Preparation

Take full fat milk for boiling, boil it about 10 minutes in low flame. After completely cooled down keep this in fridge for 8-10 hrs, now the cream is completely separates from milk, take the cream and put in a steel pot, add some curd into it, then mix well, store milk cream in this pot daily. Once it become large quantity, blend it with cold water, the butter separates , take this from blender and wash 2-3 times in water, then add it to a pan, turn on flame, boil it when ghee appears, then turn off flame. Wait until it completely cooled down, then store in air tight container.

Ilayada

Ingredients

coconut

jaggerry-1 ball

rice flour-2 cup

maida-1 cup

salt

coconut oil-2 tsp

Preparation

Take rice flour in a bowl, add maida and salt, mix well, pour water and make a thick batter.Mix grated coconut and jaggerry powder together, Take banana leaf, make soft by steaming it, then pour the batter, spread it over the leaf, then add filling, fold it from one side to another, after setting all steam it in idli pot.

Tamarind candy

Ingredients

tamarind-100 gm

water-1 cup

jaggerry-200 gm

coconut oil

salt-1 tsp

chilly powder-1 tsp

sugar-4 tsp

Preparation

Soak tamarind for 2 hrs, then mash it well with your hand, then take pure pulp . Melt jaggerry with a small quantity of water, then add pulp of tamarind, combine well, stir it without stopping, once it become thick add salt and chilly powder, combine again, mix well, finally add sugar, once it become melt and the mix become thick turn off flame, let it cool, then make candies out of the mix.

Tapioca boiled

Ingredients

Tapioca- 1kg

Green chilli-2

Curry leaves

Small onions -15 pieces

Garlic-1 clove

Crushed red chilli flakes-2tsp

Coconut oil

Salt to taste.

Preparation

Take a pressure cooker, add cleaned tapioca pieces, salt, turmeric,water, curry leaves and green chillies, then cook it well. Transfer it to a stariner bowl.Heat oil in a pan, add mustard, pop it well, then add crushed onion and garlic, saute it well, next add crushed chilly, roast it for 1 minute, then add curry leaves, next add cooked tapioca, mix all well, then mash it with a masher, then serve it.

Semiya Payasam

Ingredients

ghee

semiya-75 gm

milk-1 ltr

milkmaid for sweet

salt

cashews

banana

sugar

Preparation

Heat ghee in a pan, add semiya, roast it well, then add milk, next add milkmaid for sweetness, boil it well until it become slightly thick, dont forget to stir it. Roast cashews and saute banana in the same pan, then add it to the payasam, then add caramalised sugar, mix all together, then turn off flame.

Black Halwa

Ingredients

Rice Flour – 1 cups ( 150 g- approx. )

Jaggery – 500 g ( minimum – 300 g. )

Coconut milk – 7 Cup ( 1-1/2 Coconut )

Cow Butter – 8 Tbs

Cashew nuts – 1 Cup

Cardamom powder – 2 Tsp

Ginger powder – 1/2 Tsp

Cumin Powder – 1 pinch

Preparation

Melt jaggerry , then strain it to another pan. Pour coconut milk to a pan, then add rice flour, mix it well and remove lumps, then pour jaggerry juice, combine all, turn on flame, stir it well, once it heat well add ghee, continue stirring, add ghee occationly, after 1/2 hrs add masala powders, combine it well,now add cashews, continue stirring and add ghee, once it become black color and oil separates, transfer this to a plate, level it by pressing, add more cashews and wait until it become set, then demould it and cut it into desired shape.

Sweet lemon pickle

Ingredients

sweet lemon-750 gm

garlic-3/4 cup

curry leaves

green chilly-15

salt

gingelly oil-3 tbsp

mustard-1 tbsp

kashmiri chilly powder-5 tbsp

fenugreek powder-1 tsp

hing-1 1/2 tsp

sugar-1 1/2 tsp

Preparation

For softening the peels, dip the lemon in boiling water for 5 minutes, then cut it into small pieces.Add salt into it, after mixing well keep this aside for 1/2 hrs.Heat oil in a pan, add mustard, let it pop well,then add ,garlic, green chilly and curry leaves, saute it well, then turn off flame, add masala powders and sugar, mix this well, then wait until it become cool, now add lemon and coat it with masala, store this in a airtight container.

Riped Banana Chips

Peel off bananas, then cut it into thin slices.Heat oil in a pan, add banana slices, fry it well, pour 1 tsp of salt+water mix, after mixing well take out from oil.

Ada Pradhaman

Ingredients

wheat ada-200 gm

Jaggerry-370gm

water-2 ltr

coconut oil

sago rice-40 gm

coconut milk – 2 coconut

ghee

cardamom powder

cumin powder

cashews, kismis

Preparation

Melt jaggerry and keep this aside. Cook ada in water by adding oil, then strain it from water and keep aside. Cook sago and set aside. Take a pan, add melted jaggerry, then add cooked ada, boil it until it become thick, then add cooked sago, mix all well,now add second coconut milk, mix all well, add ghee, boil it again for thickness, now add cardamom and cumin powder, next add thick coconut milk, after heating it well add cashew and kismis roasted, then turn off flame.

Ingredients

Preparation

Add dal, vegetables except ladies finger and tomato, to a cooker, add salt,turmeric and water, then cook it for 2 whistle. Heat oil in a pan, add cumin,hing and fenugreel, mix it, then add shallots, curry leaves and coconut, roast it until it become brown, next add masala powders, mix well, then turn off flame, and grind coconut with water and make fine paste. Take cooked vegetables in a clay pot, turn on flame, add coconut paste and water if required, after boiling it well add tamarind juice, tomato and ladies finger, boil it until it become slightly thick.Finally season it with mustard, dry chilly, curry leaves and chopped shallots.
