Cheesy Noodles

Ingredients

oil

garlic

onion-1

sweet corn

chilly flakes

Water-2 glass

noodles packet -1( 2 pieces)

cheese

Preparation

Heat a pan, add oil, allow it to heat well, then add garlic, after mixing well add onion, saute onion, next add chilly flakes and sweet corn, cook it in low flame, now add water, once it boils well add cheese, when the cheese starts to melt add noodles with noodles masalas, mix it well and cook until the water dissolves.

Soft paalaada

Ingredients

rice-1 cup

coconut milk-1/2( 3 cup)

egg-1

salt

Preparation

Soak rice for 4 hrs. Grind it with egg by adding coconut milk and make a loose flowing batter. Add required salt. Heat a tawa, pour the batter, spread over the tawa, then cook it in low flame.

Sughiyan

Ingredients

green gram-1 cup

poha-1/2 cup

jaggerry-1 cup

cardamom-1/2 tsp

coconut-1/2 cup

maida-1 cup

corn flour-1/4 cup

salt

water

Preparation

Wash green gram and soak for 6 hrs. Then cook it with water for 2 whistle. After cooling well add other ingredients into it, knead it by your hand, and make ball shape, then keep aside. Make maida corn flour batter by adding salt and water. Take green gram balls, dip in batter, then fry in hot oil.

Kaaya Bajji

Ingredients

gram flour-1 1/4 cup

kashmiri chily-1 tbsp

baking soda-1/4 tsp

raw banana

oil

Preparation

Add flour and masalas in a bowl, after mixing well add water little by little, mix well and make a thick batter. Dip sliced banana in this batter and fry in hot oil.

Banana Ilayada

Ingredients

rice flour-1 cup

banana-3

coconut-1 cup

jaggerry-150 gm

ghee-2 1/2 tbsp

cumin-1/2 tsp

cardamom-1/2 tsp

Preparation

Grind banana into coarse paste. Heat a pan, add ghee, once it heats well add banana, cook until it become thick, next add jaggerry juice, mix well, add coconut, cardamom and cumin, mix all well, cook until the water dissolves, then turn off flame. Take rice flour in a bowl, add salt,ghee and hot water, mix well, then make a soft dough. In a banana leaf, spread the dough, add fillings, then fold leaf from one side, finally cook in a steamer.

Crispy rava dosa

Ingredients

curd-1 cup

rava-1 cup

wheat flour-2 tbsp

water

Preparation

Add rava, curd, wheat flour and water to a mixie jar, grind into fine batter, then transfer to a bowl and rest for 15 minutes. Add fruit salt into it, mix well. Heat a tawa, balance heat with a towel, pour the batter, spread over the tawa, add ghee, cook until it become crispy.

Kannur special Ishtu

Ingredients

Wheat flour

Black Chana

Salt

Chilli powder

Coriander powder

Turmeric powder

Garam masala

Meat masala

Coconut oil

Mustard seeds

Curry leaves

Dry red chilli

Preparation

Cook chick pea with masalas, salt and water. Take wheat flour in a bowl, add salt and water, knead it well and make a soft dough. Divide dough into small balls and add to cooked chickpea, then cook it well, then add garam masala and meat masala, cook again, next add curry leaves, and coconut, mix well. For seasoning, heat oil in a pan, add mustards, dry red chilly and curry leaves, roast well and add to the wheat chickpea masala.

Shawaya Chicken

Ingredients

Chicken :1 kg

Tomato:1

Onion :1

Greenchilli :1

Crushed ginger garlic :2-3 tablespoon

Blackpepper powder :3/4 teaspoon

Yoghurt:1/2 cup

Lemon juice:1 1/2 teaspoon

Olive oil :1 /2 tbs

salt to taste

Preparation

Remove wet from chicken with a towel , then put holes by using a fork. For marination, add tomato,onion,chilly and ginger garlic to a mixi jar, make paste, then add pepper,curd , salt, olive oil and lemon juice, mix all well, then marinate chicken with this masala, then keep in fridge for 5-6 hrs, then grill it in oven.

Ingredients

Kingfish sliced 500 gms

Shallots 3

Garlic 5 no’s

Ginger small piece

Fennel seeds 1/2 tsp

Tumeric powder 1/4 tsp

Kashmir chilly powder 2 tbsp

Crushed pepper powder 1 tbsp

Rice flour 1 tbsp

Coconut oil 1 tsp

Lemon juice 1

Curry leaves few

Preparation

Take a mixie jar, add garlic,ginger , shallots , curry leaves and cumin, crush it well and keep aside. Take a bowl add masalas and crushed ingredients,rice flour,lemon juice,coconut oil and salt, mix and add water to make thick paste, marinate fish with this paste, and rest for 1 hour. Heat oil in a pan, add fish, fry well.
