King fish curry

If you love fish curry, this one’s going to be a favourite to you in no time. Pair it with steamed rice & comfort yourself like never before .

Here a delicious recipe of Malabar style King fish curry.

INGREDIENTS

Fish – ½ kg (After Cleaning)

Hot Water – 2 Cups (500 ml)

Salt ( – 2½ Teaspoon

Coconut Oil – 3 to 4 Tablespoons

Mustard Seeds – ½ Teaspoon

Fenugreek Seeds – ¼ Teaspoon

Ginger – 2 Inch Piece (10 gm)

Garlic – 10 Cloves (15 gm)

Shallots – 15 Nos (75 gm)

Turmeric Powder – ½ Teaspoon

Chilli Powder – 2 Tablespoons

Kashmiri Chilli Powder – 1 Tablespoon

Curry Leaves – 3 Sprigs

PREPARATION

Heat a clay pot, add oil, then add mustard and fenugreek, then let it pop well, next add finely chopped shallots, saute until it turn soft, next add ginger garlic chopped, saute it again, next add green chilly and curry leaves, then add tomato, cook it until it become mushy, now add masala powders, after mixing it well pour tamarind juice and salt, then add required water, let it boil well, add fish this time, boil again 2-3 minutes, now turn off flame, finally add curry leaves and fenugreek powder a pinch.

preparation

Take small banana in a bowl, after peel off it mash it with fork, then add the all ingredients one bye one, then mix everything well, and make a very thick batter. Take banana leaves, fold the leaves like cone, fill the mix, the carefully cover it, once it done steam well in a steamer.

Fried Chicken Biriyani

A very tasty chicken Biriyani, which is prepared after frying the chicken.

Ingredients

chicken-1 kg

jeera rice -1/2 kg

onion-4

tomato-4

coriander and mint

whole spices

ginger garlic chilly paste

salt

turmeric

pepper powder

chilly powder

oil

fennel seeds

turmeric

chicken masala powder

fennel powder

Preparation

Marinate chicken with salt, turmeric, chilly powder and pepper powder, then keep aside. After sometimes fry it in hot oil, then set aside. Add sliced onion to the chicken fried oil, add salt and saute it for 2 minutes, then add ginger garlic and chilly paste, saute again until it become soft, now add tomato, once it become soft add fried chicken into it, after mixing it well add chicken masala, fennel powder and turmeric, combine well, add chopped herbs, then turn off flame. Cook rice with whole spices. Add sieved rice to a large pot, then add chicken masala above, cover it with rice, mix all together, then serve it.

Raw rice instant Dosa

An easy-to-prepare breakfast recipe with raw rice can be made without fermentation.

Ingredients

Raw rice – 1 cup
cooked rice – 1/2 cup
coconut – 1/4 cup
salt – 1/2 tsp
water – UpTo 2 cups
coconut oil

Wash and soak raw rice for at least 2 hours..
Drain the water and add this soaked rice along with, cooked rice, coconut and 1 cup of water to a mixer jar…
Grind it to a fine paste….
pour this batter into a bowl…
Add some water to the mixer jar and take all the batter out of it…
pour this to the bowl and mix well….
add salt…
heat a pan and pour a laddle full of batter to the pan and spread the batter by swirling tha pan…
cover with a lid. cook till the top of the Dosa becomes dry… spread some coconut oil and flip the Dosa..
cook for 30 seconds on the other side….
super Dosa is ready

Healthy Breakfast

Preparing breakfast in the morning is a headache for housewives, working women say that they have to prepare both fast and lunch in a short time in the morning, so they choose breakfasts that can be prepared in a very short time.

Its a very good recipe for breakfast..

Boil one quarter cup of water in a pot and grind one quarter cup of coconut, two or three small onions and some cumin seeds. When the water boils, add crushed coconut, salt and a cup of rice flour to it and mix well, then turn off the heat and cover the pot. You can add the soaked cow beans, white cow beans, green gram, chickpeas to a cooker, add some water, turmeric powder, two pieces of garlic, two green chillies and enough salt and cook well. Take the covered rice flour and knead it well and make it into small balls and then press each one by hand into baby pathiris and steam it well in a steamer. Grind a few coconuts, two small onions, green chillies and curry leaves in a mixer, and in a large pan, add mustard seeds and pulses and crackle them. Then you can add an onion and when it is fried well, add tomato to it and add curry leaves and fry well. You can add enough salt. Next you can add chili powder, turmeric powder, coriander powder, garam masala powder little by little. After mixing well, add the cooked lentils to it. After boiling it well and draining all the water, add the cooked small pathiris to it and mix it well then switch off the flame.

