Ginger, Garlic paste – 1 tsp

Chilli flakes – 1/2 tsp

Tomato Sauce – 1 tbsp

Yogurt – 2 tbsp

Lemon juice – 2 tbsp

Curry leaves

Salt

Rice powder – 2 tbsp

Corn flour – 2 tbsp

Egg – 1

Oil

Preparation

Take a bowl, add masala powders, lemon juice, curd, salt and sauce, mix well, then marinate chicken with this masala, keep chicken aside for 30 minutes, then add rice flour, egg and corn flour, mix well, then fry chicken.

For chutney

Preparation

Wash rice throughly in water, then soak it for 3-4 hrs, then grind it with coconut, cooked rice , water and salt, then keep it aside for raise, next morning, you can make dosa with this batter.

Heat oil in a pan, add cumin, urad dal, dry chilly and curry leaves, roast it well, next add onion, green chilly, tomato and garlic, saute it well, add salt and masala powders, then mix well. Grind it after heat is gone, then serve it with dosa.

Appam and stew

A good combo for breakfast with cotton soft appam and a good kuruma curry to go with it.

To prepare the bread

Greens – three cups

Coconut 1 3/4 cup

YEAST- half teaspoon

Sugar – 1/3 cup

Rice – two tablespoons

Salt – one and a half teaspoon

For curry

Vegetables -4 cups (potatoes carrots beans)

Coconut oil – two tablespoons

Three onions

Green chillies 15

Ginger – two teaspoons

Garlic 12

Cardamom five

Milk thistle 4

Cloves 8

Black pepper – one and a half teaspoon

Thick coconut milk – one and a half cup

Second milk – two cups

Coconut milk powder – three tablespoons

Cashew -25

Cornflour – one and a half tablespoon

Preparation

First prepare the appam, for that grind the raw rice that have been soaked for four hours It should be grind well and then it can be transferred to a mixing jar and mixed with coconut milk, rice, salt and sugar and ground well. This dough can be poured into a bowl and left to rise for 8 hours after which a nice soft appam can be prepared.

To prepare the curry, heat a pressure cooker in the oven, first pour oil into it, then add spices and roast.Add onions, green chillies and salt and heat it a little. Now add ginger and garlic. After frying well, add vegetables. Add a little more salt and the second coconut milk and close the cooker and cook the vegetables well. Pour the cornflour mixture in the coconut milk and chop it well. Cashew nuts can also be added at this time. Once it boils well, the curry is ready.

PREPARATION

In a pressure cooker, add chopped vegetables, chicken , salt, curd, masala powders and coriander and mint leaves, then cook it for one to two whistle. Heat ghee in a pot, add whole spices, then saute it well, then pour water, add salt, then let it boil, add washed rice, then cook it 75%, then transfer the rice to chicken masala , add fried onion , mint and coriander leaves, then cover the cooker and cook it for 1 whistle. Pressure cooker biriyani is ready.

Coconut oil – 2 tbsp

Cheriya ulli (shallot) – 5 to 8

Curry leaves – as required

Ginger garlic paste – 1 tbsp

Coriander powder – 4 tsp

Pepper powder – 1 tsp

Tomato paste – small size (4)

Salt to taste

Kudampuli (Brindle berry) – 2 piece

Coconut milk – half coconut

Mango – 1

Drumstick – 1

Fish – 1kg

Fenugreek powder – 2 pinch

Coriander leaves as required

PREPARATION

Heat some coconut oil in a clay pan and add shallot (cheriya ulli) cook it until golden brown add some curry leaves and ginger garlic paste and cook until it lose freshness after that add some green chilli …then add some turmeric powder, Kashmiri chilli powder and coriander powder and cook it for a while after that add the tomato paste (small size 4 tomato) add salt to taste after a while when it comes to boil add the brindle berry (kudampuli) water which was soaked 5 min in hot water let it sit for a while …after that add coconut milk and wait until it comes to boil after that add mango and drumstick to it again let it sit for a while ..now add the fish to the clay pan and wait for 10 min. After 10 min pour some coconut oil on top of it and garnish it with some coriander leaves. You yummy and tasty mango drumstick mackerel fish curry is ready.
