Kfc Chicken

Ingredients

For chicken marinating

Chicken:1 kg

Milk:1 cup

Vinegar:2 tbls

Pepper powder:1 tsp

Chilli powder:1 tbsp

Garlic paste: 4 nos

Salt

Baking soda:1 pinch

For wet mix

Maida:1 cup

Egg:1

Corn flour: 1tblspn

garlic paste:1 tspn

Salt

For dry mix

Maida:1 cup

garlic past :4 nos

Chilli powder:1 tsp

Salt

(Oil)

Preparation

Take butter milk, add garlic powder, chilly powder, pepper powder, garam masala and salt, soak chicken in this mix for 4 hrs. Take egg in a bowl, add maida, baking powder and salt , mix all, then add corn flour mix all and make a thick batter. Take maida in another bowl, add garlic powder, chilly powder and salt, mix these ingredients and keep aside. Take chicken pieces and dip it in egg mix, then coat maida mix tightly, after that fry the chicken in low to medium flame.

Muttayappam

Ingredients

raw rice-1 glass

cooked rice-1 glass

salt

water-1 1/2 cup

egg-1

cumin

Preparation

Soak rice for 3 hrs, then grind it with cooked rice , salt and water, make a fine paste. Heat oil in a pan, pour the batter to the oil with a small laddle, fry both sides one minute each.

You can make the same appam, by add egg instead of cooked rice, add cumin seeds for extra flavour.

Duck Meat Roast

Ingredients

duck meat

turmeric-1/4 tsp

coriander powder-1 tbsp

garam masala powder-1 tsp

pepper powder-1 tbsp

coconut pieces-1 handful

ginger and garlic crushed

Preparation

Cook duck meat in a pressure cooker with the ingredients in the above said list. Heat oil in a pan, add coconut pieces, after roasting it well add ginger and garlic, saute it well, add shallots, after 2 minutes sauting add onion and green chilly, saute all until it become soft, add tomato, once it become mushy add masala powders, mix until the raw smell gone, now add cooked meat, mix all together, let it boil well, once it become thick add pepper powder and masala , then turn off flame.

Meat Cake

Ingredients

Beaf-300 gm

chilly powder-1 tsp

Preparation

Marinate beef with turmeric, chilly powder, salt, pepper powder and ginger garlic paste, then fry it well. Crush the beef and keep aside. Heat oil in a pan, add onion, ginger garlic and chilly, saute it perfectly, then add masala powders, mix with onion, next add crushed beef, add coriander leaf, mix all then turn off flame. Blend egg with salt, pepper powder and milk, then pour it to a bowl, add maida, oil and beef mix into it, mix all. Heat a pan, add the mix to the pan, cover it and cook in low flame, after 20-25 minutes flip it to another pan and cook another side.

Bread Samosa

Ingredients

oil-3 tbsp

onion-1/2 cup

green chilly-2

tomato-1/2 cup

coriander powder-1 tsp

cumin powder-1 tsp

chat masala-1 tsp

salt

egg-2

bread crumbs

oil for frying

Preparation

Heat oil in a pan, add onion and green chilly, saute it well, next add tomato, after sauting it well add salt and masala powders, combine well, break 2 eggs, then scramble it well and turn off flame. Take bread slices, remove sides, flatten the slices with roller, make cone shape, add filling, fold it carefully, seal it with maida paste, dip all cones in egg mix and coat bread crumbs, now you can fry it.

Milk Peda

Ingredients

milk -1/2 cup

sugar-1/2 cup

ghee-3 tbsp

milk powder- 2 cup

Preparation

Heat a pan, add ghee into it, then pour milk and add sugar too, combine all well, next add milk powder gradually, mix it in low flame, once it become thick and non sticky turn off flame and allow it to lower the heat, then take small portions and make peda, put a hole at centre , add a badam, then serve it.

Preparation

Heat oil in a pan, pop mustard, then add gram dal and urad dal, adter roasting it well add dry chilly, ginger and garlic, saute it for a minute, then add onion and green chilly, saute it until it become soft, next ad turmeric, mix gram flour and water in a bowl, add to pan, combine well, pour water into it, boil it well, now add boiled and mashed potato, mix all together, add salt and hing, boil it until it become thick, add some coriander leaves then turn off flame.

Preparation

Cook chemb with salt, water, turmeric and chilly powder, then grind coconut with shallots, cumin, and water , then add to curry, let it boil well. Finally , season the curry with mustard , dry chilly and shallots chopped.

Preparation

Heat oil in a pan, add ginger garlic, saute it well, then add onion, next add green chilly, saute all well, next add masala powders and salt, once the raw smell gone add boiled potato, mix it with masala, then add boiled and grated egg, add coriander, mix all well, then turn off flame. Wait until the heat gone, then make small cutlets with the masala, next , dip all in egg mix and coat it in bread crumbs, finally, fry it well.

Muringa leaf Upma

Ingredients

Rava (Semolina) 2 cups

Water 4 cups

Drumstick leaves 1 cup

Carrot 1 no.

Onion 1 no.

Tomato 1 no.

Green chilli 3 nos.

Ginger 1 pcs.

Curry leaves 2 stem

Coconut oil 3 tablespoons

Mustard 1 & 1/2 teaspoons

Dried red chilli 1 no.

Urad dal 1 teaspoon

Bengal gram 1 teaspoon

Preparation

Dry roast rava for 2-3 minutes. Heat oil in a pan, add mustard, allow it to pop, then add urad dal and gram dal, roast it for 1 minute, next add dry chilly and curry leaves, then add chopped vegetables, saute it all for a minute, pour water, add salt and turmeric, let it boil well, now add moringa leaf, cook it for a minute, then add roasted rava, mix well, cook it until the consistency become perfect.
