Chicken Wrap

Ingredients

For wrap

maida-1 1/2 cup

baking powder-1 tsp

salt

oil-1 tbsp

For marinating

boneless chicken-300 gm

ginger garlic paste-1 tbsp

chilly powder-1 tbsp

pepper powder-1/2 tsp

garam masala powder-1/2 tsp

turmeric powder-1/4 tsp

curd-2 tbsp

salt

for chilly mayonaise

egg-2

chilly powder-1 tsp

garlic-2

sugar-1 tsp

vinegar-1 tsp

sunflower oil-1 cup

For setting wrap

cabbage

onion

cucumber

tomato

tomato ketch up

Preparation

For making dough, add all ingredients in a bowl, add required water into it, knead well, and make a soft dough. Then keep aside.

Marinate chicken with the above said ingredients, rest for 10 minutes, then fry this well. And cut into small pieces.

For chilly mayonaise, add all ingredients in a mixie jar, blend it well.

Divide the dough into small balls, and flattern it like chappathi, and cook in a tawa, then spread mayonaise above the chappathi, put vegetables, chicken and tomato ketch up , and wrap it tightly. Do the same for all, and fry in a pan.

Preparation

finely chop all fruits.

Add all ingredients in a bowl, mix well, then serve with ice cubes.

mango pieces

cold water-3 glass

Preparation

Add these all ingredients in a mixie jar, blend well, then strain this, and serve with ice cubes.

Ramadan special drink

Ingredients

milk-1 ltr

sugar-1/2 cup

almond-10

pista-10

cardamom-4

custard powder-2 tbsp

water-2 cup

gelatin

sabja seeds

Preparation

Boil milk in a pot, add sugar, and powdered nuts, stir well, next add custard powder, once it become thick, turn off flame, allow it to cool. Boil water, add gelatin, and mix well, transfer to a bowl, allow it to cool, cut this to small peaces after refrigirating it.  Finally mix all together, and serve with ice cubes.

Ingredients

Preparation

Heat oil in a pan, add onion, ginger garlic, chilly, and salt, saute well, next add masalas, cook until it turns aromatic, next add boiled potato, and coriander leaves, mix well. Take small portions from the masala, cover egg with masala, dip in egg mix and, coat in bread crumbs, then cook in hot oil.

Preparation

Grate potato and eggs into a bowl, next add other ingredients one bye one, mix all together with hand, take small portions from it, make into kebab shape, dip in egg mix and coat with bread crumbs. Fry in hot oil.

Ingredients

milk-2 cup

water-1 1/2 cup

soaked jeera rice-2 tbsp

semolina-3 tbsp

cardamom powder -1 tsp

Preparation

Boil milk with water, add required sweet, next add soaked rice, once it cooked well add soaked semolina, cook for 5 minutes. Finally add roasted onion, nuts and kismis into the kanji.

Thalassery special Irachi choru

Ingredients

For curry

beef-1 kg

onion-4

green chilly, garlic & ginger paste-3-4 tbsp

tomato-3

curry leaves

coriander leaves

mint leaves

turmeric powder-1 tsp

chilly powder-1 tbsp

coriander powder-3 tbsp

garam masala powder-1 tbsp

meat masala -1 tbsp

pepper powder-1 tsp

For rice

jeera rice-3 cup

water-5 cup

spices

lemon juice

ghee

oil

turmeric-1 tsp

garam masala powder-1 tsp

coriander leaves

Preparation

For making curry ,h eat a cooker, add oil,  onion, salt, and saute it well, now add ginger garlic chilly paste, tomato, saute again. Roast masalas well, then add into the cooker, and mix well, next add beef, and mix all well, add curry leaves, mint,  and coriander leaves,add some water and cook for 6 whistle.

For rice, heat a pan, add ghee and oil, some onion, roast it, then add spices, add water, salt, lemon juice, turmeric and garam masala powder, then allow it to boil, now add soaked rice,  cook it well. Finally add beef curry into the rice , and mix well, cook in low flame for 1/2 hrs.

Green gram vada

Ingredients

green gram ( soaked)-1 cup

green chilly-1

ginger-small pieces

onion-1

garlic-2 cloves

turmeric-1/2 tsp

chilly powder-1/2

garam masala powder-3/4 tsp

Preparation

Crush green gram with chilly and ginger, transfer to a bowl, next add other ingredients into it, mix all together well, then make vada shape, and fry in hot oil.

Bao Bun

Ingredients

For dough

maida-2 cup

yiest-1/2 tsp

baking powder-1/2 tsp

lukewarm milk-1 cup

olive oil

for filling

chicken breast piece

chilly powder-1 1/2 tsp

turmeric powder-1/2 tsp

ginger garlic paste-1 tbsp

tomato sauce-1 tsp

soy sauce-1 tsp

salt

onion-1

carrot-1

turmeric-1/2 tsp

chilly powder-1/2 tsp

capsicum-1

salt

coriander leaves

Preparation

For dough making, add maida , yiest, baking powder in a bowl, knead well by adding milk, make a soft dough, spread oil above it, and rest for 4 hrs.

Marinate chicken with chilly powder,turmeric, sauces, ginger garlic paste and salt, and rest for 1/2 hrs. Then fry well

Heat a pan, add onion, carrot, chilly powder ,salt, turmeric and capsicum,  saute it well, finally add chicken and coriander leaves, mix well and turn off flame.

Knead dough again, then take small portion from it, and flattern it , cut into small buns, spread butter , and fold it. Then cook in a steamer, and fill the bun with the chicken masala.