Paal Pathiri

Let’s see how to prepare delicious Pal Pathiri

First you have to prepare a pathiri for this, For that, break two eggs in a bowl and add a pinch of salt and three teaspoons of sugar to it and mix it well. Add one and a half cups of flour and some water to it and mix it to make a loose batter. You can prepare nice pathiris with this batter. Heat ghee in a pan and add cashew nuts, raisins and kismis and heat well and set aside. Break four eggs into a bowl and add 1/2 cup of powdered sugar to it and mix well Add half a liter of milk and mix again. You can add half a cup of grated carrot to it and mix it. Now take one cake and apply a little oil to it. First pour the egg mix to this and add the prepared pattiri on top of this and again pour the egg mix and add a little of the roasted cashews and grapes. Again, put the patiri on top of this and pour the egg mix and do the same in this way until all the patiri are done. At the top, pour the whole egg and add the remaining cashew grapes. Now heat a big pot in the oven. Place the cake tin on top of this. Now cover the pan and bake it well on low flame

First cut the cauliflower into small pieces and mix it with water, salt and turmeric powder in a large bowl and then add the cauliflower pieces. Wash it well and keep it aside. Now put a big pot in the oven, add water, turmeric powder, salt and boil it well. Add the cauliflower pieces and cook it well. After that it can be removed from the water, now in a bowl add chili powder, Kashmiri chili powder, turmeric powder, ginger, garlic paste, garam masala, fennel powder, salt and mix them well. After that you can add cornflour flour and chickpea powder. Now pour water and make a thick paste. Add cauliflower pieces to it. Add curry leaves and black pepper powder and mix well. Now put it in a big pan to prove the oil, add cauliflower pieces to it and fry it well. Don’t forget to add curry leaves and green chillies.

Ingredients

Ragi – 1 cup
Mutira – 1/4 cup
Fenugreek – 1 tbsp
Rice – 1/2 cup
Salt – to taste

How to prepare

After washing the ragi, mudira and fenugreek seeds well, add the rice and let it simmer for 5 hours.

•After 5 hours, take a jar of the mix and add the soaked ragi, mudira, fenugreek seeds and salt to it and grind it well and leave it to rise for 8 hours.

• After 8 hours, mix the flour that has risen well and then bake the idli. Serve hot with chutney.

1: Duck 500gms ( with skin)

5: coconut oil 4 tsp
6: cloves 3 nos
7: cardamom 3 nos
8: star anise small piece
9: cinnamon stick small piece
10: green chilli 3 nos chopped
11: coriander powder 2 tsp
12: turmeric powder 1 tsp
13: pepper powder 1 tsp
14: garam masala 1/2 tsp
15: salt
16: thick coconut milk 3/4 cup
17: thin coconut milk 2 cup
18: water 1 cup
19: curry leaves
20: fennel seeds 1 tsp
21: bay leaves 1 nos

METHOD

1: Heat oil in a kadai,add spices and fennel seeds after that add garlic and ginger ,saute well.
2: Now add green chilli ,onions and salt ,saute well until oninon turns to golden brown in colour.
3: Add coriander powder,turmeric powder and pepper powder.saute well until raw smell goes
4: Add one cup of water ,mix well then add duck and some thin cook milk.cover and cook.
5: once the duck completly cooked ,add garam masala powder and curry leaves and boil it.
6: add thick milk ,heat for 1 minutes .switch off the flame.

Now our special KUTTANADAN DUCK CURRY is ready to serve……

Cabbage Manchurian

Cabbage is a vegetable that no one likes much, usually we make toran but we can make a good evening snack with cabbage. Cabbage Manchurian is what we prepare. See the recipe.

A quarter kilo of cabbage can be chopped and 100 grams of flour and 100 grams of cornflower can be added to it. Ginger, garlic, crushed, Kashmiri chili powder, two teaspoons, one teaspoon of garam masala, enough salt and some water should be added and kneaded well with hand. Then keep it aside to roast for 10 minutes and then heat oil in a pan. When it is hot, take the cabbage mix little by little with your hands and add it to the oil. It should be fried well. You can also prepare a good chamanthi with tomatoes and green chillies to eat with it.
