Easy fish curry

Ingredients

fish-8-10

coconut grated-4-5 tsp

ginger-1 piece

coriander powder-2 tsp

chilly powder-1 tsp

salt

turmeric

pepper powder

shallots

curry leaves

pot tamarind

Preparation

Grind coconut with ginger, coriander, chilly powder , turmeric and pepper powder, then pour the mix into a clay pot, add required water and salt, then boil it, next add fish and curry leaves and cook well. Heat another pan , add oil, then saute shallots and add into the fish curry.

Peri peri chicken manthi

Ingredients

For sauce

soaked dry red chilly-6-7

garlic-5-6

coriander leaves

lemon juice-1 lemon

sunflower oil

chilly powder-1 tsp

salt

other ingredients

chicken-2 big pieces

sunflower oil-4 tbsp

cinnamon-3

cardamom-5-6

cloves-5-6

bay leaf-3

chopped garlic-4-5

onion sliced-1

soaked basmati rice-3 cup

water boiled- 6 cup

maggi chicken cube-1

salt

Preparation

For sauce, grind all the ingredients in the list into fine paste, then spread over the chicken and rest for 1 hour to marinate. After 1 hour fry in less oil, and keep aside. Heat biriyani pot, add oil, then add spices into it, roast for 1 minute,next add chopped onion and garlic, saute it well, now add leftover sauce, saute until the raw smell gone, now add chicken cube,next rice and mix well, add boiling water into it, then dd required salt and cook well. Once the rice is cooked, put chicken above it, then smoke charcol, and cover the pot, and cook in low flame for 10 minutes.

Rava laddoo

Ingredients

semolina-1 cup

Milk chilled-1/2 cup( cooked)

sugar-8 tbsp

ghee-4 tbsp

cashew nut

pistachio

raisins

cardamom powder-1/4 tsp

desicated coconut-1 cup

oil

salt-1 pinch

Preparation

Add milk into rava  and mix well.Close the lid & keep it aside for 10 minutes. Add 1 tspn ghee and knead well. Keep it aside for 15 minutes. Add sugar into blender & powder it. Take the small portion of rava mix.and make a small disc like shape. Heat oil & add disc shape mix. Fry until light golden color on medium flame.after that once it cool, broken into small pieces and add to blender & powder it.Heat ghee & fry the cashewnuts. Add powderd sugar, cardmon powder, pista, cashewnuts, rainsins, decicated coconut into powderd rava mix. Mix well. Add ghee little by little & mix well.Take small portions of mix & make a laddu.

Poha, banana ladoo

Ingredients

poha -2 cup

ghee-1 tbsp

banana-1

grated coconut-2-3 tbsp

jaggerry grated-2-3 tbsp

Preparation

Roast poha for 2 minutes, then grind into fine powder, and transfer to a plate. Saute banana in ghee, add grated coconut into it, mash it well, now add grinded poha, next add jaggerry, and mix well, now turn off flame, once it become cool, make small balls.

Kozhikkodan Halwa

Ingredients

maida-3 cup

sugar-1 cup

red food color

water

cardamom powder

coconut oil

raisins

white sesame seeds

salt

Preparation

Add maida in a bowl , add water and make a soft dough. Take 7-8 cup of water put the dough into it, then mix with hand, then strain out this, remove the waste, then cover the water, then rest for 1 day, and remove the excess water , again add 6 cups of water into it, then rest for 1 more day, again remove excess water. Melt sugar with water, add maida mix, and salt, stir continously, add cardamom, white sesame, food color and add coconut oil frequently, mix well, once it become non sticky and thick turn off flame, then transfer to a plate, and set this, allow it to cool.

Thari kaachiyath( thalassery special)

Heat a pan, add ghee and semolina, roast for a minute, next add coconut milk into it, allow it to boil, next add milk and cook well,then add sugar. Heat a pan add ghee into it, roast cashews and shallots well then add this into the cooked rava kanji.

Garlic bread

Ingredients

olive oil-2 cups

garlic-8

maida-3 cup

yiest-2 1/2 tsp

sugar-1 1/2 tsp

chilly flakes-1 1/2 tsp

pepper powder-1 tsp

cheese-1/4 cup

warm water-3/4 cup

Preparation

Lets begin the cooking with preparation of garlic infuced oil, add olive oil and garlic in an infuser, blend this well, then strain out oil. Add maida, yiest , chilly flakes, pepper,sugar , salt and cheese in a bowl, knead the batter by using warm water and garlic infuced oil, make a soft dough, then rest for 1/2 hrs for rise. After knead again and cut into equal portions, make a perfect shape, then bake bread.

Preparation

Take a bowl, break an egg into it, add milk, salt , wheat flour and baking powder, mix well and remove lumps, then keep aside. Take another bowl, add 2 eggs, onion, tomato, salt , chat masala and chilly flakes, mix well. Heat a pan , pour wheat flour batter, spread over, then add egg mix above it, put some cheese above it, cook well, then roll it.

Mango ice cream

Ingredients

Riped mango-1 1/2 cup

milk-1 cup

sugar-4 tbsp

corn flour-1 1/2 tbsp

Preparation

Grind mango into fine paste, then strain it, keep this mix in fridhe for 5 hrs. Add corn flour in a bowl, add milk into it, mix well and keep aside. Boil milk with sugar, add corn flour mix into it, stir well to become creamy, then allow it to become cool, and then grind this well, add refrigirated mango into it , blend again , and transfer to a container, freeze this in 5-6 hrs.
