Ingredients

semolina-1 cup

water-1 cup

curd-2 tbsp

tomato-1

shallots-4-5

salt

Preparation

Soak semolina in 1 cup of water for 15 minutes, then transfer to a mixie jar, add curd , tomato, shallots and salt into it, then grind into fine batter, transfer to a bowl, then pour into hot appam chatti, cook well.

Egg snack

Ingredients

egg-1

sugar- 3 tbp

curd-1/4 glass

salt-1 pinch

wheat flour -1 cup

milk

oil- for frying

Preparation

Break an egg into a bowl, add sugar into it, beat well, then add curd, salt wheat flour, mix well by using milk, make a thick batter. Take this batter in a spoon, and pour to hot oil, make small snacks.

Yellow mixture

Ingredients

green gram soaked- 1 cup

rice flour-2 cup

gram flour-1 cup

yellow color

black salt

water

sun flower oil

Preparation

Strain out green gram from water and keep in sunlight. Take a bowl , add gram flour, rice flour, turmeric, and salt, mix well then add water and knead it to make soft dough, then fill this in a idiyappam press, and press into hot oil, and fry well, finish all dough the same. Finally fry green gram in hot oil and mix with fried mixture, finally add black salt.

Ullicurry

Ingredients

shallots

Preparation

Heat oil in a pan, add shallots saute well, add salt, chilly powder, cook in low flame, next add water, turmeric, green chilly and tamarind juice, once it boils add rice flour mix, cook few more minutes,next add jaggerry, cook again, finally add some coriander leaves, turn off flame. Heat oil in a pan, splutter mustards , fenugreek, cumin, dry red chilly, and curry leaves, next add hing powder and pour into the curry.

Jackfruit cake

Ingredients

jackfruit pulp – 10

jaggerry-3/4 cup

Preparation

Add jackfruit pulp to a mixie jar, grind well, next add egg and blend well, next add jaggerry, vanilla essance, blend this again, then transfer to a bowl, now add vegetable oil, mix with a whisk, next add dry ingredients, whisk again, add some dry nuts. Bake in a cake mould.

Uzhunnuvada

Ingredients

urad dal-1 1/2 cup

fenugreek-1/4 tsp

rice flour-1 1/2 tbsp

ginger chopped-1/2 tsp

onion-1/2

curry leaves

pepper crushed-1/2 tsp

hind-1/2 tsp

salt

Preparation

Wash and soak urad dal and fenugreek for 2 hrs. Then strain out from water, then grind urad dal little bye little into thick batter, now add rice flour into it, mix well with your hand for 5 minutes, then rest 5 hrs for fermentation. Add ginger, onion,pepper,hing , curry leaves and salt, mix well. Dip your hand in water, take small portion from batter, put a small whole , then fry in hot oil.

Masala paniyaram

Ingredients

raw rice-1 cup

urad dal-1/4 cup

fenugreek seeds-1/4 tsp

water

oil-2 tbsp

garlic-1 tbsp

ginger-1 tsp

curry leaves-1-2 tsp

chilly powder-1 tsp

hing-1/4 tsp

coriander leaves-2 tbsp

oil-2-3 tbsp

Preparation

Soak rice with urad dal and fenugreek for 4 hrs, then transfer to a blender, grind into fine  batter, pour to a bowl, rest overnight. Heat oil in a pan , add garlic, ginger and curry leaves, next add onion, saute it well, now add chilly powder, hing powder, and mix well, finally add some coriander leaves, then turnoff flame, add masala to the batter and mix well, also add required salt. Now cook paniyaram in unniyappam pot.

vendaykka moru curry

Ingredients

okra-200 kg

oil

grated coconut-1/2

cumin-1 tsp

pepper-1 tsp

ginger-1 small piece

green chilly-4-5

butter milk

turmeric

Preparation

Fry okra in hot oil and set aside, grind coconut with cumin,pepper, green chilly, ginger and some water, then pour to a clay pot, add butter milk into it, mix both well, turn on flame, keep the flame medium, don’t allow to boil, now add fried okra, turmeric and salt, mix well, now splutter some mustards, fenugreek and curry leaves, add into the curry.

Ingredients

Chicken-1 kg

coriander powder-1 tsp

garam masala-1 tsp

Preparation

Marinate chicken with salt, turmeric and curd, rest for 1/2 hrs. Heat a pan add oil,fry chopped onion until it become crispy, then keep aside. Heat oil in another pan, add garlic ginger, green chilly, curry leaves and tomatoes, saute well, next add all masalas, cook until it turns aromatic, now add all masalas and marinated chicken, mix and cook well, next add fried onion, mix it well, then cook for 15 minutes, now add 1 tsp pepper powder, and 1/2 tsp fennel powder, finally add some curry leaves.
