Neer dosa and chammanthi

Ingredients

for dosa

raw rice-2 cup

coconut-1/2 cup

salt

sugar-1 tsp

water-3 cup

for chutney

coconut-1/2 cup

urad dal-1 tsp

green chilly

tamarind-1 piece

curry leaves

salt

oil

mustard-1/2 tsp

garlic

curry leaves

Preparation

Soak rice for 4 hrs, then grind it with coconut, salt , sugar and water, make fine paste, transfer the batter to a bowl, add more water and make a loose batter. Heat a pan, pour the batter, round the pan, then apply oil above it, cover the pan, then cook it for 2 minutes, then transfer it to a plate.

For chammanthi, grind coconut with chilly, urad dal, salt, water and tamarind, then season it with mustard, garlic and curry leaves.

Wheat Battura

Ingredients

semolina-1/2 cup

water-3/4 cup

wheat flour-2 cup

salt

sugar-2 tsp

baking soda-1/4 tsp

curd

oil

Preparation

Take a bowl, add semolina, pour water into it, soak this for 5 minutes. Take a large bowl, add wheat flour, salt,sugar and baking powder, mix well, then add soaked semolina and curd, knead it well and make a soft dough, apply oil above it, then keep this aside for 1 hr. After that take the dough, divide it into equal small balls, flatten each ball into thin chapathy, after that, deep fry each one.

Pappadavada

Ingredients

papad-100

raw rice- 1/2 kg

sesame seeds

salt

dry chilly-30

turmeric

hing

gram flour-200 gm

Preparation

Grind soaked rice with dry chilly , turmeric and water, then pour it to a bowl, add gram flour, salt, sesame and hing powder, mix well and make slightly loose batter. Take tiny holed papad, dip it in the dough, then fry it in hot oil, once it fried enough, take out from oil.

Bread Pudding

Ingredients

bread -12

corn flour-1 1/2 tbsp

water-1/4 cup

milk-1/2 ltr

sugar-1/4 cup

chopped almonds-1/4 cup

pista-1/4 cup

Preparation

Heat a pan, add milk, let it boil, then add sugar, mix it until it become melt, then continue boiling, next add crushed badam and pista, combine well, mix corn flour and water add it to the milk, stir it well, once it become thick, turn off flame. Take bread, remove sides. In a a container, add bread in bottom, pour the milk mix above, then add second layer, pour the mix again, continue this for whole bread is finished, finally pour the mix above the pudding, add crushed nuts, rose petals for garnishing, then chill it for 1 hour, now it is ready to serve.

Preparation

Preparation

Take a bowl, add maida, dosa batter, sugar,turmeric, salt, baking soda, cardamom powder, mix well, then pour water, mix it again , then make thick batter. Slice banana. Heat oil for frying, take banana slices, dip in the batter, then add to hot oil, fry it well.

Potato masala for dosa

Ingredients

carrot-1

boiled and mashed potato-4

onion – 1

garlic – 4

ginger – 1/2 inch

green chilli – 2

curry leaves

coconut oil – 2 tbsp

ghee – 1 tsp

mustard – 1 tsp

turmeric powder – 1/2 tsp

salt as per taste

Preparation

Heat oil in a pan, add mustard, let it pop, then add green chilly and onion, saute it well, then add cashews, mix it well, add carrot, after sauting it well add salt and turmeric, mix it until the raw smell gone, now add mashed potato, combine all well, then turn off flame. Use this masala for making dosa.

Pudding

Ingredients

coffee powder-1 tbsp+hot water

water-50 ml

corn flour-4 tbsp

milk-500 ml

sugar-100 gm

sugar-1/4 cup

biscuit

instant coffee 1 tsp+sugar-3 tbsp+bot water -3 tbsp

Preparation

Mix coffee and hot water, then keep aside. Boil milk with sugar, add corn flour and water mix into it, stir well, next add coffee mix, combine well, once it become thick turn off flame. Take containers, add biscuit, pour the mix then refrigerate it for 2 hrs. For topping, beat, coffee,sugar,water mix and make foamy consistency, then add above the pudding, again freeze it for 1/2 hrs, then serve it.

Kothu Chapathi

Preparation

Cut chapathi into thin long pieces. Break eggs to a bowl add salt, beat well, then scramble it in a pan, keep this aside. Heat oil in a pan, add ginger,garlic and shallots crushed, saute it well, then add curry leaves, and chilly, mix it well, next add masala powders, combine well, now add tomato, after mixing it well add onion, saute until it become soft, now add scrambled egg, mix it with masala, finally add coriander leaves and chapathi pieces, mix well, then turn off flame.

Soft Idli recipe

Ingredients

ration rice-3/4 cup

urad dal-1/4 glass

fenugreek-1/4 tsp

salt

Preparation

Wash rice , then soak it in salt and water mix. Wash urad dal and fenugreek 2-3 times, then pour clean water, then keep this in fridge. After 4 hrs grind rice and urad dal separately, use urad dal soaked water for grinding, then mix both batter with your hand, rest the batter for fermentation. Next morning add salt to raised batter, mix well, then make soft idli.
