Preparation
First, a full chicken is cleaned, scored, and set aside to drain. A marinade is made with ingredients like Kashmiri chili powder, turmeric, garam masala, cumin powders, pepper, ginger-garlic paste, yogurt, lemon juice, and olive oil .The chicken is coated in the marinade and refrigerated for four hours.The chicken legs are tied together, and the chicken is lightly cooked in olive oil on both sides.A paste of soaked cashews, cardamom, and cloves is prepared.Chopped onions and green chilies are sautéed in the same oil, followed by ginger-garlic paste.Tomato paste is added and cooked until the raw smell disappears.Spices like Kashmiri chili powder, coriander powder, garam masala, turmeric, and cumin powders are added and cooked . The reserved marinade is mixed with water and added to the pan, along with yogurt and the cashew paste. Salt and cilantro are added.The partially cooked chicken is placed in the masala, coated, and cooked covered for about 20 minutes on low heat, with the gravy spooned over it .The chicken is flipped, more gravy is added, and it’s cooked until done . Finally, more cilantro is added .
