Preparation

Clean banana flower, then chop it finely, after washing it well, add chopped onion, chilly and grated coconut, mix it well, Heat a pan, add coconut oil, pop mustard seeds, then add dry red chilly and curry leaves, roast it well then add banana flower mix, add salt, mix well, then cook it for 10-15 minutes.

Okra curry

Ingredients

Vendakka / Okra – 12 nos

Shallots – 15 nos

Green chilli – 5 – 6 nos

Curry leaves

Coriander powder – 2 tsp

Red chilli powder – 1 tsp

Turmeric powder – 1/2 tsp

Oil – 3 tbsp

Salt as needed

To grind

Grated coconut – 1/2 cup

Shallots – 3 -4 nos

Garlic – 3 cloves

Cumin seeds – 1/2 tsp

Water – 1/4 cup

for seasoning

Coconut oil – 1 tbsp

Mustard seeds – 1 tsp

Curry leaves

Dry red chillies

Preparation

Add ingredients for grinding in a mixie jar and make fine paste. Heat coconut oil in a pan, add shallots, okra, chilly and curry leaves, saute it well for 2 minutes, now add masalas, mix it until the raw smell gone, next add tomato and salt, mix all together, then pour tamarind water, mix it well, then cook it for 3 minutes, next add coconut paste and water, mix well, cook it for 5 more minutes. Finally, for seasoning, heat oil in a pan, pop mustards, then add chopped shallots, curry leaves and dry red chilly, fry it well and add it to the curry.

Preparation

Add all these ingredients in a mixie jar, grind it well. Heat a tawa, pour 1 laddle of batter, once the holes come out, cover the pan, then take it from pan.

Jaggerry semiya payasam

Ingredients

vermicelli

milk

milk powder

jaggerry

cardamom

cashews and kismis

ghee

Preparation

Heat a pan, add ghee, after heating it well add vermicelli, roast it well, then keep aside. Melt jaggerry. Boil milk in a pan, add  vermicelli, cook it well, then add melted jaggerry, mix well, once it become thick add milk powder and water mix, just heat it before the flame is turning off. Finally add cardamom and roasted cashews and kismis in ghee.

Fish Biriyani( Neyy meen Biriyani)

Ingredients

for marination

fish-300 gm

pepper powder-1/2 tsp

turmeric-1/2 tsp

chilly powder-2 tsp

vinegar-1 tsp

salt

For rice

kaima rice-2 cup

water

salt

sunflower oil-1 tbsp

milk-1/2 cup

turmeric

pineapple essance

fried onion

roasted cashew and kismis

fried green chilly

For masala

ginger.garlic and coriander leaves paste

biriyani masala-3 tsp

coriander powder-1 1/2 tsp

turmeric-1/4 tsp

garam masala-1/2 tsp

pepper powder-1/2 tsp

fennel powder-1/2 tsp

curd-2 tbsp

Preparation

Marinate fish with the above said masala, after resting 1/2 hrs shallow fry fish then keep aside. Cook rice in a pot then strain out from water and keep aside.

For masala, saute onion in a pan, then add ginger,chilly,garlic and coriander leaves paste, cook until the raw smell gone away, then add tomato, once it become mushy add masalas, mix well, then add curd, mix all well, add fried fish, combine it well.

For setting the biriyani, heat a large pan, add oil, then add cooked rice, mix it with oil, then add milk,essance and turmeric mix, add fried onion, kismis,cashews and chilly, mix all well, add the masala , after covering it well dum it for 15 minutes.

Milk ice

Ingredients

sugar-10 tsp

milk-1/2 ltr

maida-2 tsp

Preparation

Add milk , sugar and maida in a pan, mix all well, then turn on flame, stir it well, add vanilla essance, continue stirring, once it become thick, turn off flame, then pour it to small disposible glass, cover the glass with aluminium foil, then put a hole and add the sticks, then keep it in freezer for 8-12 hours. Then you can use it.

Preparation

Grind onion, chilly, tomato, ginger, garlic and coriander leaves in a mixie jar, then add the paste to chicken add masalas, then marinate full chicken with this masala, then take a paratha. add lemon chilly and onion, fold it carefully then put it inside of chicken, then keep the chicken on fridge for 1-2 hrs, after that, take a pressure cooker, pour some coconut oil, then add the chicken, after covering the lid, cook it in low flame until it become cook perfectly, then fry it in pan.

In a pan melt sugar with water , after melting it add milk powder, mix it with a spatula, keep the flame low, next add ghee, then continue stirring, add ghee again, once it become thick and non sticky turn off flame and allow it to cool, then make small pedas like the shape what you want.
