Ghee Roast

Ingredients

Raw rice-1cup

urad dal-1/2 cup

cooked rice-1 tbsp

salt

ghee

Preparation

Soak rice and urad dal for 4 hrs, then grind with cooked rice, make fine paste. Rest 6-8 hrs for fermentation. Add salt, mix well. Pour batter to hot dosa tawa, spread over the tawa, spread ghee, make crispy ghee roast.

Egg Puffs

Ingredients :

for puff pastry

Maida:2cup /250g

sugar:1/2tsp

salt: 1tsp

water:3/4cup

butter:150g

flour for dusting

egg masala

coconut oil:2tbsp

onion:3

garlic:3-4cloves

ginger:1/2tbsp

green chilli:2

turmeric powder:1/2tsp

chilli powder:1/2tbsp

coriander powder:1tbsp

salt

coriander leaves

curry leaves

boiled egg:2

Preparation

For pastry sheets, make dough with the items in the list, then rest this for 15 minutes, then again knead it, split the dough into 2, then flattern it into rectangle shape, spread butter and dust, fold it from both sides, again spread butter and maida, fold again, rest this for 1 hr in refrigirator. After 1 hour take the sheet, again repeat the first step, rest 1 more hour. Repeat the same step 1 more time. Finally cut the sheets into square shape.

For masala, heat oil in a pan, saute ginger,garlic and onion, then add green chilly and salt, add masalas, mix well, add curry leaves and coriander leaves ,turn off flame.

Take a sheet, fill masala with 1/2 boiled egg piece, brush egg  mix above the puffs

Bake in a pressure cooker.

Rice Murukk

Ingredients

Water-1 cup

salt

ghee-2 tsp

rice flour-1 cup

sesame seeds-1 tsp

kashmiri chilli-1/2 tsp

oil for frying

Preparation

Boil water with ghee and salt, after boiled well add rice flour,sesame seeds and kashmiri chilli powder,mix well, rest for 5 minutes,then knead it well, take idiyappam maker with star hole , fill the dough and press murukk,then fry it well.

Traditional Shrimp Roast

Ingredients

marination

Prawns-1kg

Turmeric powder-1/4tsp

chilli powder-1 1/2tbsp

vinegar-1tbsp

salt-1/2tsp

for masala

oil-2tbsp

chopped ginger garlic-3tbsp

green chillies-3

onions-3

Turmeric powder-1/4tsp

chilli powder-2tbsp.

garam masala-1/2tsp

pepper powder-1/2tsp

gambooge-2 ps

Preparation

Marinate shrimp with the items in the list, rest for 20 minutes then shallow fry it.

add 2 tbsp oil in a kaday ,add 2-3 tbsp chopped ginger garlic and fry it until raw smell goes.. add2-3 chopped green chillies and curry leaves.. add finely chopped 3 large onions and fry until onions become soft.. reduce the flame and add 1/2tsp Turmeric powder and 2tbsp chilli powder ,roast it until raw smell goes (2-3 minutes).. add fried prawns and mix well with roasted masala..add gambooge and 1/2 glass hot water and cook for 3-4 minutes in medium to low flame.. finally add 1/2tsp garam masala and 1/2tsp pepper powder and cook for a minute add fresh curry leaves and off the flame.

Eggless Red Bee Cake

Ingredients

Dry ingredients

Maida – 1 1/2 cup

Baking powder – 1 tsp

Baking soda- 1/4 tsp

Salt – a pinch

Wet ingredients

————————

Milk – 1 cup

Vinegar – 1 tsp

Refined oil – 1/4 cup

Powdered sugar – 1 1/2 cup

* One batter for three cakes

 

For Vanilla cake:

Vanilla essence – 1/2 tsp

Vinegar – 1/2 tsp

Lukewarm milk – 2 tsp

Redvelvet cake:

Light cocoa powder – 1 tsp

Vinegar – 1/2 tsp

Lukewarm milk – 2 tsp

Chocolate Ganache for filling :

Dark chocolate – 1/4 cup

White chocolate – 1/4 cup

Milk – 4 tbsp

Whipping cream – 1 1/4 cups

Chocolate ganache for covering the cake:

Fresh cream – 1/2 cup

Sugar – 1/4 cup

White chocolate – 1/4 cup

Red food color as needed

Preparation

Strain dry ingredients 3 times and keep aside. For butter milk mix milk with vinegar, set aside for 5 minutes.In a bowl, add sugar and oil,mix it well, add buttermilk, and dry ingredients, mix well and make a perfect cake batter, divide this into 3 equal parts.

For vanilla sponge cake, add vanilla essance,vinegar, and lukewarm milk to the cake batter and mix well,then bake this in a cake mould.

For red velvet cake,add cocoa powder,milk, vinegar and mix well then bake for 15 minutes.

for chocolete sponge cake, add cocoapowder,coffee powder,vinegar and milk, mix it well and bake for 15 minutes.

After the cake cooked well, cut the cake into layers, then set the cake like the video, and decorate as you like.

Green Peas 100gm

turmeric 1/2 tsp

” Garlic 4 cloves

green chilli 4

carrot 1

small potato 1

Small coconut 1 cup

fennel seeds 1 tsp

coconut oil 2 tbsp

coriander powder 1 tbsp

Boiled water 1 cup

Curryleaves

Salt

Preparation

Soak greenpeas for 8 hrs, then cook in a pressure cooker with salt and turmeric. Then grind coconut with fennel seeds. Heat oil in a pan,add onion, curry leaves,ginger,garlic, and green chilly, saute it well,next add masalas, mix it well,next add potato, carrot, and required water, allow it to boil. Now add coconut paste and cooked green peas, mix all well, add salt. Cook in low flame for 5 minutes.

Tapioca-1 kg

green chilly-2-4

curry leaves

kashmiri chilly-1 tsp

Preparation

Cook tapioka, then mash it well, then add salt, chopped veggies,masala, rice flour and maida, and knead it well. Dip your hand in water,take small portion of the dough,make a shape put a small hole in centre, put this to hot oil,and fry both sides.

Fried pathiri

Ingredients

water-1.75cup

rice flour-1 cup

salt

oil

sesame seeds

coconut

shallots

cumin seeds

maida-2 tbsp

Preparation

boil water with salt and oil, add rice flour and mix well, then rest this for 5 minutes. Crush coconut with shallots and cumin. Knead the dough well, add coconut mix, again mix it well, next add maida, knead it well, add sesame seeds, again knead it, roll the dough into a thick consistency, then cut it by using a cap. Now fry this well.

Arrowroot payasam

Ingredients

arrowroot-1/2 cup

jaggerry-4-5

cardamom powder-2 pinch

water- 2 1/2 cup

ghee-4 tsp

Preparation

Melt jaggerry, then add more water and strain it. Mix arrowroot with water, remove lumps, then mix jaggerry and arrowroot mix, then strain again. Pour this mix to a pan, then stir well, add cardamom and coconut, frequently add ghee, cook until it become thick and non sticky.
