Ingredients

rice flour-1 cup

grated coconut-1/2 cup

poha-1/2 cup

yiest-1/2 tsp

sugar

salt

lukewarm water

Preparation

Wash poha and set aside. In a mixie jar add rice flour,coconut,poha,yiest,sugar , salt and water, grind into fine batter, pour the batter to a bowl, rest for 20 minutes. Then you can cook soft panji appam.

Egg Snack

Ingredients

green chilly-2

curry leaves

ginger garlic paste

salt

turmeric-1/4 tsp

pepper powder-1/2 tsp

chicken masala-1/2 tsp

coriander leaves

for batter

maida-1 cup

milk-1/2 cup

salt

baking soda-1 pinch

other ingredients

edd boiled and cut into round shape-2 eggs

ghee

Preparation

For masala, heat oil in a pan, saute the vegetables, and add masala, cook well, finally add coriander leaves and turn off flame.

For batter, add all these ingredients in a mixie jar,blend well.

Heat a pan, add ghee and spread over, then pour the batter, and spread over the pan, next add masala above then set the egg above the masala,again pour the left over batter above it, cook well in low flame, then flip the snack and cook both sides well.

Jackfruit seeds(chakkakkuru) masala curry

Ingredients

chakkakkuru-250-300 gm

coconut-1 handful

coriander powder-2 tbsp

turmeric-1/4 tsp

salt

coconut oil-4-5 tsp

curry leaves

cinnamon-1 piece

garlic-7-8

ginger

onion-1

Preparation

Heat oil in a pan, add cinnamon.onion,ginger and garlic, saute it well, next add coconut, roast it well, then add masalas and turn off flame. After cooling well, grind the mix into fine paste. Heat a cooker, add oil, onion,green chilly, curry leaves, saute it well, then add coconut mix and jackfruit seeds, mix well, add salt and water, cook until 5 whistle. Heat a pan, add oil,onion and curry leaves, saute it well and pour to the curry.

Preparation

Mix coconut,masalas,and crushed garlic. Heat oil in a pan, crack mustards, next add dry red chilly, then add coconut mix and beans together, mix all well, add 2 tbsp of water, cook in low flame.

Wash and soak horse gram for 4 hrs, then cook in a pressure cooker with salt and curry leaves. Crush coconut with shallots,garlic , green chilly and masalas, keep aside. Heat a pan, add oil, crack mustards, then add shallots and garlic chopped, red chilly and curry leaves, saute it well, then add crushed coconut,mix well,then add cooked muthira, mix well and cook for 5 minutes.

Soak rice for 4 hrs, then grind with egg,coconut,rice, salt and water, make a fine paste, then rest the batter for 1/2 hrs. Heat oil in a pan, saute ginger,green chilly, onion with salt, then add masalas, mix well, next add cooked chicken, finally add some coriander leaves. Take a idli plate, pour the batter, put the masala above it, steam cook the appam for 10 minutes.

Mad angles from dosa

Ingredients

Preparation

If your dosa looks soft, just roll it by using a roller, then cut the dosas into angles shape. In a pan add masalas, make a paste by using water, marinate the angles with this masala. Heat oil in a pan, fry the angles until it become crispy.

Wheat Porotta

Preparation

In a bowl add wheat flour,salt,sugar and water,knead it well, and make a perfect dough,rest this for 20 minutes. Then divide this into equal parts. Take 1 ball and roll it into thin , use oil to roll it. Fold the rolled chapathy from one side, then flap it and again roll it, do the same for all balls, then again roll it and cook it well. Finally beat the porotta.

Melt jaggerry and keep aside. Grind other ingredients in a mixie jar. Heat a pan add jaggerry juice and grinded ingredients, stir well, add ghee frequently, stir continously until it become non sticky, finally add some nuts, then transfer it to a container, allow it to cool, then cut it .

Heat oil in a pan, crack mustards, next add ginger,garlic,red chilly, roast it well,next add onion and saute it well,next add green chilly and tomato, cook well, next add masalas, after the raw smell gone, you can add coconut paste,then mix well, now add greenpeas cooked, add garam masala, allow it to boil, finally add some curry leaves.
