Fenugreek powder 1/2 tsp

cumin seed powder 1/2 tsp

for seasoning

coconut oil 1 tbs

mustard 1 tsp

Fenugreek 1/4 tsp

cumin seeds 1/4 tsp

curry leaves and coriander leaves

Preparation

Add dal to a pressure cooker after washing well, then add turmeric, salt and water and cook it for 2-3 whistle.Heat a claypot, add coconut oil, then add onion,shallots and curry leaves, mix it with oil, then add whole veggies except okra, saute it well, next add water, and tamarind juice, then cook it well, next add cooked dal,next add masala powders,salt, and hing, after boil it well add okra and coriander leaves, boil it again.Finally , for seasoning, heat coconut oil in a pan, add mustard, and fenugreek, let it pop well add cumin, curry leaves,coriander leaves,fenugreek and hing powder, after mixing well pour it to the sambar.

Kannur Muttappam

Ingredients

raw rice-500 gm

cooked rice-175 gm

salt

oil for frying

Preparation

Soak rice for 4 hrs, then wash well, add cooked rice and salt to the rice, mix all together, then grind it with less water and make a smooth paste, transfer the paste to a bowl, heat oil in a pan, pour 1 laddle of batter, fry it well.

Rice flour vada

Ingredients

rice flour-1 cup

curd-3/4 cup

onion-1

crushed pepper

ginger

green chilly

garlic

salt

water-1 1/2 cup

curry leaves and coriander leaves

oil for frying

Preparation

Take a pan, add rice flour,curd,salt, ginger,garlil and green chilly, add water, mix it well, then turn on flame, mix it well until it become thick, then turn off flame. Once the heat is gone add pepper,coriander and curry leaves and onion, mix it again, then apply oil on your hand , make vadas out of this dough, finally fry it in hot oil.

Rava steam cake

Ingredients

coconut-1/2

semolina-1 cup

sugar-1/2 cup

sesame seeds

ghee

water

Preparation

Take rava in a bowl, add coconut, mix it well. Heat a pan, add the rava coconut mix, dry roast it well, then transfer it to a bowl, add sugar to a pan, add a little water, and cardamom seeds, melt the sugar, then pour it to semolina mix, add ghee too, mix it with your hand, then transfer the mix to counter top, roll it tightly with a chapathi roller, in medium thick, use a cap to cut it in round shape.

Potato dosa

Preparation

Soak rice for 4 hrs, then grind it with potato, green chillies,garlic,ginger and shallots, then make smooth paste, transfer this to a bowl, add finely chopped onion, chilly flakes and crushed sweet corn, mix all well, then make small dosas in tawa.

Leftover rice snack

Ingredients

cooked rice-2 cup

green chilly-2

curry leaves

coriander leaves

cumin-1 tsp

turmeric-1/2 tsp

pepper powder

rice flour-1/4 cup

ginger garlic crushed-1 tbsp

chilly powder-1 tsp

bread crumbs

maida+water mix

Preparation

Add rice to a mixie jar, grind it into fine paste, then transfer it to a mixing bowl, add chopped chilly,coriander,ginger garlic,and curry leaves, next add salt,turmeric,hing,pepper powder,chilly powder,rice flour and oil, knead it well and make a soft dough. Grease your hand with oil, then take small quantities from this dough and make finger shape by rolling your hand, then dip it all in maida mix, and coat it with bread crumbs, then fry it in hot oil until it become golden brown.

Paal Paayasam

Ingredients

milk-2 cup

Preparation

Wash rice , then add to a cooker, add water,then close cooker, cook it for 3-5 whistle, then transfer it to another vessel, boil it again, once it become thick, add salt and milk, cook it again, stir it until it become thick, next add sugar, once the sugar melts completely turn off flame.
