Sughiyan

Ingredients

green gram-3 1/2 cup

poha-4-5 handful

maida-3/4 cup

rice flour-1 tbsp

jaggerry-400-500 gm

baking soda-1/2 tsp

salt-1 pinch

cardamom -1/2 tsp

coconut grated-4-5 handful

turmeric-1/2 tsp

Preparation

Cook green gram in a pressure cooker, In a bowl , add dry ingredients, and make a thick batter. Melt jaggerry in a pan, add other ingredients and cooked green gram make dry mix, then allow it to cool. Make small balls dip in the batter, and fry in hot oil.

Duck fry

INGREDIENTS

For marination

Duck – 1.5 kg
Turmeric powder – 1/4 tsp
Chilly powder – 1/2 tbsp
Coriander powder – 3/4 tbsp
Garam masala – 1 tsp
Salt – as needed
Curry leaves – 2 to 3 sprig

Water – as needed

For preparation
————————
Coconut oil – 2 tbsp
Onion chopped – 3
Curry leaves – 3 to 5 sprig
Ginger – 1 big piece
Garlic cloves – 20
Green chilly – 3
Small onion – 20
Coconut pieces – 1/2 cup
Turmeric powder – 1/4 tsp
Chilly powder – 1/2 tbsp
Coriander powder – 3/4 tbsp
Garam masala – 1 tsp
Pepper powder – 1 tsp
Tomato small – 2

Preparation

Marinate duckmeat with the ingredients above the list, rest for 1/2 hrs. Then add water and cook until it become dry. Heat a pan, add coconut oil, once it heat well, add onion, after sauting it, add curry leaves, ginger,garlic,chilly crushed, and shallots, mix well and cook for 2 minutes, next add coconut pieces, mix well, next add masalas, mix well, once it turns aromatic add tomato,next add cooked meat, mix all well and cook until it become thick and dry.

Chicken Kabsa

Ingredients

sunflower oil-5 tbsp

onion-2

spices

ginger,garlic crushed-1 1/2 tbsp

Kabsa masala powder-3 tbsp

chilly powder

chicken stock-1

garam masala

chicken- marinate with  chilly powder,salt and turmeric

tomato paste-3 tomatoes

salt

Rice -3 cup

salt-4 1/2 cup

dry lemon-1

for frying chicken

ketchup

chilly powder

salt

lemon juice

Preparation

Heat oil in a cooker, add spices and green chilly along with onion, saute it well, next add ginger garlic crushed, after sauting well add marinated chicken, mix all, then add masalas, chicken stock and tomato puree, add required water and cook well. Now take back the chicken pieces, marinate with masalas and fry it well. Add rices to the chicken cooked water, after cooking well, mix all together.

Chicken kizhi biriyani

Ingredients

cooked basmati rice

Preparation

Marinate chicken with masalas and rest for 1/2 hrs, then fry it well. In the same oil saute onion, ginger garlic,tomatoes with masalas, add 1 glass water, once it starts boiling add chicken, cook for 5 minutes in high flame. In a banana leaf add chicken masala and rice, add some fried onion and cashew kismis, then tie the leaf and steam in a idli pot for 5 minutes, kizhi biriyani is now ready to serve.

Paalaada

Ingredients

basmati rice-1 cup

coconut milk-1 1/4 cup

egg-1

salt

Preparation

Soak rice for 4 hrs, then grind it with coconut milk, salt and egg, make a loose batter, now you can make thin paalaada in fry pan.

Tamarind jam

Ingredients

tamarind-200gm

Preparation

In a saucepan add tamarind,chilly powder,cumin, ginger and water, cook it well, and allow it to cool, after cooling well, strain this mixture, again boil it with jaggerry and salt, stir well. cook until it become thick. After cooling it you can use it.

Cotton candy

Ingredients

maida-1 cup

sugar-1 cup

lemon juice-1 tsp

ghee-1 tbsp

water-1/2 cup

Preparation

Heat a pan, add ghee, allow it to melt, add maida, mix well, heat it then transfer to a plate. Caramalise sugar with water and lemon juice, then pour it to counter top, mix it with a spoon, once the heat is moderate, mix with hand, add maida flour, stretch it, continue the process until it become perfect candy.

Ingredients

Flour / Maida – 2 1/2 cups ( 300 grams)

Yeast – 1 tsp ( instant) , take 1 1/2 tsp if using active dry yeast

Baking Powder – 1/4 tsp ( 4 pinch)

Salt – 1/2 tsp

Sugar – 1 tsp

Warm water – 1/4 cup Water as required ( approximately 1 cup)

Oil – 2 tbsp

Preparation

Take lukewarm water, add sugar, and yiest, mix well, allow it to activate. In a bowl, add maida, salt, and baking powder, mix well, then add activated yiest, knead it well , add required water, make it a soft dough, then rest for 1 1/2 hrs. Knead it again and roll it into thick chappathy, then cook in a pan.

Ingredients

milk- 1 1/2 cup

sugar- 1/4 cup+ 2 tsp

salt-1/4 tsp

pista essance

strawberry essance

butterscotch essance

mango riped-1

sugar-1/4 cup

vanilla essance- 2 drops

water-1/2 cup

Preparation

Boil milk with sugar and pich of salt, then divide into 3 parts, add flavours in each parts mix well, then fill the sip-up covers and allow it to freeze.

Blend mango pulp with sugar, vanilla essance and water, then strain to a bowl, fill sip-up covers, keep in freezer.

Ginger candy

Ingredients

jaggerry-4 piece

chopped ginger-1 cup

Preparation

Melt jaggerry with 2 tbsp of water. Grind ginger. In a pan add melted jaggerry and grinded ginger together, stir well, cook it until it become thick and non sticky, then transfer to a greased tin, wait about 20 minutes, then cut it.
