Egg Snack

Ingredients

for dough

maida-2 cup

egg-1

salt

oil-1 1/2 tbsp

water/ milk

for masala

oil

onion-1 1/2

salt

ginger garlic

green chilly

garam masala-1/2 tsp

fennel powder-1/2 tbsp

pepper powder-1/2 tsp

turmeric-1/2 tsp

coriander leaves

boiled egg

oil for frying

Preparation

For dough, take maida in a bowl, add salt, egg, oil and water , knead it well and make a soft dough.

Heat oil in a pan, add onion and salt, saute it well, then add ginger , garlic and chilly crushed, saute all well, next add masala powders, then mix it again, finally add some coriander leaves , then turn off flame.

Divide maida dough into equal parts, then flatten it, add filling in each chapathi, put 1/2 of boiled egg, then fold it from all sides, finally, fry it in hot oil.

Aval Shake

Ingredients

small banana-2

milk-1 1/2 cup

vanilla ice cream-1 scoop

sugar

small banana-2

poha

crushed cherry

tutti fruity

roasted gram and peanut

Preparation

Take a mixie jar, add banana, milk and sugar, blend it well, then add ice cream , blend it again. Take serving glass, add crushed cherry, tutti fruity, roasted gram and peanut, mashed banana and poha, then pour blended milk above it, on the top, add 1 scoop of ice cream, and decorate with nuts and dry fruits.

Egg Curry

Ingredients:-

Boiled Eggs :- 4

Oil :- 2Tbsp

Water :- 1&1/2 cups

Onions :- 2 big

Green chili :- 1-2

Garlic :- 3-4

Ginger :- 1in long

മTurmeric powder :- 1/4 Tsp

Coriander powder :- 1&1/2 Tsp

Garam masala :- 1/2 Tsp

Salt

Mustard seeds

Dried red chilis

Curry leaves

Preparation

Heat oil in a pan, add mustard, let it pop well, then add curry leaves, garlic, ginger and green chilly, saute it all well, next add onion, saute it until it become soft, then add masala powders, saute it again until the raw smell gone, next add tomato and water, mix all, then boil it, mash it with the laddle, then add boiled egg, boil it for 2-3 minutes, then turn off flame.

Potato Bonda

Ingredients

for filling

potato 4

sabola 1 big

green chili 3

ginger small piece

curry leaves

mustard 1/2 spoon

Uzhunnu parippu/Urad dal 1 spoon

turmeric powder 1/2 spoon

oil

salt

for batter

gram flour /kadala mave 1 cup

rice flour /aripodi 2 spoon

kaya podi 1 pinch

turmeric powder 1/4 poon

chili powder 1/2 spoon

salt

water

Preparation

Heat oil in a pan, add mustard and urad dal, pop it well, then add onion, curry leaves, ginger, and green chilly , saute all well, add salt. Next add masala powders, once the raw smell gone add coriander leaves, next pour a little water, now add boiled and mashed potato, mix well with a spatula, then keep this aside.

For batter, mix all ingredients above mentioned list in a bowl, pour water, mix well and make a thick batter. Make small balls from the potato mix, then dip it in the batter, now fry it in hot oil.

Potato Balls

Ingredients

ginger garlic crushed

curry leaves

turmeric-1/4 tsp

kashmiri chilly powder-1/2 tsp

oil

Preparation

Grate potato in a grater, then wash throughly in water for 2-3 times, squeeze water completely, then add to a bowl, next add other ingredients one bye one, mix all well, make small balls from it, then put it in hot oil, fry it well.

Kadumanga Achar

Ingredients

salted manga

mustard dal- 2 tbsp

red chilly powder-1/2 cup

salt water-1 1/2 cup

hing powder-1/2 tsp

sesame oil-2 tbsp

vinegar-1 tbsp

Preparation

Drain mango from the salt water. Take a big bowl, add chilly powder, mustard dal and salt water, mix all well, add hing powder too, then add mango, after mixing it well add sesame oil and vinegar, mix well, then store in ceramic container.

Greengram Mixture

Ingredients

green gram

gram flour-1 cup

rice flour-2 cup

yellow food color

water

oil-2 tbsp

black salt

Preparation

Soak greengram for 2 hrs, then drain water completely. Add rice flour and gram flour to a bowl, add food color and a little water, knead it well, add oil, mix all then make a soft dough. Fill the dough in idiyappam maker, then press it to hot oil, fry it well, finish the entire dough. Now add soaked greengram to oil, fry it well, then add above the mixture, finally add black salt, then crush the mixture with hand.

Chicken Stew

Ingredients

chicken-600 gm

pepper powder-1 tsp

turmeric-1/2 tsp

salt

thin coconut milk-1 cup

thick coconut milk-3/4 cup

onion-2

green chilly-2

ginger

garlic-8

oil-1 tbsp

whole spices

coriander powder-1 tbsp

pepper powder-1 tsp

soaked cashew-10

lemon-1/2

garam masala-1/2 tsp

curry leaves

Preparation

Marinate chicken with salt, turmeric and pepper powder. Heat oil in a pan, add whole spices and garlic, saute it well, then add chicken pieces, mix well, pour thin coconut milk, then cook it well. Heat another pan, add oil, then add ginger and garlic, saute it for a minute, then add onion and green chilly, saute it until it become soft, add coriander powder and pepper powder, mix well, then turn off flame. Grind the mix with cashews , and make a fine paste, add this paste to cooked chicken, mix well, add salt and masala powder, squeeze 1/2 lemon, then finally add thick coconut milk and curry leaves, after heat it well turn off flame.

Preparation

Heat oil in a kadai, add mustard, let it pop well, then add urad dal and cumin, roast it for sometimes, next add cashwes, then add curry leaves, green chilly, red chilly, garlic and onion one bye one, saute all well, add masala powders and salt, after mixing it well add tomato, cook it well, next add cooked rice, mix all well, finally add coriander leaves, then turn off flame.
