Super Delicious Crispy Tapioca Snack

Ingredients

Tapioca – 500 gms

Corn flour – 1/4 Cup

Rice flour – 1/4 Cup

Grated cheese – 2 Tbsp

dried red chillies – 3 or 4

finely chopped coriander leaves

turmeric powder – 1/4 tsp

black pepper powder – 1/4 /so

salt – to taste

oil

Preparation

Boil kappa well with salt and water, then strain it, mash it in a bowl, add other ingredients one bye one, then knead it to make a soft dough, flatten it in a surface, then cut it like long rectangles, fry all in hot oil.

Masala Kozhukkattai

Preparation

Take a bowl, add rice flour, coconut and salt, mix well, pour hot water, knead it well and make a dough. Divide it into equal balls, then steam it well. Take a mortar, add coconut, shallots, garlic, cumin, fennel, salt and chilly powder, crush it well. Heat oil in a pan, add mustard, pop it well , then add curry leaves and coconut mix, mix it well, then add kozhukkattai, combine well, then turn off flame.

Fish Curry ( hotel style)

Hotel style fish curry

Ingredients:

Fish – 500g ( after cleaning )

For grinding:

Oil

Fenugreek seeds – 2 pinch

Onion – 1 ( medium )

Sliced garlic – 1 1/2 tsp

Sliced ginger – 1 1/2 tsp

Tomato – 1 ( medium )

Turmeric powder – 1/2 tsp

Grated coconut – 1/2 cup

Water

For preparation:

Oil

Curry Leaves

Small onion – 6 ( big size )

Green chilli – 4 to 5

Chilli powder – 1 1/2 tbsp

Coriander powder – 1 tsp

Malabar Tamarind ( Kudampuli ) – 3 piece

Grinded paste

Water – 1 1/2 cup + 1/4 cup

Salt

Tomato – 1 ( small )

Coconut oil – 1/2 tsp

Preparation

Heat oil in a pan, add onion, saute it until it turns brown, then add tomato and turmeric powder, saute it again, then add coconut, mix it all, then turn off flame, once it cooled down grind it into fine paste. Heat oil in a clay pot, add curry leaves and shallots, saute it for a minute, now add green chilly, next add chilly powder, coriander, and water, mix it well, then add coconut paste. After 2 minutes of mixing,add tamarind, salt and water, let it boil well, then add fish, cook it for 2-3 minutes, add curry leaves then turn off flame.

Rava Appam

Soft appam with rava for breakfast

Ingredients

semolina-1 1/2 glass

maida-1/2 glass

salt

sugar- 1 tsp

coconut- 1 handful

water(lukewarm)

yeast- 1 tsp

Preparation

In a mixie jar, add rava , maida, salt, sugar, coconut, yeast and lukewarm water, grind it well, then keep aside for 1 hr, then you can make soft appam.

Egg Fried Rice

Ingredients

basmati rice – 2 cups

carrot – 1 medium

capsicum – 1 medium

onion – 1 medium

garlic – 3 to 4 big cloves or 5 to 8 small cloves

green chilli – 2 finely chopped

spring onion – 2 or 3

chicken stock – 1 packet

salt

sugar – 1 tsp

soya sauce – 1 tbsp

vinegar – 1/2 tbsp

sesame oil – 2 tbsp

sunflower oil – 2 tbsp

cabbage – 1/2 cup chopped ( optional)

beans – 5 or 6 chopped (optional)

egg – 5

pepper powder – 1/2 tsp + 1/4 tsp

Preparation

cook rice in a large quantity of water, rice should be cooked and kept in the refrigerator overnight…
vegetables except onion and garlic should be chopped and kept in the refrigerator. scramble egg by adding pepper powder and salt.

heat a kadai and add sunflower oil and sesame oil,keep the flame high for the whole process.
add garlic and green chilli saute till the garlic starts to change the color or for 30 seconds.
now add chopped onion and white part of spring onion…saute for 30 seconds.now add chopped carrots and half of the capsicum and green part of the spring onion. add cabbage and beans this time if you are adding..
again saute for 30 seconds.now add chicken stock and mix well.add soya sauce, vinegar , pepper powder and mix well add rice and mix gently.now add scrambled egg and balance capsicum and spring onion.
add chopped carrots if you need an extra crunch while having the rice.finally add sugar and cook for 5 minutes by keeping it covered with lid. do not forget to mix in between by shaking the kadai.
yummy fried rice is ready.

Ingredients

aval or poha -1 cup

gram flour or besan -2 tbsp

onion -1 medium

green chilli -1

carrot -1 small finely grated

cabbage -1 cup

turmeric powder -1/4 tsp

cumin powder -1/4 tsp

coriander powder -1 tsp

chilli flakes -1 tsp

garam masala -1/2 tsp

chaat masala -1/4 tsp

(can replace chaat masala with 1/2 tsp lemon juice)

salt-1 tsp

kayam or asafoetida -2 pinch

ginger garlic paste- 1/2 tsp

water as required

paneer 50 gm

schezwan sauce -1.5 tbsp

oil to deep fry

Preparation

Grind poha, then make a fine powder. Add this powder to a bowl, then add gram flour, vegetables, masala powders, chilly flakes, hing and salt, then knead it well, add water, mix it again, then keep aside. Take paneer, and chop it into small pieces, add schezwan sauce, then mix it well. Take the veg mix, take a large ball size, then flatten it in your palms, add filling, then fold it like cutlet, after that, fry this.
