Prawn samosa

Ingredients

prawn( marinated with salt, turmeric and chilly)

onion-4

curry leaves

ginger, garlic , chilly crushed

salt

boiled potato( cooked with salt garam masala) mashed-2

maida paste

samosa sheet

Preparation

Fry prawns and keep aside, then saute onion, ginger, and garlic in the same pan, add curry leaves, potato and prawns , mix well and turn off flame. Take a samosa sheet , fill with masala and fold it, and seal with maida paste and fry well in hot oil.

Coconut milk pudding

Ingredients

Grated coconut-2 cup

milk-500 ml

sugar-4 tbsp

condensed milk-4 tbsp

vanilla essance-1 tsp

corn flour-4 tbsp

desicated coconut-2-3 tbsp

peanut burfi crushed

Preparation

Boil milk and allow it to cool, add coconut in a mixie jar and blend with milk, then strain coconut milk, add sugar into it and mix well. Take corn flour in a bowl, add some coconut milk, mix well to remove lumps. Add vanilla essance, condensed milk, and corn flour to the coconut milk, then mix all , and cook in low flame, stir well, once it becomes thick, turn off flame and pour into a pudding tray, and keep in refrigirator for 3-4 hrs, you can decorate with desicated coconut and peanut burfi.

Idichakka cutlet

Ingredients

idichakka-2 1/2 cup

potato-2

onion-1

green chilly-3

ginger-1 tbsp

garlic-1 tbsp

turmeric-1/4 tsp

red chilly powder-1 tsp

pepper powder-1 tsp

garam masala powder-1/2 tsp

egg-2

bread crumbs

curry leaves

Preparation

Cook idichakka with water, salt and turmeric, then mash it , and mix with boiled potato. Heat a pan, add oil, onion, ginger , garlic, chilly and curry leaves, then saute well, next add all masalas,next add idichakka into it, mix well, then turn off flame. Mix egg and salt in a bowl, then take small portion of the masala mix, make cutlet shape, and dip in egg mix and coat bread crumbs, then fry in hot oil.

Masala chaas( sambharam)

Ingredients

curd-1 cup

water-1 cup

mint and coriander leaves

hing powder- 2 pinch

lemon juice-1

salt

ice cubes

For seasoning

Preparation

Add all ingredients in a blender, strain it, and mix with ice cubes, then heat a pan , add ghee, cumin and curry leaves, and add to the sambharam.

Egg banana evening snack

Ingredients

sugar-2 tbsp

All purpose flour-1 glass

sugar-1/4 glass

salt-1 pinch

vanilla essance-1/4 tsp

baking soda-1/4 tsp

sun flower oil-1/4 glass

milk-3/4 glass

vinegar-1 tsp

Preparation

In a pan , spread some sugar, lined up banana above the sugar. Break a egg into a bowl, add salt, vanilla essance, and sugar, beat well, add milk into it, mix well, next add sunflower oil, mix again, next add maida, baking soda, and vinegar ,mix it. Then pour the batter above the banana in the pan. Bake the cake for 30 minutes in low flame, flip the cake, cook both sides.

Preparation

Soak rice for 8 hrs, melt jaggerry with water, then strain it. Heat ghee in a pan roast coconut pieces until it becomes golden brown. Add rice, cumin, cardamom and melted jaggerry in a mixie jar, grind well then pour into a bowl, add maida into it and mix well, next add, sesame, salt, coconut into it, then rest this batter for 8 hrs.Fry neyyappam in coconut oil.

Fish curry hotel style

Ingredients

fish-1 kg

Preparation

Heat a pan , add oil, ginger, garlic, turmeric, red chilly powder, coriander, and roast this well, then turn off flame, and add coconut into it, mix with masala, and grind coconut into fine paste, add shallots into it, grind again.

Heat a clay pot, add oil, mustards,fenugreek, curry leaves, green chilly, tomato, then saute this well,next add tamarind with juice, next addgrinded coconut with required water, cook this for 10 minutes, add salt, then add fish pieces, again cook for 5 minutes, finally add coconut oil and curry leaves.

Chicken biriyani( with tips)

Ingredients

For rice

Biriyani rice-2 1/2 cup

salt

cinnamon

cloves-5

cardamom-5

pepper-10-15

ghee-1 tsp

For masala

chicken-1/2 kg

ginger garlic crushed-50 gm each

onion chopped – 4-5

green chilly -5-8

tomato-4

mint leaves chopped

coriander leaves chopped

spices

turmeric powder-1/2 tsp

chilly powder-1 tsp

coriander powder-1 to 2 tsp

crushed pepper-1 tsp

saffron

luke warm milk

Preparation

soak rice for 1/2 hrs, and wash well then strain out from water, and add into the boiled water, add spices, ghee and salt, then cook about 60 %, and then remove from water. Heat a pan add ghee and oil, next add ginger, garlic, chilly, and saute well, add spices , next add onion, salt, then add all masalas, and tomatoes, then saute well, now add chicken and mix with masala, add some boiling water, add herbs, cover the cooker, and cook well. Set rice and masala layer by layer, pour saffron milk mix above the rice, cover rice with roasted onion, cashews,  kismis, and herbs. Cover the cooker and keep  in low flame for sometime.
