Ingredients

Whole Chicken-2

ginger

green chilly

kanthari mulak

coriander leaves

salt

kashmiri chilly powder-2 tsp

garam masala-2 tsp

tandoori masala-4 tsp

pepper powder-3 tsp

lemon-2

turmeric-1/2 tsp

curd

Preparation

Grind ginger, coriander, green chilly and kanthari together and make a paste, in a plate, add masala powders, prepared paste, curd, salt and lemon juice, mix well, then marinate chicken with this masala, keep this aside 4 hrs. Take a pressure cooker, add chicken, then cook it for 1 whistle in medium flame. After that , take the chicken and fix it in grill, then fry it in coal.

Restaurant style Kuzhi Manthi at Home

Ingredients

whole chicken with skin-3

chicken masala- 1 tsp

kashmiri chilly powder-1 tsp

pepper powder-1tsp

turmeric

dry lemon

dry ginger-1 piece

cumin- cumin

cardamom

salt

red + yellow food color

dry chilly-6

basmati rice- 3 kg

onion-3

butter-100 gm

sun flower oil- 250 gm

green chilly-6

tomato-1/4 kg

ginger garlic paste

capsicum-3

dry lemon-5

whole spices

water

salt

chcicken stock-4

Preparation

Take chicken , cut only one side. Mix masala’s in a bowl. Grind cardamom, cumin, dry lemon, dry ginger, dry chilly together, then add to masala powders, add salt, mix well, then marinate chicken with this masala. Keep chicken aside for 3/4 hrs, then steam it well in a large idli pot without adding water.Soak rice 2 hrs. Heat butter+ oil in a large pot, add onion and whole spices, saute it well, then add green chilly, tomato, ginger garlic paste and capsicum, mix again, add dry lemon and chicken stock, pour water, once it boil well add rice, then cook rice about 75 %, after that mix rice , then pour the cooked chicken stock water, and chicken above, then smoke it. Seatl the pot for 1/2 hrs, then serve it.

Preparation

Take potato, carrot, capsicum, Cauli flower and green beans in a bowl, add masala powders, ginger garlic paste and salt, then add egg, corn flour and salt, marinate well, then set aside. After 2 hrs, deep fry this and set aside. Fry onion, cashews and kismis, keep this aside. Heat oil in a pan, add onion, saute it well, then add green chilly, salt and ginger garlic paste, saute it well, then add Masala powders, after mixing it well add tomato, once it become soft add Green peas, combine well, then add fried onion, mix well, turn off flame.

For rice, heat ghee+oil in a large pot, then add whole spices, next add onion, saute it for minutes, then add rice, heat it well, then pour water, add salt and lemon juice, cook rice about 75%, then turn off flame.

Dum the rice with fried masala, add fried onion and cashew kismis for 15 minutes. Then serve it with fried chicken.

Heat oil in a clay pan, add mustard , let it pop well, then add onion, saute it for 2 minutes, next add ginger , garlic and green chilly, saute it again, next add tomato, combine well, once it become soft, add chopped ladies finger, saute all well, grind coconut, cumin, shallots and masala powders, then add to curry, then boil it well until it become slightly thick, then turn off flame.

Water-1 1/2 cup

Preparation

Boil water in a pan, add salt, shallots, cumin, coconut oil and coconut, let it boil well, then add rice flour, mix it well in low flame. Once it cooked and became thick turn off flame. Once the heat is gone, knead it well and make soft dough. Apply oil , then divide it into equal balls, flatten each balls, then cut it with a round bowl, or top, cook the pathiri in a tawa, have it with coconut milk.

heat a pan and add ghee,saute cashews and raisins in ghee ,add coconut to this and saute for 2 to 4 minutes in medium flame….add cardamom powder and sugar…saute till sugar melts in,switch off the flame and remove the pan from the stove…now the filling is ready…To a mixer jar add Maida, water, egg, salt and turmeric powder …blend it to get a fine batter ,.heat a tawa and add 1small ladle batter and spread to make fine dosa , cook for 30 seconds in low to medium flame and flip, cook the other side for 30seconds, place a spoon full filling on dosa and roll it as we roll for spring rolls…Yummy love letter or elanchi is ready.
