Onion dosa and Chammanthi

Ingredients

for chammanthi

oil-1 tbsp

dry red chilly-6

shallots-100 gm

garlic-8

ginger

curry leaves

tamarind

jaggerry small piece

salt

oil

mustard

for dosa

semolina-3/4 cup

rice flour-1/2 cup

maida-1/2 cup

curd-5 tbsp

salt

water

green chilly-2

coconut-1/2 cup

onion-1

Preparation

For onion chammanthi, heat oil in a pan, add dry red chilly, roast it for a minute, then add shallots, garlic, ginger and curry leaves, saute it well, next add jaggerry and tamarind, mix well, then turn off flame, after cooling well grind it into fine paste by adding salt. Finally season it with mustard, dry red chilly and curry leaves.

For dosa, add rice flour, semolina, and maida to a bowl, mix well , then add curd,coconut, salt and chopped vegetables, add water and make a loose batter, keep this aside for 1/2 hrs, then take it and make small dosas.

Milk Cake

Ingredients

sugar-3/4 cup

water-1 1/2 cup

wheat flour-2 cup

baking soda-1/4 tsp

cardamom powder-1/4 tsp

sugar-3 tbsp

milk

Preparation

Boil sugar with water, once it melts well turn off flame. Take wheat flour in a bowl , add sugar, cardamom and baking soda, add milk and knead it well, flatten it into thick bread, then cut it into rectangle shape cakes, then fry it in hot oil until it become brown, then soak it in sugar syrup, keep aside for 5 minutes, then take it from syrup.

Peanut Candy

Ingredients

jaggerry-3/4 cup

water-1/4 cup

peanut-1 cup

Preparation

Heat a pan, add jaggerry and water,stir it well, once it become one string consistency add splitted peanut, mix well then turn off flame. Apply oil on counter top, and put peanut mix, roll it tightly with a roller, and cut it in desired shape, once it cooled enough separate pieces.

Thick Curd at home

Ingredients

MILK — 2 CUPS Y

OGURT — 1 ½ tablespoon

Preparation

Boil milk for 5 minutes, then turn off flame and allow it to cool, after that add curd into it, mix it well, pour it to a clay pot or glass jar, cover it and keep aside for 8 hrs. Thick and sour curd is ready.

Pappadam Thoran

Ingredients

pappad-5

coconut oil

Preparation

Cut papad into small pieces, heat coconut oil in a pan, add papad pieces and fry it, then keep it in a plate. After that add shallots to the oil, then fry until it become golden brown, add chilly flakes and curry leaves, mix well and add papad, mix all together and turnoff flame.

Poha Appam

Ingredients

White rice – 2 cups

Poha / flattened rice – 1/2 cup

Yeast – 1/2 teaspoon

Sugar – 2tablespoon

Lukewarm water – 1 1/2 cup

Salt to taste

Preparation

Wash rice 3-4 times, then add sugar,poha,salt and yeast , soak it in lukewarm water for 2-3 hrs then grind it to fine batter. Keep overnight for fermentation.Next morning, mix the batter with a laddle, heat a appam pot, pour the batter and round it, once it cooked and separate from pot, take and put in a plate.

Ulli theeyal

Ingredients;

1.baby onion – 150 gram

2.green chilli -. 1

3.curry leaves

4. grated coconut -. 1 cup

5.coriander powder-. 1 tablespoon

6.red chilli powder -. 3/4 tablespoon

7. Fenugreek Seed powder -. 1/4 teaspoon

8.salt asper your requirement

9.coconut oil

10.mustard – 1 teaspoon

11.dry red chilli

12.tamarind

13 turmeric powder -1/2 Teaspoon

Preparation

For roasting coconut, heat oil in a pan, add coconut, and shallots, roast it well, once it become golden brown add curry leaves and masala powders, after mixing well turn off flame and transfer it to a mixi jar and grind it into fine paste.Heat oil in a pan, add spillted shallots, green chilly and curry leaves, saute it for 2 minutes, next add turmeric and salt, after mixing well add water, cook it for 10 minutes, then add coconut paste and water, mix all well, boil it for 2 minutes, finally season it with mustard, dry red chilly and curry leaves.

Ingredients

Basan powder – 1 cup

Sugar -1&1/2 cup

Salt – 1/4 tsp

Termeric powder – 1/4 tsp

Baking powder – 1/4 tsp

Preparation

Take a mixing bowl, add gram flour, baking powder, turmeric and cardamom, mix it well, add water and make a thick batter, Heat oil in a pan, take a idiyappam maker with large hole mould, pour the batter into it , then pour it to the oil for making boondhis, fry it well, after boondhi maaking is completed, crush it in a mixi jar. Melt sugar in a pan and make one string consistency, then pour it to the boondhi, mix well and make laddu.

Preparation

Take semolina in a bowl, add coconut, mix it with your hand, then add sugar and a pinch of salt, mix again. Take bread slices, remove sides and keep aside.
