Sabarimala Aravana Payasam

Ingredients

matta rice-1/2 cup

jaggerry-3 cup

water-1 cup

rock sugar

ghee-3 tbsp

coconut pieces

water-5 cup

raisins

ghee-6 tbsp

dry ginger powder-1 tsp

cardamom powder-1 tsp

Preparation

Wash rice well and strain water completely. Melt jaggerry with water and keep aside. Heat ghee in a pan, add coconut pieces, roast it well and set aside, add rice to the same pan, roast it for a minute, then pour hot water, cook rice in this water,add ghee gradually while cooking, then add raisins, once rice cooked enough add melted jaggerry, boil it until it ecome thick, finally add masala powders and coconut piece, mix all then turn off flame, after cooling it well enjoy the recipe.

Kinnathappam

Ingredients

rice flour-2 cup

cardamom-15

sugar

salt-1 pinch

coconut milk-2 1/2 cup

cashew and kismis

Preparation

Take rice flour in a bowl, add cardamom, sugar and salt, then pour coconut milk gradually, mix well and make a loose batter. Boil water in a steamer, put a plate greased with ghee, pour the batter, mix the batter until it starts thickening, then cover the steamer and steam it well, add cashew and kismis if required.

Preparation

Take a bowl, add wheat flour, finely chopped vegetables, salt, aking soda and curd, mix it well and make a loose dough, rest the mix for 15 minutes. Heat oil for deep frying, add the dough with a spoon and fry it well.

Egg Roast

Preparation

Marinate egg with salt, turmeric, and chilly powder, then shallow fry it. Heat oil in a pan, add ginger and garlic, after sauting it well add finely chopped onion, saute it until it become brown, then add salt and whole spices, now add tomato puree, mix it until the raw smell gone, next add masala powders, mix all together , now add fried egg, combine all well, then turn off flame after 2 minutes of cooking.

Kappa Putt

Clean tapioca, then wash it well. Take a veg grater, grate tapioca to a plate, then wash it again and squeeze out water and put it in a another bowl, add salt and putt flour, mix well. Take putt maker, add coconut, then add the filling, finally , steam it well.

Kozhikkodan Halwa

Ingredients

maida- 1/2 kg

water

sugar-1 glass

water

orange essence

coconut oil-1/2 ltr

salt-1 pinch

nuts

white sesame seeds-1 tsp

ghee

Preparation

Add maida flour to a bowl, pour water, knead it well and make soft dough, soak this dough in water for a day, then mix it with your hand and take maida milk, remove the maida waste, rest the milk for 1 day, remove the water above the milk, add more water into it, wait for 1 more day. Next day, take the bowl, remove the clean water above the maida milk, then mix it with a spoon. Heat a bottom thick pan, add sugar and water, once it melts completely add the maida mix, stir well, add food color, and essence, continue stirring, once it starts thicken pour coconut oil, mix it well, next add nuts, ghee and a pinch of salt, dont stop stirring, once it become thick dough consistency , transfer the halwa to a glass container, then set it well, wait for the heat is gone, then cut it.

Preparation

Add beef to a pressure cooker, then add masala powders, ginger garlic paste and curry leaves, then add salt, mix it with your hand, then cook it well. Once the pressure is gone open the cooker, boil it again for dry the beef. Heat oil in a pan, add ginger garlic paste, green chilly and curry leaves, saute it well, then add onion, once it become soft add turmeric, coriander powder, and kashmiri chilly powder, mix all well until the raw smell gone, next add pepper powder, and cooked beef, combine all well, then cook it until it become dry, finally add curry leaves.

Ingredients

Preparation

Soak dal and dry chilly together for 3 hrs, then crush it, keep 2-3 tsp of dal uncrushed. Then add chopped vegetables, salt and uncrushed dal into it, mix all well, then take small portion from it, make vada shape and fry it in hot oil.

Preparation

Heat oil in a pressure cooker, add mustard, let it pop well, next add dry chilly and curry leaves, after 1 minute roasting add onion, ginger, garlic and green chilly, saute it well, next add tomato, cook it until it become soft, now add masala powders, mix it well, add salt and water, cover the lid and cook it for 2-3 whistle. Open the cooker after the pressure is gone, add boiled egg, combine with masala and boil it well, finally add some coriander, then turn off flame.
