Preparation

Add onion,ginger,curry leaves,fennel and chickpea in a mixie jar, grind it into coarse paste, then transfer to a bowl, add required salt, mix with hand, then make a shape like vada, then fry in hot oil.

Crispy Uzhunnuvada

Ingredients

urad dal-1 cup

fenugreek-1 tsp

dosa batter- 9 tsp

onion-2

chilly-2

ginger chopped

curry leaves

crushed pepper

sambar powder-1/2 tsp

hing-1 pinch

rice flour-1 tbsp

salt

Preparation

Soak urad dal with fenugreek, then grind it with dosa batter, mix it with your hand.Rest the batter for 2-3 hrs. Then add other ingredients into the batter, mix it well, then rest it for 5 minutes in fridge. Dip your hand in water, then take batter, put hole, then put it to hot oil, fry it well.

Ash gourd curry for rice

Ingredients

• Ash guard – 250 grams

• Onion – 1 (small)

• Green chilli – 2 no’s

• Turmeric powder – ½ teaspoon

• Coriander powder – 1 teaspoon

• Chilli powder – 1 teaspoon

• Thin coconut milk – 1 cup

• Thick coconut milk – ½ cup

• Mustard seeds – ½ teaspoon

• Dry chilli –2 no’s

• Water – ¼ cup

• Curry leaves

• Oil

• Salt

Preparation

In a pressure cooker add ash gourd, masalas , salt, onion, chilly, curry leaves and water, cook for 2 whistle. After the pressure is gone, open the lid, then add second extract of coconut milk, cook for 2-3 minutes, then add thick coconut milk, after mixing well, turn off flame. Heat a pan, add coconut oil, after heat it well, pop mustards,red chilly and curry leaves, add to curry.

Kinnathorotti( kannur special)

Ingredients

raw rice-1 1/2 cup soaked

coconut-1/2 cup

cumin-1/2 tsp

fennel-1/2 tsp

onion-1/2

salt

water

chilly powder-1 1/2 tsp

salt

water

curry leaves.

Preparation

Grind soaked rice with coconut,cumin,fennel , onion,salt and water, then pour the batter to a plate, then steam cook it for 20 minutes. After cooking well, cut it into rectangle shape.

Mix chilly powder,salt and water and make a paste, marinate the appam with the paste, then shallow fry this.

Ingredients

raw rice- 1 1/2 glass( soaked)

cooked rice-3/4 cup

coconut-1 cup

egg-1

water

salt

Preparation

Add rice, boiled rice,coconut,egg and required water in a mixie jar, grind it well, then pour it to a bowl,add salt, mix well, then rest for 1/2 hrs. Heat a tawa, pour 1 laddle of batter, after the bubbles comes out, cover the tawa, cook it well.

Chicken samosa

Ingredients

Preparation

Add chicken in a pressure cooker, add salt, pepper powder, turmeric and water, cook it well, then crush chicken pieces. Heat oil in a pan, add ginger garlic paste, fry well, then add onion and chilly, saute it well, next add masalas, after mixing well add chicken, after mixing well add boiled potato, mix all well, finally add coriander leaves.

Take a samosa sheet fill the masala, fold it like samosa shape, seal with maida paste, after done it fry in hot oil.

Fried Pathiri

Ingredients

rice flour-1 cup

water- 1 1/2 cup

salt

maida-2 tsp

semolina-2 tsp

coconut-1/4 cup

cumin-3/4 tsp

shallots-3-4

sesame seeds

Preparation

Boil water in a pan, then add dry ingredients into it, mix well, then allow it to cool. Crush coconut with shallots, and cumin, add to rice flour, next add sesame seeds, knead it well, flattern it by using a roller, cut into round shape by using a top, then fry it.

Pachari Neyppayasam

Ingredients

Raw rice-1 cup

water- 1 1/2 cup

jaggerry-1 1/2 cup

cardamom

salt

grated coconut-1 cup

ghee

cashews and kismis

Preparation

Cook rice in a pressure cooker with water. Then add jaggerry juice, cook for 1 whistle, then add coconut,cardamom and salt, cook well, then add water, mix well and allow it to boil. Roast cashews and kismis in ghee and add to paayasam.

Capsicum – 1, large

Ginger – 1tbsp, finely chopped

Celery – 2 tbsp

Pepper powder – 1 tsp

Oil – 1 tbsp

Salt to taste

Preparation

Heat oil in a pan, add garlic,ginger,chilly,and spring onion, saute until the raw smell gone, then add onion, and capsicum, cook for 1 minute, next add sauces and vinegar, after cooking well,next add celery, next add paneer and spring onion, mix well, cook in high flame, finally add pepper powder.
