Rose apple cake( chambakka cake)

Ingredients

rose apple( chambakka)-1 large bowl

sugar-2 tbsp

maida-1/2 cup

baking powder-1/2 tsp

baking soda-1/4 tsp

eggs-2

sugar-1/2 cup

vanilla essance-1/2 tsp

oil-2 tbsp

red food color

for jam

chambakka-1 cup

sugar-1/2 cup

salt-1 pinch

for sugar syrup

chambakka-1 cup

sugar-3/4 cup

water-3/4 cup

For icing

whipping cream

white chocolete compound

chocolete ganache with red food color

Preparation

For cake base, Take chambakka juice, boil it with sugar and keep aside. Mix dry ingredients, sieve it 2 times. Beat eggs with sugar and essance, then add rose apple juice, then add dry ingredients and oil, mix well, after transfering to a cake tin bake it well.

Prepare chambakka jam and chambakka sugar syrup separately.

After the cake cooked, cut it into 3 layers, In  a cake top spread whipping cream, add first layer , wet it with sugar syrup, then add whipping cream, next add jam,and chocolete compound, level it , then add second layer, repeat the same step, finally cover the cake with cream, then keep in fridge for 1 day, nect day pour chocolete ganache above the cake, put some design, then cut it.

Chicken shawarma

Ingredients

for kubboose

dry yiest-1 tsp

sugar-1 tsp

lukewarm water-1/4 cup

maida-2 cup

salt

water

for filling

cucumber ( mix with salt and vinegar)

chicken-1/2 kg

for marination

chilly powder-1/2 tsp

cumin powder-3/4 tsp

pepper powder-3/4 tsp

garam masala-1/2 tsp

salt

ginger garlic paste-1 tsp

curd-3 tbsp

lemon juice-1/2

for mayonaise

garlic

sugar

salt

lemon juice

egg-2

vegetables you like

Preparation

For kubboose, activate yiest, then add maida , knead it well and make soft dough, rest this for 2 hrs, then you can make kubboose.

Marinate chicken with the masalas, after 1/2 hrs fry it well, then cut it into small pieces then keep aside.

Add ingredients for mayonaise in a mixie jar, blend it well and keep aside.

For shawarma, take a kubboose, spread mayonaise, add vegetables and chicken, again add mayonaise, wrap it with butter paper.

Bitter gourd curry

Ingredients

coriander powder-1 tsp

water-1 1/2 cup

coconut-1/2 cup

Preparation

Heat a clay pot, add oil, allow it to heat, then mustard seeds, once it pop well add dry red chilly, roast it for 1 minute, then add onion, ginger garlic, and tomato, saute it well, add salt, next add masalas, mix all well, then add bitter gourd, mix with masala, add water and cook it for 5 minutes, next add coconut paste, combine all , once it boil add curd, mix it with curry, finally add curry leaves and sugar.

Ingredients

Preparation

Put deep marks in boiled eggs, then marinate it with turmeric, chilly powder and salt, then shallow fry it in a pan, then transfer it to a plate. Add more oil, next add onion and tomato, saute it well, then transfer it to a mixie jar, grind it to fine paste. Heat a pan, add oil, then add ginger garlic paste, roast it well, next add onion paste, mix it well, next add masalas, mix it well, next add curd, mix all well, next add egg, add coriander leaves, combine all well.

Charcol Chicken

Ingredients

chicken pieces

Preparation

Add masalas in a plate, add salt, curd, lemon, ginger garlic paste, mix all well, marinate chicken with this masala, rest this for 1 hour, then fry in fry pan, finally smoke it with charcol.

Drum stick dal curry

Ingredients

drum stick-1

tuvar dal-2 tbsp

green chilly-5-6

water

salt

chilly powder

turmeric powder

coconut-2 tbsp

Preparation

Cook dal in a pressure cooker with salt, turmeric, chilly powder, green chilly and water. After cooking it add drum stick, and more water, boil it well. Grind coconut with turmeric and cumin, then add to curry, again boil it for 2-3 minutes. For seasoning, pop mustards , then add dry red chilly, curry leaves and coconut, after frying it well add it to curry.

Whipping cream ice cream

Ingredients

whipping cream -1 cup

condensed milk-1/2 cup

vanilla essance-2 tsp

Preparation

Add whipping cream to a bowl, then beat it well, next add condensed milk and vanilla essance, beat it again, then wrap the bowl and keep it in freezer for 3 hrs, then beat it again, after that keep it in freezer for 8 more hrs, now you can serve it.

Velleppam

Ingredients

Pachari(Raw rice) 2 cup

cooled rice 1 cup

Grated Coconut 11/2 cup

suger – 2 tbs

coconut water – 1/2 cup

(rest for 10 hours until fermented)

salt to taste

water as needed

ellenna (sesame oil)

Preparation

Grind coconut and add coconut water , 2 tablespoon of sugar , raw rice (wash and soak in for 4-5 hours), boiled rice and water . Grind the mix till it get smooth. Pour it in vessel and add salt . Mix with hand and rest it for a whole night(8 hours) to get fermented. After fermenting make appam in vellayappam pan as shown in the video.
