Chicken Changezi ( Mughlai Recipe)

Ingredients

for marination

chicken-1 kg

ginger garlic paste-1 tbsp

curd-100 ml

chilly powder-1 tbsp

salt

lemon-1/2

for grinding

oil

onion-2

cashews-10-15

tomato-1

for gravy

ginger garlic paste

chilly powder-2 tbsp

coriander powder-2 tbsp

garam masala-3/4 tsp

salt

milk-100 ml

water

kasoori methi-1 tsp

fresh cream-2 tbsp

Preparation

Marinate chicken with ingredients in the list. Heat oil in a pan, add sliced onion, fry it until it turns brown, then add cashews, mix well, set aside, add tomato, cook it and set aside. Grind tomato and onion separately. Heat a pan, add marinated chicken, fry it well and keep aside, add ginger garlic to the pan, saute it well, then add tomato paste and onion paste, combine well, add salt too, mix it again , next add masala powders, mix until the raw smell gone., next add milk and water, boil it well, now add fried chicken, mix with masala, cook it for 5-7 minutes, then add kasoori methi, finally add thick cream, mix well, then turn off flame.

Banana Snack

Ingredients

ghee-1 tbsp

coconut-1/2 cup

sugar-4 tbsp

cardamom-1 tsp

banana boiled and mashed-6

egg

corn flakes

oil for frying

Preparation

Heat ghee in a pan, then add coconut into it, mix it with ghee, then wait for coconut become slightly crispy, then add sugar and cardamom, combine well, add mashed banana after the sugar melts completely. Mix all well, then turn off flame. Wait for the mix cooled down. Break an egg to a bowl, beat it well. Once the banana mix is cooled, take small portion from it, put a shape, then dip in egg mix, next coat it in corn flakes, finally, fry it in hot oil.

Semolina Putt

Putt is the most famous breakfast recipe in Kerala. It can be make in different flavours, like Rice putt, Tapioca putt, Wheat putt.. etc.. Now lets see how to make putt with semolina.

Take roasted semolina in a pan, spread salt water into it, mix it well with your hand, don’t spread too much water. Take putt maker, add coconut at bottom, then add semolina putt mix, press it slightly, then steam it well.

Madakku Kaja

Ingredients

All Purpose Flour – 2 Cups

Salt – 1 Tsp

Melted butter – ½ Cup

Water

Corn flour

Oil

Sugar – ½ Cup

Cardamom powder – ½ Tsp

Preparation

Take maida in a bowl, add salt, melted butter and water, knead it well and make a soft dough. Divide the dough into equal small balls, rest it for 1/2 hrs. Flatten the balls into long layers, dust it with corn flour, next roll it , cut the rolls into 1 inch length pieces, just roll the bites again. Now fry it in hot oil. Melt sugar with cardamom and water, then pour it above the snacks.

Fish Ada

Ingredients

fish -1/2 kg

For ada

rice flour

Preparation

Marinate fish with salt, turmeric and chilly powder, then keep aside. Take a mixie jar, add ingredients grinding for masala, and make a fine paste. Heat oil in a pan, add onion, ginger, garlic and green chilly, saute it well, then add tomato and salt, cook until it become soft, next add coconut paste, after boiling it well add marinated fish, cook the mix until it become thick, then turn off flame.

For dough, grind items in the list, then add it to the rice flour, knead it well and make a smooth dough. Take a banana leaf, add small quantity of the dough, put another banana leaf above the dough, press it with your palms, then add filling, fold the leaf one side to another, after whole dough is finished, steam it in idli steamer.

Poha Snack

Ingredients

jaggerry

Preparation

Melt jaggerry with water, then keep aside. Dry roast poha. Heat ghee in a pan, add banana pieces, saute it well, then add coconut, mix again, crush the poha with hand, then add to the pan, combine all well, nowpour then jaggerry juice, mix all, cook it until it become thick, finally, add cardamom powder, then turn off flame. Once the heat is low, make small ball with from this mix.

Ration Rice Veg Biriyani

Ingredients

1 glass rice (300 g)

1/2 lime

1 onion

1 capsicum

2 carrot

2 tomato

2 green chilli

1 piece ginger

1 spoon fennel seeds

1/4 spoon pepper

8-10 garlic

2 spoon ghee

5 spoon oil

3-4 cardamom

1 stick cinnamon

6-8 cloves

coriander leaves

mint leaves

salt

Preparation

Heat oil and ghee in a pan ,add the whole spices-cardamom, cinnamon and cloves. Add crushed ginger, garlic,green chillies, fennel seeds, and black pepper and mix well. Then add onion and carrot. Cook on medium flame till the carrots are 3/4th cooked. Then add tomato and mix well till the tomatoes are half cooked. Reduce the flame. Add turmeric and chilli powder and roast well. Then add capsicum . Mix well on medium flame till the capsicum is half cooked. Finally add boiled rice and mix well. Add chopped coriander leaves and mint leaves for garnishing and taste.

Rice Papadam

Ingredients

raw rice

Preparation

Soak rice for 4 hrs, then grind it into fine batter. Take flat lids, pour the batter a little quantity, round it to make a thin layer, then steam it for a minute, remove it from the lid, then put it in a cloth, dry the papad under sunlight, then fry it well.

Preparation

Finely chop vegetables, then mix in a bowl, add salt, corn flour and maida into it, mix it all with hand, then make small balls with this mix. Fry the balls in hot oil and keep aside. Heat oil in a pan, add garlic , saute it for a minute, then add spring onion, onion,and capsicum, saute all, then add sauces, pour water, mix well, boil it well, add corn flour mix to become the gravy thick, now add salt, next add fried manchooriyan balls, mix all well, cook it until it become thick more, then turn off flame.
