Pazham Pradhaman, a dessert made from plantains

Ingredients

jaggerry-2

water-1/4 cup

ghee+oil

coconut flakes

cashews and kismis

cardamom

sugar

dry ginger

banana-2

coconut milk second

thick coconut milk

Preparation

First, half a kilogram of ripe plantains are steamed .Jaggery syrup is prepared using 150g of jaggery and ¼ cup of water .
Coconut pieces are roasted in ghee and coconut oil .Cashews and raisins are fried .A mixture of sugar, dried ginger, and cardamom is ground .The steamed plantains are blended .The plantain mixture is roasted in ghee .Jaggery syrup is added and cooked until thickened .Thin coconut milk is added and cooked until reduced .Thick coconut milk is added .The ground spice mixture is added .Finally, the roasted coconut pieces and raisins are added before serving .
