Idiyappam

Here is the recipe for Idiyappam

Ingredients:

2 cups raw rice flour

3 cups water

1 teaspoon ghee

Salt to taste

1/4 teaspoon ground pepper

1/4 teaspoon ground cumin

1/4 teaspoon ground cloves

1/4 teaspoon ground cardamom

1/4 cup grated coconut

Preparation

Heat a pan over medium heat. Add the raw rice flour and roast for a few minutes, stirring constantly, until it turns light brown. Remove from heat and let cool.In a large bowl, combine the roasted rice flour, water, ghee, and salt. Mix well until a smooth dough forms.Add the ground pepper, cumin, cloves, and cardamom to the dough and mix well.Press the dough through a Idiyappam press to form thin noodles.Grease a steamer with oil.Place the Idiyappam noodles in the steamer and steam for 10-15 minutes, or until cooked.Serve hot with coconut chutney or vegetable curry.

Vegetable rice for kids lunch box

50 grams butter

1 glass frozen green peas

3 carrots, grated

Preparation

Wash and soak the rice in water for 30 minutes. Boil water in a pot and add salt. Once the water has boiled, add the rice and stir well.Cover the pot and cook on medium flame for 15 minutes.Stir the rice occasionally to prevent it from sticking to the bottom of the pot.Once the rice is cooked and the water has evaporated, add butter and cover the pot for 2-3 minutes.Add green peas and grated carrots to the rice and stir well.Turn off the heat and serve the rice hot.

No urad dal dosa

Ingredients:

2 cups raw rice

½ teaspoon fenugreek

cooked rice-1 cup

salt

250 ml of water

Steps:

Soak the raw rice and fenugreek in water. After 3-4 hrs, grind the soaked rice and fenugreek with cooked rice into a batter. Rest the batter overnight, then add salt to it, then mix well. Heat a pan and pour some batter on it.
Spread the batter evenly to make a thin dosa. Cook the dosa until it is golden brown on both sides.

Ingredients :

2 cup = 500ml

Servings = 6-10

raw rice (white rice) -2cup

urad dal -1 cup

Fenugreek seeds -1 tsp

boiled rice -1/2cup

salt

water

suger 1 tbsp

Preparation

Wash and soak the raw rice, urad dal, and fenugreek seeds in water for 3-4 hours.Grind the soaked ingredients into a smooth batter with some water. Add the cooked rice, sugar, and salt to the batter and mix well. Let the batter ferment in a warm place for 8-10 hours. Heat a non-stick pan over medium heat. Pour a ladleful of batter onto the pan and spread it evenly. Cook until the edges of the dosa are crisp and the center is cooked through. Serve hot with your favorite chutney or sambar.

Ingredients

Mango – 1 cup diced

ginger – 1 tsp

garlic – 1 tsp

curry leaves

green chilli – 2

Red chilli whole – 2

fenugreek powder – 1/8 tsp

hing powder – 1/8 tsp

turmeric powder – 1/4 tsp

curd – 1 cup

water – 1/2 cup + 1/2 cup

sugar – 1 tbsp

Preparation

mix curd with 1/2 cup of water… chop ginger and garlic. Heat an earthen pot and add coconut oil.splutter mustard.reduce the flame to low add Curry leaves and red chilli slits ,give a good mix…add fenugreek powder and asafetida powder mix well…Add ginger and garlic, saute for a minute….Add turmeric powder and chilli powder… mix well…Now add chopped mango , salt and 1/2 cup of water…cook I medium flame till the mango is done …
Now add curd and mix well until the curd gets hot …do not boil curd….finally add sugar and mix well …..
switch off the flame and mix till the curry comes to normal temperature to avoid curdle,Yummy maambazha moru curry is ready.
