Idli batter vada

Ingredients

idli batter-1 cup

wheat flour

onion-1

pepper -1/4 tsp

hing-1/4 tsp

ginger

green chilly-2

curry leaves

salt

baking soda-2 pinch

oil for frying

Preparation

Pour idli batter to a bowl, add wheat flour to adjust consistency, then add other ingredients one bye one, mix all. Heat oil in a pan, then make vadas and fry it in hot oil.

Instant Paalappam

Ingredients

Idli rice-1 cup

active dried yeast-1/2 tsp

lukewarm water-1/2 glass

sugar-2 tsp

coconut-1/2 cup

cooked rice-1/2 cup

salt

Preparation

Soak rice for 3-4 hrs. Prepare a mix of lukewarm water, sugar and yeast,keep aside for 5 minutes. Add soaked rice to mixie jar, add cooked rice, coconut, salt and yeast mix and grind it into fine batter, transfer this into a bowl. Pour hot water to a pressure cooker, then place the batter bowl to cooker, cover the cooker and keep aside for 10 minutes. Heat appam chatti, pour batter, round it, then cover the pan, after 1 minute, transfer it to a plate.

Coffee Without Milk

Ingredients

Instant coffee powder-2 tsp

sugar-3 tsp

hot water-2 tsp

milk powder-2 tsp

hot water

Preparation

Take a glass, add coffee powder, powdered sugar and hot water, beat it with a spoon until it become thick and creamy. Take 2 cups, add 1 tsp of coffee cream in each cup, add milk powder above it, then pour hot water, mix with a spoon and have it.

Very useful tip for home makers

You can take any kind of rice for cooking. After washing it well add rice to a vessel, pour 3/4 part of water, then boil it for 5 minutes continously, then turn off flame and keep this 45 minutes aside without opening. After that boil it again and strain rice, perfect rice is ready.

Fish Pickle

Ingredients

sardine fish-1 kg

turmeric-1/4 tsp

chilly powder-1 1/2 tsp

salt

ginger

garlic

green chilly

coconut oil

fenugreek-1/4 tsp

mustard-1/2 tsp

curry leaves

chilly powder-6 tbsp

salt

hing-1/2 tsp

vinegar-1 cup

Preparation

Clean fish then put deep marks on it. Marinate fish with salt, turmeric and chilly powder. After 10 minutes fry it in coconut oil, after that add fenugreek and mustard to the oil, let it pop, next add crushed ginger , garlic and chilly, roast it well, add curry leaves too, mix all well, then turn off flame, now add masala powders, mix it well, then turn on flame , pour vinegar, let it boil, now add fish after removing thorns, then mix fish with masala, then turn off flame, once the heat is gone store this in a airtight container.

Neyyappam

Ingredients

raw rice-1 cup

cumin-1/4 tsp

cardamom-4

baking soda-1/4 tsp

water

cooked rice-1 laddle

jaggerry-3

water-1/4 glass

rava-3 tbsp

salt-1 pinch

coconut-1/2 cup

oil

Preparation

Soak raw rice for 3 hrs, then grind it with cooked rice, cumin, cardamom, baking soda and water , then pour it to a bowl, add melted jaggerry, coconut and salt, mix well, add rava to adjust thickness. Heat oil in a pan, pour 1 laddle off batter, wait until the bubble comes out, then flip to another side, fry it well.

Wheat , Banana Snack

Ingredients

Banana – 4

Wheat Flour – 1.1/2 Cup

Coconut – 1 Cup

Ghee

water- 1/4 cup+ 2 Tbsp

Jaggery – 250 gm

Preparation

Melt jaggerry with water , then keep aside. Heat ghee in a pan, add chopped banana, saute it well, add coconut, combine both, add cardamom powder, mix well, turn off flame . Grind banana chopped with jaggerry juice and make fine batter, pour this to a bowl, add coconut banana mix, and wheat flour, mix all, add more cardamom powder and ghee, combine well. Take a banana leaf , add a small quantity, fold it like triangle shape, finally steam it well.
