Egg potato snack

Ingredients

egg boiled and mashed

potato boiled and mashed

coconut oil

green chilly

shallots

ginger paste

turmeric-1/4 tsp

garam masala-1/2 tsp

salt

bread crumbs

eggs

Preparation

Heat a pan, add oil, then add, shallots,chilly and ginger paste, saute well , next add potato and egg, mix well, next add masalas and 3 tbsp of bread crumbs, mix well and turn off flame. Once the heat is gone, take small portions from it and make a shape as you wish, then dip all in egg mix and coat with bread crumbs, then deep fry this all.

Idiyappam 2 types with side dish

Ingredients

jaggerry-60 gm

grated coconut-1 cup

chutney dal powder-1 tbsp

cardamom powder-5

salt

rice flour

Idiyappam type 1

raw rice ( soaked)-1 cup

water-2 glass

ghee

butter

salt

Idiyappam type 2

soaked raw rice-1 cup

ghee

salt

water-2 glass

butter

grated coconut

Preparation

For side dish cooking, grind coconut well, then melt jaggerry with cardamom and salt, then add coconut milk into it, next rice flour paste, and gram dal powder, cook well and keep aside.

For making idiyappam type 1, grind soaked rice well with required water and salt. Heat a pan, add ghee and the batter and 2 glass of water and butter, cook until it become a soft dough, now take idiyappam maker, and fill with dough, and press idiyappam into a banana leaf, and steam cook this well.

For type 2, cook the batter in a pan with water and butter, make a soft dough, divide this into equal portions, then steam this dough, after steaming ,press into a banana leaf , no need to steam again.

Ifthar thari kanji

Ingredients

semolina- 2 tbsp

milk-1/2 cup

water-3/4 cup

sugar-2 tbsp

cardamom-1/4 tsp

salt-a pinch

shallots chopped-1 tsp

cashews-1 tbsp

raisins-1 tbsp

ghee

Preparation

Roast rava in a pan, keep aside. Combine milk and water, and boil in a sauce pan, next add sugar, cardamom powder into it, once it boil well, you can add roasted rava, then cook for another few minutes, now turn off the flame, finally add roasted cashew, raisins and shallots into it, mix well and serve with hot.

Ingredients

putt podi-2 cup

water(boiled)-4 cup

cumin-1/2 tbsp

shallots-3-4

coconut oil

Preparation

In a mixing bowl, add putt podi, soak this with hot water, mix with a spoon. Grind coconut, cumin and shallots, add into the rice flour, knead well, make a soft dough, divide this into equal portions. Take a small portion, flattern it by using a plastic wrap with your hand, and fry it deeply.

Preparation

Cook chicken with turmeric, pepper , salt and water, then strain out water and crush the chicken. Heat a pan saute onion and other vegetables with required salt, and mix with mayonaise. Take 2 bread slices, and flattern it, then cut it by usind a glass, then dip it in egg mix and coat with bread crumbs, then fry this in hot oil, do this for all, then cut the bread and fill with chicken mix.

Preparation

Cook chicken with turmeric,pepper, salt and water, then crush the chicken. Heat a pan, add oil, then saute onion, ginger garlic, chilly, curry leaves and salt, then add all masalas into it, next add chicken, and mix well. Take bread slices, and remove sides, then spread water, and put the chicken mix, then fold it like triangle shape, then dip in egg mix and coat in bread crumbs, do this for all, then fry in hot oil.

Banana donut

Ingredients

banana steamed -2

Preparation

Mash banana with fork, then add other ingredients, and knead well, make a soft dough. Take small portion from it, shape it like donut, then fry this in hot oil, dip one side in melted jaggerry and spread some grated coconut above it.

Gooseberry halwa( nellikka varattiyath)

Preparation

Cook gooseberry in water, and separate from seeds, then grind well with cardamom and jaggerry. Heat a pan add ghee and gooseberry mix, and cook well, once it become non sticky, turn off the flame.
