

• Beans – ½ cup

• Carrot – ½ cup

• Cabbage – ½ cup

• Onion – 1

• Turmeric powder – ¼ teaspoon

• Chilli powder – ½ teaspoon

• Kashmiri chilli powder – 1 teaspoon

• Tomato sauce – 3 tablespoons

• Hot water – ¼ cup

• Sugar – ½ teaspoon (optional)

• Oil

• Salt

• Water

Preparation

Boil water with salt and oil, then add noodles, once it cooked well strain out water and keep aside. Heat oil in a pan,add beans, carrot, cabbage and onion, saute it for 1 minute, then add salt,turmeric, chilly powder and kashmiri chilly, mix well and saute it for 1 minute, add tomato sauce, after mixing well add hot water, boil it well, now add cooked noodles, mix with masala, finally add sugar, and combine all well.

Ghee Murukk

Ingredients

rice flour-250 gm

gram flour-50 gm

cumin-1 tsp

ghee-2 tsp

salt

Preparation

In a mixing bowl, add rice flour, gram flour, butter, cumin and salt, mix it well, add water, then knead it well and make a soft dough, take idiyappam maker with star mould, fill the dough, then press it to hot oil, fry murukk until it become crispy.

Masala Egg Bajji

Ingredients

boiled egg-5

gram flour-1 cup

hing-1 tsp

chilly powder-1 tsp

salt

pepper powder

water

onion-1

ginger garlic paste-1/4 tsp

oil

chilly powder-1 tsp

turmeric-1/4 tsp

pepper powder

coriander leaves

Preparation

Take boiled eggs, cut it into 2, then take yolk in a bowl.For batter, add gram flour, salt,chilly powder, pepper powder, hing and water to a bowl, mix well and make a thick batter. For masala, heat oil in a pan, add onion, saute it well, next add ginger garlic paste and salt, mix it well for 2 minutes, next add masala powders, mix it until the raw smell gone, now add egg yolk, combine it with masala, finally add coriander leaves, after mixing well turn off flame. Take egg white boiled, fill the masala in the hole, prepare all eggs like this, after that dip it in the batter, then fry in hot oil.

Egg Banana Snack

Ingredients

ghee-3 tbsp

banana-5

sugar

cashews and kismis

coconut-1 cup

egg-3

milk-1/2 cup

milk powder-3 tbsp

turmeric-1/4 tsp

cardamom powder

salt

Preparation

Heat ghee in a pan, add banana pieces, after coking both sides transfer it to a plate, then roast cashew and kismis in the same ghee, add coconut and sugar, roast it well and keep aside. In a mixie jar, add egg, sugar, turmeric,milk,milk powder, cardamom, and salt, blend it well. Heat ghee in a pan, pour half of the batter, then add coconut filling evenly, put the banana pieces above it, finally pour leftover batter, cover the pan, cook it in low flame, if one side is cooked enough, flip to another side and cook well.

Chicken Momos

Ingredients

Chicken – 250gm

All purpose flour 1 Cup

Onion – 1 Cup

Coriander leaves -Some Chopped

Ginger paste -1 tsp

Salt – -As needed

Soya sauce -1 tsp

Peper powder – 1 tsp

Oil – 2-3 tsp

Water -As needed

Preparation

For filling, heat oil in a pan, add onion, ginger paste , and salt, saute it well, next add chicken pieces, after mixing well add pepper powder and soy sauce,mix well, then cook it for 20 minutes, finally add some coriander leaves and turn off flame. Take a bowl, add maida, salt, oil and water, knead it well and make a soft dough, divide the dough into equal small balls, flatten the balls, then add filling, fold it like momos, prepare whole momos, then steam cook it well.

Jack fruit seed and cucumber curry

Ingredients

jackfruit seed-20

raw mango-1

cucumber-1/2

green chilly-2

turmeric-1/4 tsp

chilly powder-1/2 tsp

salt

water

shallots-3-4

coconut oil

mustard

dry red chilly

Preparation

Take a pressure cooker, add mango, jack fruit seeds, cucumber, salt,turmeric, chilly powder and required water , then cook it for 2 whistle. Open the lid after pressure gone. Grind coconut with shallots cumin and some water and add it to the curry, mix well, add more water, mash the curry with a laddle, boil it for sometime. For seasoning,heat coconut oil , add mustard,let it pop, add dry red chilly, after roasting it pour it to the curry.
