Oats cookies

Ingredients

Eggless Oats Cookies

Unsalted butter (room temperature ) – 1/3 cup

Brown sugar or white sugar – 1/4 cup

Salt – a pinch

Milk – 1 to 2 tbsp

Oats – 1 cup

Oats flour – 1 1/4 cup

Baking powder – 1 tsp

Preparation

Beat butter, sugar and salt until it become creamy, then add milk, mix it well. Grind oats in a mixie jar, add baking powder, combine it well , then add it to the cake mix, add oats into it, knead it well, then make small cookies, put it in a plate, finally, bake cookies.

Dates Pickle

Ingredients

dates-3/4 kg

water

ginger

garlic

chilly

oil

fenugreek

mustard seeds

salt

pickle masala

curry leaves

vinegar

Preparation

Remove seeds of dates, then boil it in a vessel. Heat a pan, add fenugreek, next add mustards, pop it well, next add ginger , garlic and chilly, roast it well, add salt and pickle masala, roast it in oil, next add cooked dates and curry leaves, add vinegar too, mix all well.

Bun dosa

Ingredients

Rice-1 1/2 cup

Coconut-1 cup

Aval-1/2 cup

Methi seeds-1/2 tsp

Ginger small piece

Green chilli 3 nos

Curry leaves as required

Salt to taste

Coriander leaves as required

Oil

urad dal

mustard seeds

for Chammanthi

Onion

Tomato

Green chilli

Ginger garlic

Pottukadala

Red chili powder

Salt to taste

Preparation

Soak rice for 4 hrs , then grind it with poha and coconut by adding required water, then after mixing well keep overnight or 8 hrs for fermentation. Next morning, add salt to the batter, then roast ginger, chilly, curry leaves, pop mustards and urad dal to the batter, mix all well. Heat a tawa, pour the batter, cook thick bun dosa.

For chammanthi, saute all the ingredients in the list, then grind it into fine paste.

Tulsi Ice cream

Ingredients

milk-1 1/2 cup

corn flour-2 tbsp

sugar-5 tbsp

tulsi leaves

Preparation

In a pan, add milk, corn flour and sugar, mix well and remove lumps, then turn on flame, stir it well, once it become thick , turn off flame, and allow it to cool, then transfer it to a mixie jar, add tulsi leaves along with it, blend for 2 minutes, now pour it to a plastic container, after wrapping it well keep in freezer for 8 hrs, now the ice cream is ready.

Afghani Chicken

Ingredients

Chicken leg–2 ( 450 g)

1 st Marination:

Salt– 1/4 tsp

Ginger garlic paste -1 tsp

Pepper powder- 1/4 tsp

Lime juice –1 tsp

2 nd marinate

Almond- 10

Cashewnuts– 1 tbsp

Cumin- 1/4 tsp

Garlic -5

Ginger-1 piece

Onion -1

Coriander powder- 3/4 tsp

Arabic masala– 1/4 tsp( recipe in the discription below)

Pepper powder -1/4 tsp Green

chilli- 2-3

Curd -21/2 tbsp

Cream– 2 tbsp

Dry Fenugreek leaves—- 1 tsp

Salt -1 tsp

Butter- 1 tbsp

Bay leaf-1

Cardamom – 1

Clove -1

Cream -2 tbsp

Sugar -1/2 tsp

Coriander leaves/ Parsley— few

Preparation

Take chicken pieces in a plate, add first marination ingredients, coat the ingredients in chicken, cover the plates, keep in fridge. For second marination, grind almonds,cashews soaked, garlic, ginger, chilly and other ingredients in the recipe list, then grind it into fine paste, marinate chicken with this paste, next add charcol piece, and smoke the chicken, then rest chicken for 2 hrs.Heat a pan, add butter, then fry chicken both sides, add spices to the chicken, then add leftover masala paste, and some water, then cook it well, finally add fresh cream and sugar, after mixing well turn off flame.

Heat oil in a pan, add onion,chilly, ginger, garlic and curry leaves, mix well, add salt and saute it well, next add masalas, mix it until the raw smell gone, next add tomato,cook until it become soft, now add cashew paste, after mix it well add coconut milk, once it absorbs in curry add masala and egg boiled, mix well.

French fries

Ingredients

cold water

oil

chilly powder

Preparation

Cut potato into long pieces, then soak in cold water for 1/2 hrs, then strain out from water and wipe wet with a towel, next step is frying, fry 50 %, again keep it in fridge for 1/2 hrs. Finally, fry again until it become golden color.

idli rice-1 cup

coconut-1/2 cup

cooked rice-1/4 cup

yiest-1/2 tsp

salt-1/2 tsp

sugar-1 1/2 tbsp

lukewarm water

Preparation

Soak rice for 4 hrs, then add to a mixie jar, add coconut,rice, yiest, sugar and salt, then grind it with luke warm water, transfer it to a bowl, rest this batter for 10 minutes, now you can make soft vellayappam.

Potato-200 gm

peas frozen-100 gm

turmeric-1/4+1/2 tsp

salt

vegetable oil-1/2 cup

cumin-1 tsp

green chillies-2

coriander powder-1 tsp

Preparation

Boil water with salt and turmeric, add potatoes and matar, cook it well. Heat oil in a pan, add cumin, onion and chilly, saute it well, next add masalas , ginger garlic and salt, mix until the raw smell gone, now add tomato paste, mix well, then cook until oil separates, add water, after mixing well add cooked potato and matar, then cook it for 2-3 minutes, add ghee and coriander leaves.
