Carrot mango Pickle

Ingredients

carrot-1/2 kg

mango-1/2 kg

salt

turmeric

fenugreek powder

hing powder

chilly powder

ginger garlic chilly chopped

turmeric

sesame oil

mustard

curry leaves

dry chilly

vinegar

Preparation

First, mix mango with salt, turmeric powder, fenugreek powder, and asafoetida, and let it rest for an hour .Then, sauté the carrots with salt and turmeric powder. After that, sauté garlic, ginger, and green chilies. Next, temper mustard seeds, dried chilies, and curry leaves . Following that, add chili powder, fenugreek powder, salt, and asafoetida . Mix in the mango, carrots, and the sautéed ingredients . Add vinegar.Finally, heat some sesame oil and add it to the pickle after it cools.
